1 tablespoon vegetable oil
1 lb boneless skinless chicken breast
1 garlic clove
1 1/4 cups chicken broth
2 tablespoons lemon juice
1 tablespoon cornstarch
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups snow peas (fresh is best)
2 tablespoons chopped fresh parsley

Steps:

  • Cut chicken into 1" pieces. Mince the garlic.
  • Cook pasta according to package directions. Drain and keep warm.
  • Heat oil in a large skillet over medium-high heat. Add chicken and garlic and cook, stirring frequently, for about 5 minutes until browned. Reduce heat to medium.
  • In a bowl, whisk together the broth, lemon juice, cornstarch, salt and pepper. Add to chicken in skillet. Heat to boiling; reduce heat and simmer about 2 minutes, until thickened, stirring frequently.
  • Add snow peas and cook 3 minutes longer.
  • Toss hot pasta with sauce and garnish with parsley.

2 teaspoons extra-virgin olive oil
1 small onion, chopped
8 oz. button mushrooms, sliced
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 (1 lb.) box penne pasta (whole wheat, regular or gluten free are fine)
3 cups low-sodium chicken broth
4 oz. plain cream cheese (I use 1/3 reduced fat)
2 cups shredded mozzarella cheese
1 (10 oz.) bag frozen peas, thawed
2 cups cooked, shredded chicken (see notes)
1/4 cup fresh parsley, chopped (optional)
Shredded Parmesan cheese (optional)

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and mushrooms and saute for 7-8 minutes, until onions are tender and the mushrooms have released most of their liquid.
  • Add garlic, salt and pepper and saute for another 30 seconds.
  • Add pasta and chicken broth and bring to a boil.
  • Cover, reduce heat to medium-low and cook for 8-10 minutes, until most of the liquid is absorbed and the pasta is nearly cooked. I lift the lid and stir it once or twice during the cooking time so the pasta gets moved around and can cook evenly.
  • Add cream cheese and mozzarella cheese and stir until melted and well combined. You can add an extra splash of chicken broth if needed to get everything to mix well.
  • Add thawed peas and shredded chicken and stir to combine. Turn off heat, cover and let sit for a few minutes.
  • Taste and adjust seasonings.
  • Serve with fresh chopped parsley and Parmesan cheese (if using).

1 Pound Boneless Skinless Chicken Breasts (- sliced into 3/4-1'' wide strips)
2 TBS Unsalted Butter (- DIVIDED)
1 large Shallot (- finely diced)
2 Cloves Garlic (- minced)
1 TBS All Purpose Flour
2 Cups Chicken Broth
1 ½ Cups Half-and-Half
8 ounces Linguine (- broken in half)
1 ¼ Cup Peas (- (thawed if frozen) (SEE NOTES))
1 bunch fresh Basil (- 1 large sprig left whole, the rest chiffonade (thinly sliced))
1 Lemon (- zest and juice)
½ Cup Parmesan Cheese (- grated, plus more for serving)

Steps:

  • Cook Chicken: Melt 1 tablespoon butter in a Dutch oven, or large straight sided skillet, over medium high heat. Add the chicken and season generously with salt and pepper. Cook until golden brown on all sides, but not cooked through, about 4-6 minutes total. Remove chicken to a plate.
  • Saute Aromatics, then add flour: Add in the remaining tablespoon of butter. Once melted, add in the shallot and season with salt and pepper. Cook until softened, about 2 minutes. Add in the garlic* and cook until fragrant, about 1 minute. Add in the flour and cook, stirring, for another minute.
  • Add liquids, then chicken + pasta: Add in the chicken broth and half-and-half. Whisk to combine. Add back in the chicken along with the pasta and a large sprig of basil. Bring to a slow boil, stirring occasionally, then immediately reduce to a simmer. Cover and cook for 10-15 minutes, or until the pasta is al dente. Remove the sprig of basil and discard.
  • Add in the peas, lemon juice and zest. Cook for an additional minute. Stir in the parmesan and chopped basil. Taste and adjust for seasoning with salt and pepper.
  • Garnish & Serve: Garnish with crushed red pepper flakes, more parmesan cheese, and slices of lemon if using. Serve immediately and enjoy!

5 tablespoons low-sodium soy sauce
4 teaspoons toasted sesame oil
2 teaspoons honey
1 1/4 pounds skinless, boneless chicken breasts, cut into 3/4-inch chunks
6 teaspoons canola oil
2 scallions, thinly sliced
1 tablespoon grated peeled ginger
3 cloves garlic, minced
1 1/4 cups low-sodium chicken broth
3 tablespoons sugar
3 to 4 teaspoons cornstarch
1 tablespoon rice vinegar
1 teaspoon chili paste
4 cups snow peas, trimmed
Cooked brown rice, for serving (optional)
2 tablespoons toasted sesame seeds

Steps:

