Cheesy Hamburger Skillet (Or Helper, Goulash, Cowboy Stuff) image

Guy food, tossed together one Saturday night in a large cast iron skillet. Exactly my kind of comfort food. Ingredient amounts are approximate, as they usually are when a guy cooks (this guy, anyway), so don't fret over amounts and feel free to taste and add whatever.

1 1/2 lbs ground beef
1 medium onion, chopped
1 (10 ounce) can Rotel Tomatoes (heat level of your choice)
1 (8 ounce) can tomato sauce
1 (15 ounce) can pinto beans (or chili, Texas, ranch beans)
2 tablespoons chili powder
5 ounces elbow macaroni (uncooked, about a cup)
1 1/2 cups cheese, shredded (cheddar, Mexican or similar)
water, as needed for consistency
salt and pepper

Steps:

  • Cook the elbow macaroni according to package directions.
  • Meanwhile, in a large skillet, cook the ground beef and onions.
  • Drain the meat mixture.
  • Add tomato products and beans, undrained.
  • Add water if needed and chili powder and simmer for 15 minutes.
  • Add the cooked macaroni and reheat to a simmer.
  • Taste and adjust salt and pepper.
  • Stir in 1 cup of cheese and melt.
  • Add remainder of cheese to top and remove from heat.

1 lb ground beef, browned
2 onions, large chopped
1/2 teaspoon red pepper flakes
1 (16 ounce) bag elbow macaroni
1 (28 ounce) can crushed tomatoes
1 teaspoon garlic salt (I use Lawry's)
1/4 teaspoon pepper
1 teaspoon chili powder

Steps:

  • Saute beef, 1/2 tsp of red pepper flakes and 2 onions in large frying pan. Drain excess fat. Lots of onions makes this good.
  • Meanwhile, in another pan cook macaroni in boiling, salted water until tender. Set aside until almost ready to serve.
  • When beef and onions are finished cooking, add the canned, crushed tomatores and approximately 1/2 cup water; also add garlic salt, pepper, chili powder and mix well.
  • Simmer for about 20 minutes; then add cooked macaroni noodles and mix well when ready to serve. If you add the macaroni noodles too soon, they may over cook and get mushy.

1 1/2 - 2 lb hamburger
1 large onion - chopped
2 can(s) tomato soup
28 oz diced tomatoes
2 Tbsp sugar
2 tsp minced garlic
2 tsp paprika
2 tsp apple cider vinegar
1 tsp salt
1 tsp pepper
2 c water
2 tsp dried parsley
2 tsp italian herbs / oregano
2 tsp worcestershire sauce
4 c rotini pasta

Steps:

  • 1. Cook ground beef and onion in a large skillet until beef is browned. Drain off grease from hamburger.
  • 2. Add soup, tomatoes and all other ingredients except pasta. Cook until mixture starts to boil. Add pasta and simmer until it is tender, about 12 minutes.
  • 3. Note: Could sprinkle shredded cheddar cheese on top before serving.

2-1/2 pounds ground beef
1 medium onion, chopped
2 cups water
3/4 cup ketchup
2 tablespoons Worcestershire sauce
2 teaspoons paprika
1 to 2 teaspoons sugar
1 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon garlic powder
2 tablespoons all-purpose flour
1/4 cup cold water
Hot cooked noodles or mashed potatoes

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add the water, ketchup, Worcestershire sauce, paprika, sugar, salt, mustard and garlic powder. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. , In a small bowl, combine flour and cold water until smooth; stir into the meat mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with noodles or potatoes. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

About 40+ yrs ago a friend of a friend gave me this recipe. Through the years I have refined it to my families taste and it is now a staple when I can't think of anything for casserole wed to send to my son's house. I usually use gr. beef but it is also great with gr. chicken. Just add chicken flavoring. I usually make it in one large frying pan but have given the directions for the first way that I learned to do it. I also have cream of celery and cream of onion, which takes the place of cream of mushroom, in my pantry. Hope you enjoy

2 pound(s) gr. beef 80/20 is best
1 large onion
1/4 cup(s) celery/minced
2 can(s) cream of soup/ your choice of flavor
2 teaspoon(s) garlic/minced
2 tablespoon(s) beef bouillon, cubes/optional
1/2 cup(s) water, as needed
1/2 to 1 package(s) noodles/your choice of kind and amount

Steps:

  • in a very small amount of oil saute celery and onions. Celery should be soft and onions almost clear and both should be starting to turn golden brown. Add oil or a little butter or margie if needed.
  • Add beef and brown, but don't over cook. I learned nothing is worse that over cooked beef in this.
  • While beef is cooking mix together all other ingredients except water and noodles, salt and pepper. This allows you you taste and adjust your flavors. Remember canned soups and bouillon are salty to begin with.
  • Cook noodles according to package directions.
  • Drain Meat trying to save as much of the celery and onions as possible.
  • Combine all ingredients from bowl together, add water to make consistence like you want it. Bring to soft boil, turn down heat and simmer 5 minutes, add noodles, and serve.
  • I know it sound like a lot of work but once you try it you can get down to making it in about 10 minutes or so. I also cheat most of the time and use a can of cream of celery and a can of cream of onion soup. The cream of onion is a staple in my pantry, not cream of mushroom.
