1 lb ground beef
1/2 tsp black pepper
1 tsp salt
1/2 tsp garlic powder
1 tsp Worcestershire or A1 sauce
1 egg
1/4 c dry bread crumbs
2 Tbsp butter, margarine or oil
1 onion, sliced
2 Tbsp all-purpose flour
2 c Swanson's beef broth, or 2 c. water + 2 t. beef bouillon crystals

Steps:

  • 1. In a mixing bowl, combine ground beef, pepper, salt, garlic powder, Worcestershire or A1 sauce, bread crumbs, and egg.
  • 2. Stir mixture together well and shape into four patties.
  • 3. On medium heat, brown patties on both sides in butter, margarine or oil. Remove from skillet and set aside.
  • 4. Separate onion slices into rings and add to the skillet. Reduce heat to medium low and cook until the onions turn translucent and brown, about 20-25 minutes.
  • 5. Sprinkle 2 Tablespoons of flour over the onions. Stir.
  • 6. Let cook a few minutes until the flour is nicely browned.
  • 7. Then stir in the beef broth.
  • 8. Add beef patties back into the skillet and spoon a little gravy over each patty.
  • 9. Bring to a boil, reduce heat, and cover skillet. Simmer for about 15 minutes.
  • 10. NOTE: Alternatively, you may use sliced fresh mushrooms instead of the onion.

1 egg white, lightly beaten
1/3 cup chopped onion
1/4 cup crushed saltines
2 tablespoons fat-free milk
1 tablespoon prepared horseradish
1/4 teaspoon salt, optional
1/8 teaspoon pepper
1 jar (12 ounces) fat-free beef gravy
1-1/4 to 1-1/2 cups sliced fresh mushrooms
2 tablespoons water
Hot cooked noodles, optional

Steps:

  • In a large bowl, combine the beef, egg white, onion, crumbs, milk, horseradish, salt if desired, and pepper. Shape into four oval patties. , In a large skillet cook patties over medium heat for 5-6 minutes on each side or until a thermometer reads 160° and meat is no longer pink. Remove patties and keep warm. Add gravy, mushrooms and water to skillet; heat for 3-5 minutes. Serve over patties and noodles if desired.

1 (10.5 ounce) can condensed French onion soup
1 ½ pounds ground beef
½ cup dry bread crumbs
1 egg
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon all-purpose flour
¼ cup ketchup
¼ cup water
1 tablespoon Worcestershire sauce
½ teaspoon mustard powder

Steps:

  • In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
  • In a large skillet over medium-high heat, brown both sides of patties. Pour off excess fat.
  • In a small bowl, blend flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder. Pour over meat in skillet. Cover, and cook for 20 minutes, stirring occasionally.

I remember enjoying it often when I was growing up, but when I decided to add it to my recipe collection, I wasn't able to find it in my modern cookbooks. 1 egg
3 tablespoons crushed butter-flavored crackers
1 tablespoon finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon rubbed sage
3/4 pound ground beef
1 can (4 ounces) mushroom stems and pieces, drained
2 tablespoons butter
3 tablespoons all-purpose flour
1-3/4 cups water
2 beef bouillon cubes
1/4 teaspoon browning sauce, optional
Hot mashed potatoes

Steps:

  • In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. Shape into two patties. , In a medium skillet, cook patties for 4-5 minutes per side or until browned; drain. Remove to a platter and keep warm. , In the same skillet, saute mushrooms in butter for 2 minutes. Stir in flour; blend well. Add water and bouillon; cook and stir until smooth and thickened. Stir in browning sauce if desired. Return patties to gravy and cook, uncovered, over low heat for 10 minutes, stirring occasionally. Serve with mashed potatoes.

1/4 cup safflower oil
1 large onion, grated (about 1 1/3 cups)
2 slices white bread
1/2 cup whole milk
2 pounds ground sirloin
2 garlic cloves, minced (1 1/4 teaspoons)
1 large egg
2 tablespoons chopped flat-leaf parsley
2 teaspoons plus a dash of Worcestershire sauce
Coarse salt and freshly ground black pepper
1 teaspoon cornstarch, plus 1/4 cup for dusting
1 1/2 cups beef broth

Steps:

  • Heat a medium saute pan over medium heat. Add 2 tablespoons oil and 1 cup onion. Reduce heat to medium-low, and cook, stirring occasionally, until onions are golden brown and caramelized, about 35 minutes. Set aside.
  • Soak bread in milk, flipping once. Finely chop. In a large bowl, combine the remaining 1/3 cup onions, the sirloin, garlic cloves, bread, egg, parsley, 2 teaspoons Worcestershire sauce, 2 teaspoons salt, and 1/4 teaspoon pepper. Mix with your hands to combine. Divide meat mixture into 6 oblong patties (about 5 inches long and 3/4 inch thick). Dust with cornstarch.
  • Heat a large skillet over medium-high heat. Add remaining oil, and reduce heat to medium. Cook patties, 3 at a time, for 6 minutes, without moving them. Flip, and cook until cooked through, about 9 minutes. Set aside on a plate. Repeat with remaining patties.
  • Make the gravy: Add cooked onions and 1 teaspoon cornstarch to same skillet, and stir for 1 minute. Raise heat to medium-high. Pour in broth and a dash of Worcestershire sauce, and whisk until broth is clear and slightly thickened, about 3 minutes. Remove pan from heat, and return patties and juices to skillet, spooning sauce on top.
