CHRISTMAS MINCEMEAT SQUARES

Because of the whole wheat flour, I've always felt these squares were somewhat healthy. Maybe I'm kidding myself, but I definitely can say they're delicious, and perfect for any holiday goodie platter.

Number Of Ingredients 6

1 cup whole wheat flour (or use all-purpose)
2 cups oats (not instant)
1 cup brown sugar
1 teaspoon baking soda
3/4 cup melted butter (or margarine, but butter is best)
2 cups mincemeat

Steps:

  • Preheat oven to 375F; grease a 13x9 pan and set aside.
  • In a large mixing bowl, combine the flour, oats, sugar and baking soda.
  • Stir in melted butter and mix together until mixture appears crumbly.
  • Firmly pat half the crumb mixture into prepared pan, then cover evenly with mincemeat.
  • Sprinkle remaining crumb mixture over mincemeat and pat lightly.
  • Bake for 20 to 25 minutes or until squares appear golden brown.
  • Cool before cutting into squares.

1 teaspoon salt
1/2 cup brown sugar, packed
3 tablespoons shortening, melted
1 cup mincemeat
1 egg, beaten
1/2 cup milk

Steps:

  • Preheat oven to 350 degrees F, & grease a 9 1/2" loaf pan.
  • Whisk together flour, baking powder & salt.
  • In another bowl, mix together sugar, melted shortening, mincemeat, egg & milk.
  • Add to flour mixture, stirring only until dry ingredients are moistened.
  • Bake 1 hour.
  • Let stand for 24 hours before cutting!

2 eggs
3/4 cup white sugar
1/4 cup melted butter
3/4 cup milk
1 1/4 cups jarred mincemeat
2 1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup powdered sugar
1 tablespoon cream
1/4 teaspoon cinnamon
1/8 teaspoon ginger

Steps:

  • Beat the eggs, sugar and butter together.
  • Stir in the milk and mincemeat.
  • Combine the next 4 ingredients together and whisk.
  • Pour it all at once into the liquid ingredients and stir completely. Pour into a well greased loaf pan.
  • Bake at 350 degree for 50-60 minutes, until the loaf tests done.
  • Remove and cool for 10 minutes, then remove the loaf from the pan and continue cooling on a wire cooling rack.
  • Combine glaze ingredients and drizzle over the loaf once it's completely cooled.

¼ cup vegetable oil
1 tablespoon orange zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 5 x 3 inch loaf pan.

1 1/4 cups buttermilk
1 egg beaten
2 cups flour
1/2 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°. Grease and flour two 7 1/2 x 3 3/4 x 2 1/4 -inch loaf pans.Into a medium bowl, crumble mincemeat finely. Stir in buttermilk and egg set aside.In a large bowl, mix flour, sugar, baking soda and salt. Stir in mincemeat mixture until flour is moistened. Spread evenly in pans.Bake for 60 to 65 minutes or until a wooden pick inserted in center comes out clean. Remove from pans and cool on wire racks. I wanted to start a new tradition with my family. I love mincemeat, and this cake is a way to share that enjoyment with my friends and family. Since I was a working mother, I also wanted to create a dessert that was convenient. I am now asked for the recipe every time I make it.

1 lemon cake mix
1 cup mincemeat
1/2 cup finely chopped almonds
1 cup sugar
1/2 cup butter
1/2 cup prepared eggnog
1 teaspoon rum or
1/2 teaspoon rum extract
Dash of nutmeg

Steps:

  • Heat oven to 350 deg. Spray oven-safe 11-inch skillet or a 9 X 13 cake pan with nonstick cooking spray.
  • Prepare cake mix according to package directions, except reduce the water by 1/4 cup. After mixing, fold in the mincemeat and nuts.
  • Bake 35 to 40 min. Cake is done with toothpick inserted in center of cake comes out clean.
  • Let cool 5 min. Run a knife around edge of pan and invert onto serving plate.
  • Sauce: Combine butter, sugar and eggnog in small saucepan. Bring to a boil. Boil for 2 min. Remove from heat stir in rum or rum extract and a dash of nutmeg. Serve warm.

