3/4 cup buttermilk
2-1/4 teaspoons kosher salt
1-1/2 teaspoons rubbed sage
1-1/2 teaspoons brown sugar
1-1/2 teaspoons pepper
3/4 teaspoon dried marjoram
3/4 teaspoon dried savory
3/4 teaspoon cayenne pepper
1/4 teaspoon ground nutmeg
2-1/2 pounds ground pork

Steps:

  • In a large bowl, combine the first 9 ingredients. Add pork; mix lightly but thoroughly. Shape into twenty 3-in. patties., In a large skillet coated with cooking spray, cook patties in batches over medium heat until a thermometer reads 160°, 5-6 minutes on each side. Remove to paper towels to drain. Freeze option: Wrap each cooked, cooled patty; transfer to an airtight container. May be frozen for up to 3 months. To use, unwrap patties and place on a baking sheet coated with cooking spray. Bake at 350° until heated through, about 15 minutes on each side.

2 pounds ground pork
2 tablespoons dark brown sugar
2 teaspoons rubbed sage
2 teaspoons kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon freshly ground black pepper
Pinch crushed red pepper flakes
2 tablespoons unsalted butter
Serving suggestion: eggs or pancakes

Steps:

  • Place the pork in a large bowl and add the brown sugar, sage, salt, garlic powder, smoked paprika, black pepper and red pepper flakes. Mix well using your hands. Form patties from heaping 1/4 cups of the mixture, about 1/3-inch thick.
  • Melt the butter in a large cast-iron skillet over medium-high heat. Cook the sausage patties in two batches until the internal temperature reaches 160 degrees F, about 5 minutes per side. Serve warm with eggs or pancakes. (See Cook's Note.)

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Combine ground pork, sea salt, sage, red pepper, marjoram, onion powder, pepper, and thyme in a large bowl. Mix with your hands well until evenly combined. Form mixture into 8 patties.
  • Place 4 patties in the basket of the air fryer and cook for 5 minutes. Carefully flip the patties and cook for 5 minutes more. Transfer to a paper towel-lined plate and repeat with remaining patties.

1 lb lean pork sausage plain
1/2 tsp salt
1/3 tsp ground black pepper
1 tsp garlic powder (not salt)
1 tsp onion powder (not salt)
1/2 tsp ground bay leaf seasoning
2 tsp ground sage
1 tsp basil
1/3 tsp hot red pepper flakes (optional if you prefer a bit of zip)

Steps:

  • 1. Two methods could be used. Method Number One: Un-wrap and coarsely chop ground pork in a medium sized bowl. Add all ingredients and mix and distribute well. You can press into sausage patties for frying or coarsely chop the pork while frying. Continue to flip and coarsely chop with end of spatula while frying. Method Number Two: Un-wrap and place pork in medium high heat frying pan. Coarsely chop pork with end of spatula while frying. Sprinkle about and add all other ingredients except water. Flip the pork a number of times and continue chopping coarsely. Turn heat to low and cook for 15 minutes. The pork I used was extremely lean so I added 1/3 cup water to insure sausage remained tender and did not dry out.
  • 2. I put this in my breakfast gravy and also serve an ample amount to the side. You could make the pork into patties if you like,
  • 3. Note: I used method two for this small batch and fried up loose as the picture indicates.
  • 4. Another Note: Quite frequently after frying breakfast sausage, I utilize the drippings and scrapings to make biscuit gravy for immediate use or to freeze for later use. Why let the yumminess go to waste? Add 1 1/2 to 2 cups milk to the frying pan. Heat to a low simmer. I add a tablespoon of bacon grease that is always on hand in the fridge. Also about 3 pads of butter and a little salt and pepper. To thicken mix 3 heaping tablespoons of corn starch to 1/2 cup cld water and mix to a slurry. Add to and stir into milk and turn the heat up to a substantial simmer. Stir while the gravy thickens. Cornstarch has to come to a low boil to thicken. If too thick upon reheating add a little milk and stir well.

After a couple of tries, yielding rather bland tasting sausage, I realized that commercial sausage sits with its seasonings and preservatives, and possibly, flavor enhancers, in the grocer's refrigerator case for a long time. When you make this sausage, please don't skip the resting time in the refrigerator, because this allows the seasonings to bloom.

