THAI CHICKEN PIZZA

- Preheat oven to 425 degrees F.
- Form pizza crust on pizza pan or cookie sheet. Top with duck or plum sauce - spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese and peppers. Bake until golden and bubbly, 15 to 17 minutes.
- Preheat a grill pan over medium-high heat. Combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning. Use the microwave to loosen up peanut butter if it is too cold to blend into sauce, 10 seconds ought to do it. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken cutlets 2 to 3 minutes on each side, until firm. Slice chicken into very thin strips.
- While chicken cooks, mix honey and vinegar and add the cucumber. Turn to coat evenly.
- Top the hot, cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over the pizza. Garnish pizza with peanuts, cut into 8 wedges and serve.

- Combine sauce ingredients in a small pan over medium heat.
- Bring the sauce to a boil; boil gently for one minute.
- Divide into 2 portions for use on chicken and pizza; set aside.
- To make Thai chicken: Cook the chicken in olive oil over med-high heat, stirring, until just cooked; 5 to 6 minutes do not overcook.
- Set aside in refrigerator until chilled through.
- Once chilled, coat the chicken with 1/4 cup sauce.
- Set aside in refrigerator.
- To make the pizza: Use a large spoon to spread 1/4 cup sauce evenly over pizza dough within the rim.
- Cover sauce with 3/4 cup cheese.
- Distribute half the chicken pieces over the cheese followed by half the green onions, bean sprouts, and carrots, respectively.
- Sprinkle an additional 1/4cup cheese over the toppings and top the pizza with 1 TBSP chopped peanuts.
- Transfer the pizza to oven; bake until crisp and golden and the cheese is bubbly, 9 to 10 minute.
- When cooked through, remove pizza from oven.
- Sprinkle 1TBSP chopped cilantro over the hot cheesy surface.
- Repeat with remaining ingredients for a second pizza.

- Heat oven to 400°F. Spray dark 15x10x1-inch pan with cooking spray.
- In small bowl, beat Sauce ingredients with whisk. Set aside.
- In medium bowl, mix chicken, bell pepper, honey and sesame oil; toss to coat. Set aside.
- Unroll dough; place in pan. Starting at center, press out dough to edges of pan. Bake about 7 minutes or until edges of crust just begin to turn golden brown. Spread sauce evenly over partially baked crust, leaving 1/2 inch border around edges. Sprinkle cheese evenly over sauce. Top with chicken mixture.

- Place chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over chicken. - Adjust oven rack to lowest position, and heat oven to 450 degrees. Place crust on a cookie sheet. Mix peanut sauce and peanut butter, then spread 2/3 of the sauce over the pizza crust; toss remaining 1/3 of the sauce with the shredded chicken. Spread chicken over pizza.

THAI CHICKEN PIZZA WITH SWEET CHILI SAUCE
I am not a huge fan of the peanut sauce that most Thai pizzas tend to use as a base, but love a small amount of peanutty flavor mixed with the sweetness of Thai Sweet Chili Sauce, so I came up with this pizza-pie!

- Preheat oven and pizza stone to 550* (or as high as your oven will go, may only be 500*).
- Prepare your dough to top. You can prebake your crust for a minute or two after brushing with olive oil, or you can do as I do and just top the dough since I bake at such a high heat.
- Brush crust with olive oil. Spread on Thai Sweet Chili Sauce as thick or thinly as you like. (It is very sweet with just a hint of heat, I happen to love sweet and savory together, so I use a lot and add a pinch or two or crushed chili flakes).
- Layer on italian cheese and half of the cheddar. Add veggies, chicken, remaining cheddar. Sprinkle on sesame seeds allowing some to get on the untopped crust as well.
- Working quickly so as not to let the oven temperature drop, transfer pizza to pizza stone using a pizza peel, cookie sheet, or parchment paper.
- Bake for 8-10 minutes depending on the amount of toppings you added and how done you like your crust. If you have never baked a pizza at this high of heat before, you should DEFINITELY watch it like a hawk the first few times so you don't burn it. I have been told (and agree) that the high heat gives you more of a pizzaria-style pie!
- Remove from oven and allow to cool for a minute. Drizzle with siracha and sprinkle with cilantro if desired.

THAI CHICKEN PIZZA
An easy version of the California Pizza Kitchen favorite. I like to use the Italian pizza crust (Boboli) because it is quick, but you could also adapt it to use your own favorite pizza crust. A good one I like here on Zaar is Recipe #8497 posted by Steve Sickenberger.

- In food processor or blender, combine peanut butter, vinegar, soy sauce, chili oil, ginger, honey and sesame oil.
- Set aside.
- Season chicken to taste with salt and cayenne pepper (use sparingly).
- Saute in olive oil until done (about 6-8 minutes).
- Cut chicken into bite sized pieces and coat with 2 tablespoons of the peanut sauce.
- Spread peanut sauce over the surface of the Italian pizza crust.
- Scatter chicken pieces over top and sprinkle with sesame seeds and green onions.
- Sprinkle with 1/2 cup of mozzarella cheese and 1/2 cup of the Monterey jack cheese.
- Bake, uncovered in 400°F oven for 12 minutes.
- Remove from oven and sprinkle with shredded carrot and cilantro.

- To make Spicy Peanut Sauce: Combine sauce ingredients in a small pan over medium heat. Bring the sauce to a boil. Boil gently for one minute. Divide into 2 portions for use on chicken and pizza. Set aside.

Use a large spoon to spread 1/4 cup spicy peanut sauce evenly over the surface of the prepared dough within the rim. Cover the sauce with 3/4 cup shredded mozzarella. Distribute half the chicken pieces evenly over the cheese followed by half the green onions, bean sprouts, and carrots, respectively. Sprinkle an additional 1/4 cup mozzarella over the other toppings and top the pizza with 1 tablespoon chopped roasted peanuts. Transfer the pizza to the oven. Bake until the crust is crisp and golden and the cheese at the center is bubbly, 9 to 10 minutes. When cooked through, carefully remove the pizza from the oven. Sprinkle 1 tablespoon chopped fresh cilantro over the hot, cheesy surface. Slice and serve. Repeat with remaining ingredients for a second pizza. (The 2 pizzas may be prepared simultaneously if you are careful in placing the pizzas at opposite corners of your pizza stone.)
