MEXICAN STEAK WITH HOMEMADE REFRIED BEANS



Mexican steak with homemade refried beans image

All the flavours of a good beef chilli con carne in a fraction of the time, cook it in a frying pan or on the bbq

2 small sirloin or rump steaks, or 1 big
2 tsp sunflower oil
1 tsp chipotle paste (we used Discovery)
about 2 whole roasted red pepper from a jar, quartered
1 small ripe avocado , stoned and chunkily diced
1 lime , cut into wedges
few coriander sprigs, leaves picked
few dollops soured cream
1 onion , chopped
1 tbsp sunflower or vegetable oil
2 tsp ground cumin
½ tsp hot paprika , plus a pinch extra (optional)
1 tbsp tomato purée
2 tsp each chipotle paste, brown sugar and wine vinegar (red or white)
400g can black bean , drained and rinsed
400g can pinto or kidney bean , drained and rinsed

Steps:

  • Put the steaks on a plate and rub them all over with the oil, chipotle paste and ½ tsp freshly ground black pepper. Leave at room temperature while you start the beans.
  • For the beans, soften the onion in the oil in a frying pan. Once softened, stir in the spices for 2 mins, followed by the tomato purée, chipotle, sugar and vinegar. Tip in all the beans with 1 tsp salt, some pepper and half a can of water. Bubble gently until the water is almost evaporated.
  • Heat a griddle or non-stick frying pan (or a barbecue). Season the steaks with salt. Fry, with the peppers alongside, for about 2 mins on each side, until the steaks are cooked to your liking and the peppers are charred. Lift the steaks onto a clean plate to rest for a few mins while you mash two-thirds of the beans. Stir in the whole beans and check the seasoning.
  • Slice the steaks. Spread a good pile of beans onto 2 plates, and top with sliced steak and peppers. Add the avocado, a big squeeze of lime juice, some coriander leaves, a good dollop of soured cream and a pinch more paprika, if you like.

After trying some of the refried beans recipes from this site, I will never again eat them from a can. However, the recipes I enjoyed were time consuming. This recipe is a marriage between scrumptious home made and easy (like canned).

2 (15 ounce) cans pinto beans, drained
4 tablespoons butter
1 teaspoon salt
1/4 cup salsa
1 cup cheddar cheese or 1 cup Mexican blend cheese

Steps:

  • Place first four ingredients in a medium sauce pan over medium heat.
  • Cook until the butter is melted and the ingredients are heated through.
  • Remove pan from the heat source, and add the cheese.
  • Mash all of the ingredients in the pan with a potato masher or beat with a hand-held mixer.
  • Add salt and pepper to taste.

4 cups cooked pinto beans (remember to add some sort of acid, like lemon juice, to your soaking process to help make them more digestible!)
4 T. butter
1 cup chopped onion
6 cloves garlic, minced
3 t. cumin
2 t. paprika
2 t. sea salt
1 t. chili powder
1 t. black pepper
Milk, as needed (water or bean broth can be used if your family is dairy-free. However, I prefer the richness that the milk adds.)

Steps:

  • In a large saucepan or pot, saute the onions and garlic in the butter until they are soft and tender. Add the beans. If your beans are completely dry, you may need to add some liquid (milk or water) at this point. I generally leave some of the cooking broth in with my beans when I freeze them, etc, so I usually have plenty of liquid to get me started. Add all the seasonings and spices. Mix well. Bring to a slow simmer and allow everything to cook on a low heat for 10-20 minutes. Stir occasionally to prevent burning and sticking. This simmering period allows all of the flavors to "meet" each other. ;) At this point, you will need to decide what consistency you are looking for in your beans. If you like a smoother, runnier texture, slowly add some milk (or water), mixing as you go. I don't have any exact measurements for this part of the process, since it really depends on your preferences! Once the beans have cooked down sufficiently and aren't too thick or runny, mash them with a potato masher, fork, food processor, or hand blender. I like to leave some chunks to avoid a total "baby food" consistency. Serve with tacos, burritos, nachos, or as a dip! (Note: this recipe is a little more on the "flavorful" side. I wouldn't exactly call it spicey, but if you have delicate tastebuds in your family, try starting with a lesser amount of spices at the beginning. You can always add more if need be!)

  • Place in a baking dish coated with cooking spray, and top with remaining cheese.

Ok guys I come up with this recipe out of necessity, due to the fact that I was living in Europe and if you could actually find refried beans, they where so over priced it was totally ridiculous... So I started experimenting and came up with a refried bean recipe that the whole family loves, and the kids love to help out on this one.....

2 cups black beans, cooked & drained (or 1 - 15 1/2 oz can, drained)
2 cups pinto beans, cooked undrained (or 1 - 15 1/2 oz can, undrained)
2 tablespoons vegetable oil
1 1/2 tablespoons minced garlic
1 teaspoon cilantro
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon pinto bean seasoning (www.fiestaspices.com)
1/8 teaspoon season salt
1/8 teaspoon salt
1/8 teaspoon lime juice
1/4 cup finely diced roma tomato (optional)
1/8 cup salsa (optional)
3 tablespoons finely chopped red onions (optional)
1/4 cup shredded monterey jack cheese (optional)

Steps:

  • Mix black beans, pinto beans, vegetable oil, minced garlic & if you so choose the optional ingredients add the roma tomato & onion in at this point. Cook on med-hi heat for 5 minutes, don't forget to keep stirring.
  • At this point take a potato masher and mash beans until you get the consistency in which you desire.
  • Add in remaining ingredients once you have your beans mashed. Cook on med-lo for 10 minutes, don't forget to stir.
  • If you refried beans get to thick just add in a little bit of water.
  • If you choose to add the optional cheese, sprinkle it on top at this time and turn off the heat.

1 large onion, chopped
4 garlic cloves, minced
6 tablespoons olive oil, divided
5 cans (15 ounces each) pinto beans, rinsed and drained
1-1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon ground coriander
1/4 teaspoon pepper
1/4 teaspoon hot pepper sauce
1 cup shredded Monterey Jack cheese

Steps:

  • In a large skillet, saute onion and garlic in 2 tablespoons oil until crisp-tender. Place 2 tablespoons oil in a blender; add half of the onion mixture, and half of the beans, cumin, salt, coriander, pepper, hot pepper sauce and cheese. Cover and process until smooth. Repeat with remaining ingredients., Transfer to a large skillet. Cook, uncovered, over medium heat until heated through. Leftover refried beans may be frozen for up to 3 months.