  • Whisk 3 tablespoons soy sauce, 2 teaspoons sesame oil and the honey together in a medium bowl. Add the chicken, toss and marinate 20 minutes.
  • Remove the chicken from the marinade using a slotted spoon. Heat 2 teaspoons canola oil in a nonstick skillet over medium-high heat. Cook the chicken in 2 batches, turning once or twice, until browned, 3 to 5 minutes (add 2 more teaspoons canola oil between batches). Transfer the chicken to a plate and wipe out the skillet.
  • Heat the remaining 2 teaspoons canola oil in the skillet. Add the scallions, reserving some of the green parts for topping. Add the ginger and garlic and cook, stirring, 1 minute. Whisk the broth, sugar, cornstarch, vinegar, chili paste and the remaining 2 tablespoons soy sauce in a bowl; add to the skillet and cook, stirring, until thickened, 3 to 4 minutes. Stir in the remaining 2 teaspoons sesame oil.
  • Meanwhile, cook the snow peas in a steamer basket set over a few inches of boiling water until crisp-tender, 2 to 3 minutes.
  • Return the chicken to the skillet with the sauce and heat through. Serve the chicken and snow peas over brown rice, if desired. Top with the sesame seeds and reserved scallion greens.

4 boneless skinless chicken breasts
5 tablespoons olive oil

1 1/2 cups trimmed and sliced sugar snap peas
One 10-ounce bag frozen peas
3 cups baby spinach
3 tablespoons chopped fresh basil

Steps:

  • Bring a large pot of water to a boil and salt it generously. Add the pasta and cook until al dente, 8 to 10 minutes. Reserve 1/4 cup of the cooking liquid. Drain the pasta and set aside.
  • Sprinkle the chicken with salt and pepper. Add 2 tablespoons olive oil to a large pan over medium-high heat. Cook the chicken until the internal temperature reaches 160 degrees F, about 5 minutes per side. Remove the chicken and slice it into strips.
  • Add 1 tablespoon olive oil to the pan. Add the garlic and shallot and sprinkle with salt and pepper. Cook until fragrant, 1 minute. Add the lemon juice and sugar snap peas and cook, 2 minutes. The sauce works best with springy egg pasta, preferably homemade or a good purchased brand. Make sure not to overcook it; you need the chewy bite to stand up to the gently cooked vegetables. If you can't find good fresh English peas, you can substitute frozen peas, but don't add them until the last minute of cooking.

3 tablespoons vegetable oil
1 tablespoon unsalted butter
1 1/2 cups long-grain rice
salt
fresh ground black pepper
1/2 cup dry white wine
4 1/2 cups chicken broth
1 lemon, zest of
1 lemon, juice of
1 1/2 cups snow peas, thinly sliced across the width
2 lbs chicken tenders, cut into bite-size pieces
1/2 teaspoon crushed red pepper flakes
1 large onion, sliced
3 large garlic cloves, chopped
3 inches piece ginger, peeled and grated
3 tablespoons honey
1 tablespoon cornstarch
5 scallions, thinly sliced

Steps:

  • Heat a medium saucepan over med-high heat; add 1 tablespoon vegetable oil and the butter to the pot.
  • When the butter is melted, add in the rice; season with salt and pepper, lightly brown the rice for 3-4 minutes, stirring often.
  • Add in the wine and allow it to evaporate entirely, 1 to 2 minutes.
  • Add in 3 cups chicken broth and the lemon zest; bring liquid to a boil; cover and lower heat.
  • Cook the rice for 18 -20 minutes or until tender.
  • Once the rice has only about 3 more minutes of cook time, remove the lid and add the sliced snow peas (don't stir the rice; just add the snow peas on top and put the lid on.
  • The steam will lightly cook the snow peas.
  • Once cooked, fluff the rice with a fork and stir in the snow peas; they should have some crunch to them.
  • While the rice is cooking, preheat a large skillet over med-high heat with the remaining 2 tablespoons oil.
  • Add in the chicken, season with salt and pepper, and brown for 3 minutes.
  • Add in the red pepper flakes, onions, garlic, ginger, and honey.
  • Stir frequently and continue to cook 3-4 minutes, or until the onions are tender.
  • Add the remaining 1 ½ cups chicken broth; bring to a simmer.
  • Once at a simmer, combine the cornstarch with a splash of water and mix to create a thin paste.
  • Add the cornstarch mixture to the simmering chicken, mix thoroughly and continue to cook for 2 minutes or until the liquid is thickened.
  • Add the sliced scallions and lemon juice to the chicken and stir.
  • Serve the honey chicken over the snow pea rice.

1 units garlic salt

1 pints whipping cream
3 units chicken bouillon powder
1 teaspoons oregano
1 teaspoons basil

Steps:

  • Boil pasta according to directions on box. Cut chicken into cubes and brown it in large skillet adding garlic salt and pepper to flavor. Once chicken is browned, remove and place it in a large bowl.
  • In same skillet, add whipping cream, chicken bouillon, and oregano & basil. When all spices are combined add chicken back to skillet and add tomatoes and snow peas.
  • Let simmer for about 15-20 min. or until snow peas are cooked. Serve over bow tie pasta. Top with Kraft Parmesan Cheese and enjoy!
