PUDDING MIX:
1 cup nonfat dry milk powder
2/3 cup sugar
6 tablespoons cornstarch
1/3 cup baking cocoa
1/4 teaspoon salt
PUDDING:
1/2 cup water
1/4 cup Pudding Mix (above)
2 teaspoons butter
1/4 teaspoon almond or vanilla extract
Whipped topping and baking cocoa, optional

Steps:

  • Combine mix ingredients; store in an airtight container or resealable plastic bag. Yield: 1-3/4 cups mix (7 batches of pudding)., To make pudding: Combine water and mix in a small saucepan; bring to a boil over medium heat, stirring occasionally. Cook and stir for 2 minutes. Remove from the heat; stir in butter and extract. Pour into a serving dish. Serve warm or chilled; top with whipped topping and sprinkle with cocoa if desired.

It's easy to make your own homemade pudding mixes. They cost much less than the commercially made mixes. Can be easily frooze to make homemade fudge pops! You can even turn it into chocolate pie

3/4 c podwered milk
7/8 c corn starch (that is 1 cup minus 2 tablespoons)
1 1/2 c sugar
3/4 c cocoa powder
1/4 tsp salt slightly rounded

Steps:

  • 1. Combine all the dry ingredients and store in an airtight container. The mix fits in a quart jar.
  • 2. Homemade Chocolate Pudding mix in a jar To prepare: Add 2/3 cup mix to a saucepan. Add 2 cups milk and stir until blended. Bring to a boil, reduce heat and simmer while stirring constantly until thickened. Cool and serve. After pudding is made, you can put into popsicle containers and freeze for homemade fudge sicles. Or maybe a chocolate pie is more to your liking. Just pour into a graham cracker crust. Let set and serve. Serving Size : 24

4 cups nonfat dry milk powder
2 2/3 cups sugar
1 1/3 cups cornstarch
1 -1 1/3 cup baking cocoa (1 cup for light, 1-1/3 cups for a dark rich flavor)
1/2 teaspoon salt
2 cups milk (I like using half and half as it has a more creamy taste) or 2 cups half-and-half (I like using half and half as it has a more creamy taste)
1 tablespoon butter
1/2 teaspoon vanilla

Steps:

  • FOR MIX: Sift together all ingredients.
  • Store in airtight container or plastic bag.
  • TO MAKE PUDDING: Combine 1 cup of dry mix with 2 cups milk in a very heavy-bottomed saucepan.
  • Bring to a med boil; stirring constantly (watch closely not to burn!).
  • Stir in butter and vanilla.
  • Divide into bowls.

A rich, silky homemade chocolate pudding made the same way in our family since the 50's. Cooled pudding will form a dark skin on top, which is our favorite part! Top with whipped cream, if desired.

⅓ cup white sugar
⅓ cup unsweetened cocoa powder
3 tablespoons cornstarch
¼ teaspoon salt
2 ½ cups milk
1 ½ teaspoons vanilla extract

Steps:

  • Sift and whisk sugar, cocoa powder, cornstarch, and salt together in a saucepan.
  • Heat saucepan over medium heat. Pour milk in slowly, whisking constantly until incorporated. Cook, stirring often with a metal spoon, until pudding is noticeably thicker and clings to the spoon, about 10 minutes.
  • Remove from heat and stir in vanilla extract. Divide between 4 small bowls and serve immediately, or chill in the refrigerator for at least 2 hours.
