1/4 cup chopped onion
1 tablespoon olive oil
2 tablespoons honey
1/4 cup reduced-sodium beef broth
1/4 cup Worcestershire sauce
1/4 cup reduced-sodium soy sauce
1/4 cup ruby red grapefruit juice
3 tablespoons tomato paste
2 tablespoons balsamic vinegar
2 tablespoons cider vinegar
2 tablespoons raisins
2 teaspoons garlic powder
1-1/2 teaspoons coarsely crushed pepper
3/4 teaspoon dried thyme
1/2 teaspoon salt

Steps:

  • In a nonstick saucepan over medium heat, cook onion in oil until tender. Add honey; cook and stir for 2 minutes. Stir in broth, Worcestershire sauce, soy sauce, grapefruit juice, tomato paste and vinegars until blended. Stir in the raisins, garlic powder, pepper, thyme and salt. Bring to a boil. Reduce heat; simmer, uncovered, for about 20 minutes or until sauce is reduced to about 1-1/4 cups. Cool to room temperature. Transfer to a blender; cover and process until smooth. Cover and refrigerate. ,

1/2 cup orange juice
1/2 cup raisins
1/4 cup soy sauce
1/4 cup white vinegar
2 tablespoons Dijon mustard
1 tablespoon bottled grated orange rind
2 tablespoons Heinz ketchup
2 tablespoons Heinz Chili Sauce

Steps:

  • Bring to a boil for 2 minutes stirring.
  • Remove from heat.
  • Allow to cool to lukewarm.
  • Put mixture in a blender till it is pureed.
  • Pour in bottle.
  • Cap tightly and refrigerate to use within 90 days.

2 cups water
1 tablespoon beef bouillon granules
1/2 teaspoon pepper, divided
1/2 teaspoon chili powder
1/4 teaspoon red pepper flakes
1 small red pepper, thinly sliced
1/8 teaspoon garlic salt
1 medium onion, thinly sliced
4 tablespoons butter, divided
1/8 teaspoon salt
1 lb sirloin steak, cut into 1/2 inch thick strips
4 French rolls, split
4 slices havarti cheese
1/8 teaspoon chili powder
4 slices center-cut bacon

Steps:

  • In a large saucepan, combine water, bouillon, 1/4 teaspoon pepper, red pepper flakes, garlic salt, and chili powder, and bring to a boil.
  • Reduce heat, and simmer for 15-20 minutes.
  • Meanwhile, in a large skillet saute red pepper, and onion in 2 tablespoons butter until tender. Remove and keep warm.
  • Fry the bacon until fully cooked.
  • Sprinkle salt and remaining pepper over the beef.
  • In the same skillet that was used for onion, and red pepper, cook the beef in remaining butter over medium-high heat until no longer pink.
  • Spoon mixture onto roll bottoms, and top with onion mixture, cheese, and bacon.
  • Replace with roll tops.
  • Serve with sauce in step 1.

1 teaspoon mustard seed or dry mustard, 1/3 palmful

1 tablespoon black peppercorns
1 cup organic ketchup or low-sugar ketchup
2 tablespoons soy or tamari sauce
1 cup beef stock

Steps:

  • In food processor bowl, combine the shallot, chile, garlic, bay leaves, mustard seed, sherry, Worcestershire sauce and peppercorns and process into a smooth paste. Place the flavor paste in a pot and combine with the ketchup, soy and stock. Bring the mixture to a boil, reduce the heat to a simmer and cook 30 minutes. Cool and refrigerate for a make-ahead meal.

1 big bundle watercress, upland cress or baby arugula

Steps:

  • For the make-ahead sauce: In food processor bowl, combine the shallot, chile, garlic, bay leaves, mustard seed, sherry, Worcestershire sauce, and peppercorns, process into a smooth paste. Place the flavor paste in a pot and combine with the ketchup, soy, and stock. Bring the mixture to a boil, reduce the heat to a simmer and cook 30 minutes. Cool and refrigerate for make-ahead meal.
  • Preheat the oven to 325 degrees F to crisp the bread.
  • Reheat the sauce over medium-low heat.
  • Place the flank steak in the freezer 5 minutes or until cold. Remove and shred or cut the cold flank steak against the grain. Throw the bread in the oven to crisp it up. In a skillet, heat the high-temperature oil over high heat until it smokes. Add the meat and toss 2 minutes. Turn off the heat and combine with warm sauce. Cut the rolls open and stuff the hoagies with spicy greens and hot-n-saucy steak.

This is a marinated steak fit for my wedding, paired with the melty goodness of American cheese, toasty bread and grilled onions and peppers. Cheesesteaks rising up!

1/2 cup freshly squeezed orange juice
1/2 cup soy sauce
1/2 cup maple syrup
1/4 cup olive oil, plus more for the veggies
1/4 cup balsamic vinegar
3 pounds trimmed skirt steak
1/2 cup heavy cream
One 1-pound block American cheese, cut into cubes
2 red onions, cut into thick rings
1 red pepper, cut into thick rings, seeds removed
1 yellow pepper, cut into thick rings, seeds removed
Kosher salt and freshly ground black pepper
6 hoagie rolls, preferably Amoroso's
1/4 cup (4 tablespoons) melted butter
Hot pickled cherry peppers, sliced, for garnish

Steps:

  • Combine the orange juice, soy sauce, maple syrup, olive oil and balsamic vinegar in a small bowl and pour over the skirt steak in a pan to marinate, up to 30 minutes.
  • In a medium saucepot, bring the cream to a boil. Slowly whisk in the American cheese until a sauce is formed. Keep warm.
  • Preheat a charcoal grill to medium-high heat.
  • Toss the onions and peppers in a bowl with some olive oil and season with salt and pepper. Place on the grill and cook until lightly charred and tender, 7 to 10 minutes.
  • Remove the skirt steak from the marinade and cook on the grill until medium-rare, 3 to 4 minutes per side. Remove from the grill and let rest for 10 minutes.
  • Slice the hoagie rolls lengthwise and butter the insides of the rolls. Grill until toasted, 2 to 3 minutes.
  • Slice the steak thinly against the grain and fill the rolls. Top with copious amounts of cheese sauce, grilled vegetables and hot cherry peppers.

