ICEBOX FRUITCAKE
This old-fashioned Icebox Fruitcake recipe is a traditional holiday dessert that's overflowing with decadent ingredients, like Graham cracker crumbs, pecans, maraschino cherries, and mini marshmallows.

Steps:
- Finely crush graham crackers and coarsely chop pecans and drained cherries.
- Combine all ingredients in a large mixing bowl and mix well.
- Turn out into a lightly buttered 9x13 baking dish and press flat into the pan with your hands. Chill for at least 6 hours.

ICEBOX FRUITCAKE
Steps:
- Lightly spray a 9x13-inch baking dish with nonstick cooking spray. Crush the graham crackers using a food processor or add them to a large ziptop bag and crush using a rolling pin. Coarsely chop the cherries.
- Combine crushed graham crackers, pecans, cherries, raisins, coconut, marshmallows, and sweetened condensed milk in a large bowl and mix well. Add reserved cherry juice by the tablespoonful until the mixture comes together, but isn't too soft. I usually add between 2 and 3 tablespoons.
- Turn out into the prepared dish and press flat with your hands. Cover and chill at least 6 hours, then cut into bars. Keep refrigerated.
REFRIGERATOR FRUITCAKE
This is a recipe that my mom made every Christmas. It's a great alternative to baked fruit cakes and stays moist. Never dry. Tastes very much like the Claxton's fruitcakes that you can buy in the grocery store. I wanted to post this to save and found it as a newspaper clipping in my grandmother's recipe box. My grandmother had pinned it to a card with her cost estimate to make. I don't know how old the recipe is but given that a 1 pd of pecans was listed as 1.05, I assume it's pretty old! Total cost for cake was listed as $3.04. Hope you enjoy! It's been a holiday favorite in our family for years!

- Preheat oven to 300°. Combine fruit and nuts. In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.

CHOCOLATE MOCHA REFRIGERATOR CAKE

- Line an 8-by-4-by-3-inch loaf pan with plastic wrap, leaving enough overhang in each direction to completely cover the top. Line the bottom and sides of the pan with chocolate wafers and set aside.
- Sprinkle the gelatin over 1/4 cup cold water in a small saucepan (or even a metal measuring cup) and "bloom" at room temperature for 5 minutes. Then gently warm over low heat until just melted. (Do not allow to boil.) Remove from the heat and stir in the coffee liqueur, espresso powder and vanilla.
- Whip the heavy cream, powdered sugar and salt in the bowl of a stand mixer on high until soft peaks form, about 1 minute 30 seconds. Reduce the speed to low and drizzle in the cooled gelatin mixture. Increase the speed back to high and whip to stiff peaks, about 30 seconds more.
- Fill the prepared pan 3/4 of the way with the whipped cream mixture. Insert the remaining chocolate wafers vertically (edge first) into the whipped cream to create 4 rows of about 12 cookies each, keeping each cookie slightly separated by cream.
- Spread the remaining whipped cream evenly over the cookie rows. Fold the excess plastic wrap over the cake and refrigerate for at least 8 hours and up to 24.
- To serve: Pull back the plastic wrap and invert the cake onto a serving dish. Remove the plastic wrap, slice and serve immediately.