1 tablespoon rubbed sage
1 teaspoon kosher salt, or to taste
1 teaspoon dried parsley

Steps:

  • Stir sage, salt, parsley, red pepper, fennel, black pepper, smoked paprika, coriander, and thyme together in a small bowl.
  • Place ground pork in a bowl, add seasoning mix, and mix well using your hands until all ingredients are evenly distributed. Form into a roll about 2 inches in diameter and 6 inches long. Wrap tightly in plastic wrap and refrigerate for 8 hours, or up to 24 hours.
  • Clean and preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Slice seasoned pork into twelve 1/2-inch thick patties.
  • Place patties onto the hot grate. Close lid and allow to cook for 1 1/2 minutes. Rotate each patty 90 degrees and continue grilling for 1 1/2 minutes at a time, until juices run clear, 6 minutes total. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

2 1/2 tsp poultry seasoning
2 tsp salt
1 tsp black pepper
1 1/2 Tbsp brown sugar, light or dark
1/4 tsp crushed red pepper flakes
2 tsp garlic powder
3 tsp onion powder
1 Tbsp fennel seed, crushed (only use this if you want Italian sausage)
2 lb ground pork (can also use chicken, turkey or beef)

Steps:

  • 1. In a small, bowl, combine poultry seasoning, salt, ground black pepper, brown sugar, crushed red pepper, garlic and onion powders and fennel seed, if you are using it to make this Italian sausage. Mix well.
  • 2. Place the pork in a large bowl and add the mixed spices to it.
  • 3. Mix well with your hands and form into patties. Place into refrigerator for at least 1 1/2 hours so the flavors can "marry" or "meld."

After viewing some recipes that advise to cover and refrigerate before cooking, I will prepare again, using that method. My daughter and I enjoyed them. Hope you will too. And as with all of my recipes, there is no salt added. Unfortunately, the site does not recognikze Mrs. Dash, so the sodium levels are alway incorrect.

1/2 teaspoon dried thyme
1/2 teaspoon dried sage

1 tablespoon pure maple syrup

1 egg white, beaten
3 tablespoons quick-cooking oats

1/2 teaspoon salt
1/2 teaspoon ground sage
1/4 teaspoon pepper
1/4 teaspoon nutmeg

Steps:

  • Lightly coat a 10-inch skillet with cooking oil spray and set aside.
  • Place 3 or 4 paper towles on a plate and set aside.
  • In a medium bowl, combine onion, apples, egg white, oats, parsley and spices.

  • Preheat the skillet over medium heat.

2 teaspoons rosemary, ground
1 teaspoon marjoram, ground
1 tablespoon paprika (I use smoked)
1/2 teaspoon ginger, ground

1/3 cup white wine or 1/3 cup apple juice
3 tablespoons pure maple syrup
3 tablespoons applesauce
2 tablespoons lemon juice

Steps:

  • Cut pork into 2 inch pieces and the fat into 1 inch cubes.
  • Grind through a 1/4 inch grinding plate.
  • You can use a food processor-pulse in SMALL batches.
  • In a small mixing bowl combine the wine, maple syrup, lemon juice and salt/spices.
  • Whisk well.
  • In a large mixing bowl combine the meat and wine/spice mixture.
  • Mix well to combine.
  • Cover bowl and place in refrigerator for 2 hours, up to 24 hours.
  • The longer the better.

I haven't tried this, but it looks so good! Adapted from Vegetarian Times magazine! These sausages were a hit among Vegetarian Times vegan staffers, who loved the idea of homemade veggie links. They are a snap to make in a 2-layer bamboo steamer, but you may use a metal steamer in a large saucepan, you may just have to do several batches.

1/2 cup cooked adzuki beans, rinsed and drained (canned is okay)
1 1/4 cups vital wheat gluten
1 cup vegetable broth
1/4 cup nutritional yeast
1 tablespoon soy sauce (low sodium)
2 tablespoons maple syrup
1 tablespoon light olive oil (or veg. oil, canola, etc.)
1 tablespoon rubbed sage (not powdered)
2 teaspoons ground fennel
1 teaspoon liquid smoke
1/2 teaspoon ground nutmeg

Steps:

  • Prepare bamboo steamer(or use steamer in a large saucepan), and lay out 25 sheets of foil, each about 5 inches square.
  • Mash beans with fork in a bowl until smooth. Stir in remaining ingredients.
  • Roll walnut sized pieces of bean mixture into small links(they don't have to be perfect). Wrap each link in foil, and twist both ends so it looks like a tootsie roll.
  • Place wrapped links in steamer, cover, and steam 30 minutes. Serve immediately, or refrigerate until ready to use.
  • Warm gently in the oven or toaster oven 8-10 minutes if not serving immediately.

2 teaspoons poultry seasoning
1 teaspoon garlic powder

Steps:

  • Preheat a cast-iron griddle pan over medium-high heat and spray with cooking spray.
  • Mix together the brown sugar, poultry seasoning, garlic powder, pepper, salt and anise seed in a large bowl. Add the ground pork and mix gently until well-combined.
  • Portion the sausage mixture using a heaping 1/4 cup measure and flatten each sausage into a 3-inch round, about 1/4-inch thick.
