500 g kidney beans ((dried. 3 cups / 17 oz))
water
1.5 kg ground beef ((We used extra-lean. Regular is fine. 3 lbs))
200 g onion ((chopped. Measured after chopping. 7 oz / 1 1/2 cups))
150 g pepper ((seeded, chopped. Sweet or hot or combo. 1 cup / 1 large))
2 litres crushed tomatoes ((or canned whole tomatoes. 2 US quarts / 64 oz. Undrained.))
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon cumin ((ground))
1 tablespoon ground black pepper
1 tablespoon oregano ((dried))
2 tablespoons salt ((OR non-bitter, non-clouding salt sub))
2 tablespoons cocoa powder ((regular unsweetened))
2 tablespoons lime juice ((fresh or bottled))

Steps:

  • Wash dried beans. Place in large pot, cover with about 5 to 10 cm (2 to 4 inches) of water, let stand overnight or 12 to 18 hours.
  • Drain, discard soaking water.
  • Put in large pot, cover with fresh water (optional: add a few bay leaves), bring to a boil, then lower to a simmer covered for 30 minutes.
  • Meanwhile, combine ground beef, onion and pepper, and fry until beef is browned. Drain in a mesh strainer, colander or on paper towel to get excess grease off.
  • Drain beans (tip: you can freeze the bean stock as a base for delicious soups).
  • Return beans to their large pot, and add the beef mixture, the tomatoes, and all the flavourings. Stir, bring to a boil, then lower to simmer for 5 minutes to ensure all is heated through evenly.
  • Pack into heated jars: either 1/4 litre or 1/2 litre (1/2 US pint or 1 US pint), leaving 3 cm (1 inch) headspace.
  • Debubble; adjust headspace.
  • Wipe jar rims.
  • Put lids on.
  • Processing pressure: 10 lbs (69 kPa) weighted gauge, 11 lbs (76 kpa) dial gauge (adjust pressure for your altitude when over 300 metres / 1000 feet.)
  • Processing time: Process either size of jar for 75 minutes .

CHILI SAUCE

Classic, old fashioned sweet and spicy chili sauce. PERFECT with potato pancakes, chicken and pork.

18 quarts tomatoes
2 bunches celery
3 quarts banana peppers
10 red peppers
12 onions
6 cloves garlic
1/4 cup coarse salt
4 cups vinegar
4 peaches
2.5 lbs brown sugar
2 tsps. cayenne pepper
3 tsps. cloves
3 tsps. cinnamon
2 whole cinnamon sticks
10 whole cloves

Steps:

  • Peel tomatoes by placing them in boiling water for 30 seconds and then plunging them into cold water. The skin will slide right off. If it doesn't, plunge them in the hot water again.
  • Wrap all the whole spices in a little cheesecloth bag.
  • Rough chop the remaining ingredients. Don't worry about it being pretty, just chop them up into pieces between 1/4" - 1/2".
  • Put all the ingredients into a large stock pot and bring to a boil. Once boiling, reduce heat to a simmer and simmer until thick and reduced by 1/3rd. This will take many hours. 5-10 hours depending on the type of tomatoes you use.
  • Taste as you go! If after 3 hours you find you like the taste of it, then remove the spice bag and continue to simmer until thickened. I always leave my spice bag in until the end though.

2 teaspoons dried onion flakes
2 teaspoons granulated sugar
1 teaspoon salt
1 teaspoon lemon juice
1/8 teaspoon garlic powder

Steps:

  • In a small saucepan over medium heat, whisk together the tomato puree, corn syrup, vinegar, onion flakes, sugar, salt, lemon juice, and garlic powder.
  • Once it starts to bubble, lower the temperature to low and let the mixture simmer for 30 minutes. Allow the chili sauce to cool completely. Enjoy!

1 pound lean ground beef
1 onion, chopped
1 tablespoon minced garlic, or to taste
½ teaspoon taco seasoning mix, or more to taste
2 (14.5 ounce) cans diced stewed tomatoes with chili seasonings
3 (16 ounce) cans chili beans, undrained
1 (15 ounce) can tomato sauce
1 (4 ounce) can diced green chilies

Steps:

  • Place ground beef into a soup pot over medium heat, and cook and stir until the meat is browned, breaking it up into crumbles as it cooks, about 10 minutes. Stir in onion and garlic, and cook until the onion is translucent, about 5 more minutes. Drain excess grease if necessary, and sprinkle the meat with taco seasoning mix; cook the meat with the seasoning for 1 or 2 more minutes.
  • Pour in the chili-flavored tomatoes, chili beans, tomato sauce, and diced green chilies, and stir to combine; simmer for 30 minutes to blend flavors.

FRESH TOMATO CHILI SAUCE

This is a sweet chili sauce made according to an old family recipe. It is great on hamburgers, and pot roast. If you don't can the sauce in jars, it can be refrigerated.

35 fresh tomatoes, peeled, seeded and chopped
3 fresh hot chile peppers, seeded and chopped
4 red bell peppers, cored, seeded and cut into 2-inch pieces
1 large onion, chopped
2 cups apple cider vinegar
⅓ cup fresh lime juice, or amount to taste
1 cup white sugar
1 cup packed brown sugar
1 tablespoon salt, or amount to taste

Steps:

  • Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
  • Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.

Tina Nieland - this recipe was given to me by one of my best friends, who I used to do canning with. This sauce is very good to add to chili, meatballs or meatloaf, to make pizza sauce or spaghetti sauce. I like it because it saves times when preparing a meal.

4 qt chopped tomatoes
1 c green pepper
1/4 tsp cayenne pepper (use less if you don't like it hot)
3 Tbsp salt
2 c onion, chopped
1 c red (sweet) pepper
1 c sugar
2 1/2 c vinegar
1 Tbsp mustard seed
1 tsp cinnamon
1 tsp allspice, ground

Steps:

  • 1. Combine all the above ingredients and cook on medium heat stirring occasionally 1 to 1 1/2 hours till thickened.
  • 2. Add vinegar and the following spices in a cloth bag: mustard seed, cinnamon, allspice.
  • 3. Cook until thickens again and pour into hot sterilized pint jars and seal.

CHILI SAUCE

4 quarts chopped peeled tomatoes (about 24 large)
2 cups chopped onions
2 cups chopped sweet red peppers (about 4 medium)
1 serrano pepper, finely chopped
1 cup sugar
3 tablespoons salt
3 tablespoons mixed pickling spices
1 tablespoon celery seed
1 tablespoon mustard seed
2-1/2 cups white vinegar

Steps:

  • In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.
