Steps:
- Slice cucumbers and place in a bowl. Cover with cold water and give a good sprinkling of salt. Place in refrigerator for a couple of hours to soak. This will keep the cucumbers firm. Drain water. Add onions, and toss with ranch dressing. (You can use any ranch you want, I make it with fat free, and it makes this salad nice and light!) Give it a sprinkle of pepper and you're all done!!

Steps:
- 1. Put all ingredients in food processor and process until blended and powdered. This comes out a bit thinner because of the lack of preservatives and fillers. I mix it with 3/4 cp mayo or sour cream to 1/4 cup milk and 3 tablespoons of the mix.
- 2. Try more or less to your liking! NOTE- you may add 1/4 tspn to this dressing of xanthan gum to thicken it as the recipes is thin. Instead of using xanthan gum I just use a little more mayo and less milk! I dont care for using additives
- 3. If you don't have dehydrated cucumber you can finely dice fresh cucumber (its better that way!)

EASY CUCUMBER PARTY SANDWICHES
These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

RANCH DRESSING MIX PLUS THOUSAND ISLAND AND CUCUMBER RANCH
This is from TOH. Its great because you can mix the dry ingredients and keep in a cool dry place in ziploc bags. All you have to do later is to add the ingredients for the other dressings and enjoy. I suggest refrigerating at least 24 hours before serving to allow the flavors to blend. The base mix yields 3 cups of mix. This divides into 4 portions to use at any point. Each portion makes 6 batches of salad dressing.
