Number Of Ingredients 11

1 cup soy sauce
1 cup dry sherry or chicken broth
2 tablespoons ground mustard
2 teaspoons ground ginger
2 teaspoons dried thyme
4 garlic cloves, minced
1 boneless rolled pork loin roast (4 to 5 pounds)
CURRANT SAUCE:
1 jar (12 ounces) red currant jelly
2 tablespoons dry sherry or chicken broth
1 tablespoon soy sauce

Steps:

  • In a bowl, combine the soy sauce, sherry or broth, mustard, ginger, thyme and garlic; mix well. Pour 1 cup marinade into a large resealable plastic bag; add the roast. Seal bag and turn to coat. Refrigerate for 3 hours or overnight, turning occasionally. Cover and refrigerate the remaining marinade for basting., Drain and discard marinade. Place the roast on a rack in a roasting pan. Bake at 325° for 1-3/4 to 2-1/4 hours or until a thermometer reads 160°, pouring the reserved marinade over meat during the last hour of baking. Baste occasionally. Let stand for 10 minutes before slicing. , Meanwhile, in a small saucepan, combine the sauce ingredients. Cook and stir for 4-5 minutes or until the jelly is melted. Serve with pork.

2 tablespoons soy sauce
1 tablespoon olive oil
4 garlic cloves, minced
1 teaspoon dried thyme
1 boneless pork loin roast (about 4 pounds)
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups white wine

Steps:

  • In a small bowl, combine the mustard, soy sauce, oil, garlic and thyme; rub over roast. Place in a large resealable bag. seal bag; refrigerate overnight, turning occasionally., Place roast on a rack in a shallow roasting pan. Sprinkle with salt and pepper; pour wine into the pan. 1-1/2 teaspoons kosher salt
1 teaspoon dried thyme
1 teaspoon dried rosemary, crushed
1 teaspoon pepper
1/2 teaspoon rubbed sage
1 pork crown roast (12 ribs and about 8 pounds)
Optional: Apples, fresh rosemary sprigs and dried sage leaves

Steps:

  • Preheat oven to 350°. Mix the first 6 ingredients; rub over roast. Place on a rack in a large shallow roasting pan. Cover rib ends with foil. 1 boneless whole pork loin roast (5 pounds)
1 tablespoon minced fresh gingerroot
2 garlic cloves, minced
1 teaspoon rubbed sage
1/4 teaspoon salt
1/3 cup apple jelly
1/2 teaspoon hot pepper sauce
2 medium carrots, sliced
2 medium onions, sliced
1-1/2 cups water, divided
1 teaspoon browning sauce, optional

Steps:

  • Place pork roast on a rack in a shallow roasting pan. Combine the ginger, garlic, sage and salt; rub over meat. Bake, uncovered, at 350° for 1 hour., Combine jelly and pepper sauce; brush over roast. Arrange carrots and onions around roast. Pour 1/2 cup water into pan.