2 1/2 teaspoons baking powder

3 tablespoons vegetable shortening, melted and cooled
1 teaspoon vanilla extract
1 1/3 cups prepared mincemeat
1/2 cup chopped walnuts
powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9x5-inch loaf pan.
  • In a large bowl, sift together flour, sugar, baking powder, and salt.
  • In a medium bowl, cream eggs, vegetable shortening, and vanilla extract until light and fluffy.
  • Fold in mincemeat and walnuts.
  • Pour egg mixture into flour mixture.
  • stir until dry ingredients are moistened.
  • Pour batter into prepared loaf pan and bake 55 to 60 minutes or until a toothpick inserted in center comes out clean.

Cannot believe this worked! Was in a lazy mood and had a partial jar of mincemeat that needed using along with a craving for bread, so I just dump some things together in a bowl to my surprise it became a nutty mincemeat bread.

1/4 cup Splenda brown sugar blend
1 1/2 cups mincemeat
1/2 cup Egg Beaters egg substitute
1/2-3/4 cup walnuts, chopped

  • Preheat oven to 350 degrees F. and spray a 9 1/2" loaf pan with Pam cooking spray.
  • Mix all ingredients in a bowl stirring only until dry ingredients are moistened. (will be very stiff).

I made this cake one year for Christmas when I was short of time and wasn't able to make a pie. It was a big hit. It is a very moist cake best served with just a dusting of icing sugar for garnish.

3 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 cup butter or 3/4 cup margarine, softened
4 teaspoons grated orange rind
1 1/2 teaspoons vanilla
1 cup granulated sugar
3 eggs
1 (750 ml) jar mincemeat
3/4 cup milk
1 cup chopped nuts
icing sugar, for dusting

Steps:

  • Stir the flour, baking powder, baking soda and salt together; set aside.
  • Cream the butter, orange rind and vanilla in a large bowl with an electric mixer until light.
  • Beat in the sugar.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in the mincemeat.
  • Add the dry ingredients to the creamed mixture alternately with the milk, beginning and ending with the dry ingredients.
  • Stir in the nuts.
  • Turn the batter into either a greased 12-cup Bundt or tube pan or a greased 9" x 13" cake pan.
  • Preheat the oven to 350 degrees F.
  • If using a Bundt pan, bake for 55 to 60 minutes or until done.
  • If using a cake pan, bake for 45 to 50 minutes.
  • In either case, cool in the pan for 10 minutes.
  • Remove from the pan and cool completely.
  • Dust with icing sugar before serving.

3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon cinnamon
¾ cup white sugar
1 egg
1 cup apple cider
⅓ cup vegetable oil
1 apple, peeled, cored and chopped
1 (28 ounce) jar prepared mincemeat
¾ cup confectioners' sugar
¼ teaspoon cinnamon
1 tablespoon apple cider, or as needed

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line 18 muffin cups with paper liners, and set aside.
  • In a large bowl, stir together the flour, baking powder, 1 teaspoon cinnamon, and white sugar, mixing until thoroughly blended.
  • In another bowl, whisk together the egg, 1 cup of apple cider, and vegetable oil. Stir in the apple and mincemeat. Pour the mincemeat mixture into the flour mixture, and stir until just combined.
  • Fill the lined muffin cups 3/4 full, and bake in the preheated oven until the muffins are risen and browned, and a toothpick inserted into the middle of a muffin comes out clean, about 20 minutes. Let cool for about 10 minutes.
  • Make a glaze by stirring together the confectioners' sugar, 1/4 teaspoon of cinnamon, and about 1 tablespoon of apple cider, or a little more as needed to make the glaze workable. Spread the glaze on the warm muffins.
