HOLIDAY YAMS
I came up with the idea of combining the yams and apples when I had all four generations for dinner one Thanksgiving. Everyone loved it from GreatGrandmas on down to my (then) 2 year old granddaughter.

Steps:
- Add yams to a pot of boiling water, cover and after allowing water to return to a boil, cook for 30-35 minutes.
- Rinse in cold water.
- Remove the skins from the yams.
- Cut into 1/4 inch slices.
- Quarter the apples and cut into 1/4 inch slices.
- Spray a large rectangular or oblong pan with cooking spray of your choice.
- Layer the yams and the apples.
- Pour the orange juice over both layers.
- Dot with butter or margarine if desired.
- Top with the raisins.
- Sprinkle with cinnamon and nutmeg.
- You can adjust these amounts to your own personal preference.
- Bake at 350º for 30-35 minutes.

HOLIDAY SUNSHINE YAMS
My mom has been making this recipe my whole life...I'm almost 23. It is my favorite thing to eat on Thanksgiving and Christmas. Now that I'm older, I have been making it the past couple of years. It is absolutely delicious and the addition of peaches makes it one of a kind.

Steps:
- Melt butter.
- Add whole cranberry sauce to it and cook down.
- Let it cook 5 minutes.
- Add 1 tsp of cinnamon or to taste.
- Add 1/3 to ½ cup brown sugar.
- Drain 1/3 cup of peach syrup into another dish.
- Add 1 tbsp cornstarch to peach syrup and stir together.
- Add peaches to cranberry mixture.
- Let it simmer for 5 minutes.
- Drain and add yams to pan.
- Let it simmer for 5 minutes.
- Add peach syrup/cornstarch mixture into pan.
- Let it simmer until it thickens.
HOLIDAY CRANBERRY YAMS
I have been making this recipe, for over 30 years for the Holiday's It's a tradition for us and a must for our Thanksgiving and Christmas Dinner. The first thing my family will ask me, when I walk in the door "Did you bring the Yams!

Steps:
- 1. Topping: In Medium Bowl add flour, brown sugar, oaks, cinnamon. Mix all ingredients. Cut up butter in 1/2 inch cubes add to mixture and using a pastry blender or fork cut into dry ingredients until it resembles a crumb topping.
- 2. Wash cranberries, let drain and set aside.
- 3. Drain yams and put in a 2-quart casserole dish, add cranberries to yams in casserole dish, add 1 cup of crumb topping and toss lightly until yams and cranberries are coated with crumb mixture and cranberries are evenly distributed in dish.
- 4. Add the remaining crumb topping evenly on top of mixture in casserole dish.
- 5. Bake at 350 degrees for 40-50 minutes until bubbling and cranberries are completing cooked.
- 6. Remove from oven and Sprinkle 1-1/2 cups mini marshmallow on top cooked yams and return to oven and bake until marshmallows are lightly golden brown, watch carefully! you do not want to burn marshmallows.
- 7. Remove from Oven, let cool 5-minutes and Serve.
- 8. Note: Can be made the day before, after adding the remaining crumb topping. Cover with plastic wrap and put in refrigerator. Take out about 20 minutes before baking.

Steps:
- 1. Drain peaches, reserving juice.
- 2. Dissolve cornstarch in 1/4 cup peach juice and set aside.
- 3. In skillet, heat remaining peach juice, liquid brown sugar, cranberry sauce, cinnamon and butter. When butter has melted, add cornstarch mixture. Stir over medium heat until mixture thickens.
- 4. Add yams to skillet; cover and cook 10 minutes.
- 5. Stir in peaches and cook 5 minutes or until heated through.

- 1. Pre heat oven to 375* use a 9 inch cake pan or, I like to use a medium size roasting pan when having to double the recipe....
- 2. In large mixing bowl (drained) yams use a mixer and cream add milk and melted butter and cream together, add vanilla, beaten eggs, salt and cream together....Till nice and smooth...
- 3. Pour mixture into pan that you are using to bake in...

Topping: In medium size mixing bowl add Pecan pieces, brown sugar, flour coconut and crumble together by hand, when mixture is well mixed, gradually pour in melted butter and mix by hand...when everything is mixed well, sprinkle over top of the yam mixture and pat slightly over the top of mixture.....

- Combine and mix all of the yam ingredients place in a lightly greased baking dish. Combine topping ingredients and sprinkle over yam mixture. Bake 375 degrees for about 30 minutes, then place under broiler to brown top. Watch carefully
HOLIDAY BASTED YAMS
This is a old family recipe from South Dakota. Butter and brown sugar makes this a Holiday only dish. I double this recipe for Christmas dinner.

- Melt butter and add both sugars and water(I drain the canned pineapple and use it for part of the water measurement). Boil. While waiting for first 4 ingedients to boil, arrange drained pineapple and drained canned yams into casserole pan. Pour boiled mix over pineapple and yams. Bake uncovered for 45 mins. Baste 2-3 times.
