This no-bake dessert is a great one to keep in your pocket since it comes together super fast and tastes great topped with whipped cream or ice cream. To safely flambé, use a long stick lighter to ignite the rum and make sure there isn't anything above the skillet. Let the flame completely die out before pouring over the crepes.

4 store-bought crêpes
4 tablespoons unsalted butter, plus melted butter for brushing
2 peaches, pitted and sliced
1/2 cup sugar
1/3 cup dark rum
Juice of 1/2 lime

Steps:

  • Lightly brush a crêpe with melted butter and warm in a large nonstick skillet over medium heat, 15 to 30 seconds. Flip and fold over twice to form a triangle, then transfer to a serving platter. Repeat with the remaining crêpes.
  • Sauté the peaches in the butter and sugar in the same skillet over medium-high heat until tender, 3 to 5 minutes.
  • Carefully add the rum to the skillet and use a long lighter to ignite. Cook until the alcohol burns off, then stir in the lime juice. Spoon the peaches over the crêpes.

1 orange
2 tablespoons unsalted butter
3 tablespoons packed light brown sugar
1 vanilla bean, split lengthwise
1/4 cup orange liqueur or brandy
Kosher salt
3 ripe bananas, peeled, halved lengthwise and crosswise
1/2 cup dark rum
Whipped cream, for serving

Steps:

  • Remove 4 strips orange zest with a vegetable peeler. Squeeze the orange and strain the juice.
  • Melt the butter with the sugar, orange zest and vanilla bean in a large skillet over medium heat. Cook, stirring, until the sugar caramelizes, about 5 minutes. Remove from the heat and stir in the liqueur, orange juice and a pinch of salt.
  • Return the skillet to medium heat, add the bananas, cut-side down, and cook until glazed and golden, 1 to 2 minutes. Remove from the heat and divide among bowls.
  • Add the rum to the pan and return to medium heat. Warm for a few seconds without stirring, then carefully tilt the pan so the rum ignites (if using an electric stove, hold a lit match near the sauce to ignite it). Spoon the flaming sauce over the bananas. Garnish with whipped cream and the glazed orange zest.

Unsalted butter, for the pan
Gingersnaps, for the pan
3 8-ounce packages cream cheese, softened
1 cup sugar
1/2 easpoon grated orange zest
1/4 teaspoon salt
3 large eggs
1/4 cup peach nectar
3 peaches, sliced
2 tablespoons fresh orange juice
1 teaspoon sugar

Steps:

  • Preheat the oven to 325˚ F. Make the crust: Wrap the outside of a 9-inch springform pan with foil. Butter the inside of the pan and line the bottom with gingersnaps, breaking them as needed.
  • Make the filling: Beat the cream cheese, sugar, orange zest and salt in a large bowl with a mixer on medium-high speed until fluffy, 3 to 5 minutes. Beat in the eggs, one at a time, until just combined, then beat in the peach nectar. Pour the filling over the crust and bake until set but the center still jiggles slightly, 1 hour to 1 hour 15 minutes. Transfer to a rack and let cool completely, then refrigerate 8 hours or overnight.
  • Make the topping: Toss the peaches with the orange juice and sugar until the sugar dissolves. Spoon over the cheesecake.

1 package graham crackers, crushed
1/4 cup butter, melted
1/4 cup sugar
1/4 cup crushed Kona coffee beans, dark chocolate macadamia flavored
2 (8 ounce) packages cream cheese
2 eggs
3 cups sugar
1 teaspoon vanilla
1/4 cup crushed chocolate covered nuts
8 ounces vanilla yogurt
2 tablespoons Kona Coffee Syrup, recipe follows
1/2 cup Kona coffee, strongly brewed
1 cup sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • For the Crust: Mix graham crackers, butter and sugar together and press into bottom of an 8-inch pie pan. Bake for 10 minutes. Let cool. Sprinkle 1/4 cup of the coffee on the crust.
  • For the Filling: Blend together the cream cheese, eggs, sugar, and vanilla until creamy. Add the crushed chocolate covered nuts, and stir until blended well.
  • For the Topping: Mix together the yogurt and coffee syrup and mix well.
  • Spoon the first mixture into the cooled pie pan. Drop spoonfuls of the second mixture over the first mixture. Gently swirl. Bake in oven for 25 minutes.
  • Combine the coffee and sugar in a saucepan. Cook until all sugar is dissolved. Let cool a little.