This is by far my most favorite Breakfast! Who says you can't have Steak and beer for breakfast?! The sweet and tangiess of the sauce brings out the flavor in the steak and eggs. Serve this for breakfast the next time you have company and they might never leave! Great served with a side of hashbrowns or seasoned home fries.

FOR THE SUACE
1/2 tsp unsalted butter
1/2 medium onion, finely diced
1 clove garlic, minced
1 c ketchup
1/2 c 1/2 cup dark corn syrup
1/2 c apple cider or apple juice
2 Tbsp sugar
1/2 c lager-style beer
1 1/2 tsp yellow mustard
2 tsp lemon juice
1 1/2 tsp worcestershire sauce
1 1/2 tsp cayenne pepper
1 1/2 tsp teaspoons paprika
1/2 tsp salt
1/8 tsp pepper
FOR THE STEAK AND EGGS
4 new york strip steaks
salt and pepper to taste
1 Tbsp vegtable oil
8 grilled eggs

Steps:

  • 1. To make the sauce: In a medium saucepan over medium heat, melt the butter. Add the onion and garlic and saute until softened, about 3 minutes. Add the rest of the sauce ingredients; bring to a boil, then simmer until the sauce is reduced to 2 cups, about 30 minutes.
  • 2. Meanwhile, preheat a grill to medium-high. Season the steaks with salt and pepper and rub with the oil. Grill for 3 to 5 minutes per side for medium-rare. Let rest for 10 minutes.
  • 3. Grilled Eggs: Place a cast-iron skillet on the grill; add butter, oil or bacon drippings. Crack in eggs and season to taste (I like to use a blend of paprika, sugar and onion powder, plus salt and pepper). Cook until the edges are crisp but the yolks are still runny, 2-3 minutes. Plate the egg on top of steak and drizzle the bbq sauce on top of steak and eggs.
  • 4. *Tip: Any extra BBQ sauce that is left can be sealed in an air tight container in the fridge and can be used at a later date.

2 tsp yellow mustard (french's)
4 tsp worsestershire sauce (lea and perrins)
2 tsp vinegar (cider or heinz malt vinegar)
1/4 tsp tabasco sauce (mc ilhenny co)

  • 1. Mix all ingredients well -- Serve -- Enjoy. As stated, I like to dunk my fries in this as well.
  • 2. Note: 1/4 cup equals 4 tablespoons. A tablespoon equals three teaspoons, not two as some may think. I'll post my A-1 Steak Sauce wanna-be in the near future. This is another example of the importance of "Brand Name" consistency and proper meassurement. Very important if you wish to duplicate or replicate or clone, tomorrow. I know this one will be spot on.
  • 3. Also great on a breaded Pork Tenderloin Sandwich, with a slice of raw Onion.

½ cup vodka
1 (2 inch) piece cinnamon stick, crushed
2 teaspoons whole allspice berries, crushed
10 whole cloves, crushed
½ cup red wine vinegar
½ cup soy sauce
2 teaspoons hot sauce
4 cloves garlic, crushed
4 tomatoes, cored and quartered
6 tablespoons red wine vinegar
¼ cup white sugar
¼ cup tamarind pulp

Steps:

  • Combine vodka, cinnamon, allspice, and cloves in a bowl. Combine 1/2 cup vinegar, soy sauce, hot sauce, and garlic in another bowl. Cover both bowls and allow mixtures to rest for 8 to 10 hours at room temperature. Strain vodka mixture and discard spices.
  • Press tomatoes through a sieve to make 1 cup tomato pulp; save any excess tomato pulp for another use.
  • Heat 6 tablespoons vinegar and sugar in a skillet over medium heat, stirring constantly, until mixture is deep brown and syrupy, 6 to 8 minutes. Stir in tomato pulp and reduce heat to medium-low; simmer until thickened, 4 to 6 minutes. Remove and discard garlic from soy sauce mixture and pour sauce into tomato mixture. Bring to a boil and stir in tamarind pulp and strained vodka. Continue to cook until sauce is thickened, 10 to 15 minutes.

1-1/2 lb. flat iron steak (1-1/2 lb.)
1/3 cup HEINZ Tomato Ketchup

Steps:

  • Mix all ingredients except steak and ketchup until blended. Pour 1/3 cup Worcestershire sauce mixture over steak in shallow dish; turn to evenly coat both sides of steak with Worcestershire sauce mixture. Refrigerate 1 hour to marinate.
  • Meanwhile, mix ketchup with remaining Worcestershire sauce mixture until blended. Refrigerate until ready to use.
  • Heat grill to medium-high heat. Remove steak from marinade; discard marinade.
  • Grill steak 5 to 7 min. on each side or until medium doneness (160°F). Serve with ketchup mixture.
