Number Of Ingredients 11

2 pounds pork butt (2 1/2 pounds with bone), diced into 1/4-inch pieces
1/2 pound fat back, diced into 1/4-inch pieces
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
2 teaspoons finely chopped fresh sage leaves
2 teaspoons finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon light brown sugar
1/2 teaspoon fresh grated nutmeg
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes

Steps:

  • Combine diced pork with all other ingredients and chill for 1 hour. Using the fine blade of a grinder, grind the pork. Form into 1-inch rounds. Refrigerate and use within 1 week or freeze for up to 3 months. For immediate use, saute patties over medium-low heat in a non-stick pan. Saute until brown and cooked through, approximately 10 to 15 minutes.

Steps:

  • Prick sausages all over with a fork, and transfer to a skillet (preferably cast iron) over medium heat. Fill skillet with enough water to reach a quarter of the way up sides of sausages. Simmer, covered, until sausages are cooked through and water evaporates, 10 to 15 minutes. (If sausages have cooked through but water has not evaporated, uncover, and continue to cook until water evaporates.)
  • Continue to cook sausages, turning, until crisp and golden brown all around, about 3 minutes. Serve with cheeses.

1/4 pound pancetta, roughly chopped
2 tablespoons packed light brown sugar
1 tablespoon chopped fresh sage
2 teaspoons fresh thyme, plus more for topping
1 teaspoon paprika
1/2 teaspoon ground allspice
1/8 teaspoon cayenne pepper
1 1/2 pounds ground chicken
1/2 pound ground pork
1/4 cup finely chopped fresh parsley
Kosher salt and freshly ground black pepper
1/4 cup cold heavy cream
Maple syrup, for serving

Steps:

  • Combine the pancetta, brown sugar, sage, thyme, paprika, allspice and cayenne in a food processor. Pulse until the pancetta is finely chopped.
  • Transfer the pancetta mixture to a large bowl; set the bowl in a larger bowl of ice. Add the ground chicken and pork, parsley, 2 teaspoons salt, a generous amount of black pepper and the heavy cream. Mix with a rubber spatula until the cream is incorporated into the meat.
  • Transfer the meat mixture to a small rimmed baking sheet; press into a 9-by-12-inch rectangle. Cover with plastic wrap and refrigerate at least 2 hours or overnight.
  • Preheat the oven to 375 degrees F. Bake the sausage until lightly browned and cooked through, 25 to 35 minutes. Pour off any excess fat and transfer the sausage to a cutting board. Cut into pieces, top with thyme and serve with maple syrup.

1 tablespoon dried onion flakes
1 tablespoon smoked paprika
1 tablespoon dried parsley

12 ounces fully cooked kielbasa or Polish sausage, cut into 1 1/2-inch pieces
1 (12 ounce) bag fresh green beans, trimmed
1 medium yellow bell pepper, cut into bite-sized strips

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil for easier cleanup and spray with cooking spray.
  • Combine 2 tablespoons olive oil, rosemary, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Add potatoes and toss to coat. Place potatoes skin side-down on the baking sheet in a single layer.
  • Roast in the preheated oven until tender when pierced with a fork, 23 to 25 minutes. Remove from oven; stir.
  • Mix remaining olive oil, salt, pepper, onion flakes, paprika, parsley, and oregano in the same bowl. Add sausage, green beans, bell pepper, and onion; mix until well combined. Add to the baking sheet; spread in a flat layer.

This is a good hot pork pan sausage. We like it for breakfast, as a pizza topping, or mixed with ground chuck for chili or meat sauce. If you don't like it hot you can reduce or omit the crushed red pepper flakes.

2 lbs ground pork, chilled (80% lean, such as Smithfield)
1 tablespoon ground sage
1 teaspoon dried thyme leaves
1 tablespoon crushed red pepper flakes
2 teaspoons brown sugar
1/4 cup duke's mayonnaise
1 teaspoon black pepper (prefer fresh ground)
8 teaspoons asian fish sauce (or 2 1/2 tsp salt dissolved in 8 tsp water)
1 teaspoon dried marjoram

Steps:

  • In large mixing bowl add all ingredients except meat and mix well. Add meat and combine with seasoning mixture by kneading, folding and turning like bread dough. Mix until meat is uniformally seasoned but do not overwork or it will start to emulsify.
  • Cover and chill in refrigerator several hours or overnight.
  • Divide meat into desired portions (a 1/4 cup dry measure makes 2 oz by weight of this meat mixture) and form into patties ( a 2 1/2" cookie cutter ring forms a nice 2 oz patty).
  • Put the patties on a parchment lined cookie sheet and freeze.
  • When frozen transfer the patties to freezer bags and store in freezer until ready to use.
  • To cook thaw and pan fry until done.

  • Preheat the oven to 400 degrees F (200 degrees C).
