This is a simple and quick way to enjoy a Thanksgiving favorite! Canned yams or sweet potatoes may be used.

1 (29 ounce) can sweet potatoes
¼ cup butter, cut into pieces
½ cup brown sugar
1 ½ cups miniature marshmallows

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place sweet potatoes in a medium baking dish. Distribute butter pieces evenly over the sweet potatoes. Sprinkle with brown sugar. Layer with miniature marshmallows.
  • Bake in the preheated oven 25 minutes, or until sweet potatoes are tender and marshmallows have melted.

Candied yams are a classic Southern side dish, especially when it comes to Thanksgiving. Even though Mama makes the same sweet potato casserole every year, she won't be offended if you bring these candied yams once she tries them. Lightly spiced and oh-so-sweet, these candied yams will become a mainstay in your Thanksgiving recipe lineup. Cinnamon, nutmeg, and vanilla combine with sweet potatoes for the most comforting holiday dish you can serve. One of the best parts about this side dish is that it only has 20 minutes of hands-on time, and you can assemble the dish up to 3 days in advance. Make the recipe through step 3, store it covered in the refrigerator, then bake it Thanksgiving Day. With all the other dishes you have to worry about on Thanksgiving, these candied yams will be a breeze. We recommend serving them straight from the oven while the syrup is still hot.

4 pounds sweet potatoes, peeled and cut into 1⁄2-inch-thick rounds
1/2 cup salted butter
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1/4 cup heavy cream
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F. Layer sweet potato slices in a lightly greased 13- x 9-inch baking dish.
  • Melt butter in a small saucepan over medium. Add sugars, stirring until well combined. Stir in cream; cook, stirring often, just until mixture comes to a simmer, 5 to 7 minutes. Remove from heat; stir in vanilla extract, cinnamon, salt, and nutmeg.
  • Pour sugar mixture evenly over sweet potatoes, and cover with lightly greased aluminum foil.
  • Bake, covered, in preheated oven, about 40 minutes. Uncover and gently stir potato mixture. Bake, uncovered, until potatoes are tender, 25 to 30 more minutes. Transfer potatoes to a serving bowl with a slotted spoon; pour syrup over potatoes. Serve immediately.

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Aunt Ruby.

Number Of Ingredients 7

1 can(s) (16 oz) sliced cling peaches
1 Tbsp cornstarch
1/3 c liquid brown sugar
1 can(s) (8 oz) whole cranberry sauce
1/2 tsp cinnamon
2 Tbsp butter
2 can(s) (17 oz size) yams, drained

Steps:

  • 1. Drain peaches, reserving juice.
  • 2. Dissolve cornstarch in 1/4 cup peach juice and set aside.
  • 3. In skillet, heat remaining peach juice, liquid brown sugar, cranberry sauce, cinnamon and butter. When butter has melted, add cornstarch mixture. Stir over medium heat until mixture thickens.
  • 4. Add yams to skillet; cover and cook 10 minutes.
  • 5. Stir in peaches and cook 5 minutes or until heated through.

I came up with the idea of combining the yams and apples when I had all four generations for dinner one Thanksgiving. Everyone loved it from GreatGrandmas on down to my (then) 2 year old granddaughter.

Number Of Ingredients 8

3 large yams or 3 large sweet potatoes
2 apples, i use granny smith
4 -5 tablespoons orange juice
1/2 cup raisins, that have been soaked in
1 tablespoon pure vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Add yams to a pot of boiling water, cover and after allowing water to return to a boil, cook for 30-35 minutes.
  • Rinse in cold water.
  • Remove the skins from the yams.
  • Cut into 1/4 inch slices.
  • Quarter the apples and cut into 1/4 inch slices.
  • Spray a large rectangular or oblong pan with cooking spray of your choice.
  • Layer the yams and the apples.
  • Pour the orange juice over both layers.
  • Dot with butter or margarine if desired.
  • Top with the raisins.
  • Sprinkle with cinnamon and nutmeg.
  • You can adjust these amounts to your own personal preference.
  • Bake at 350º for 30-35 minutes.
