Chocolate Buttercream Recipe - (4.6/5) image

1/2 cup sugar
3 1/2 Tbsp. water
1 tsp. light corn syrup
2 eggs
1/4 tsp. salt
1 cup butter, softened
1 cup semi-sweet chocolate chips, melted

Steps:

  • In a small saucepan combine sugar, water and corn syrup. Bring mixture to a boil over high heat; boil 1 1/2 minutes. In large mixer bowl beat eggs and salt on high speed until light. While beating on high speed, slowly pour hot syrup drop by drop into eggs. Continue to beat until mixture is light and fluffy and has cooled. Beat in butter on medium; continue beating 3 minutes. Add cooled melted chocolate; beat until light and fluffy, about 2 minutes. Tip: Because of food safety, only pasteurized eggs should be used in recipes where the eggs are not cooked.
