- Add hot water to a med-large tempered bowl along with the orange juice and jello flavoring packets and disssolve thoroughly.
- Chill until syrupy (30-40 mins)in a 9 x 9 or 9 X 13 dish (the only slight difference will be the depth of salad).

- Grind rind and cranberries in food processor until chopped ever so thinly (I remember when we chopped all by hand!).

LAYERED HOLIDAY JELLO SALAD
This is a variation on the traditional cranberry/pineapple salad; red and green layers with a cream cheese layer in between. My mom makes this at Christmas and/or Thanksgiving and I can't stop eating it. Would be good for potlucks, too. Yum!

LOW CARB HOLIDAY CRUNCHY CRANBERRY JELLO SALAD
This is a tasty recipe to serve at Thanksgiving or Christmas dinner. It's also an optimal addition if you have someone either on a low carb diet or who is Diabetic in attendance. The combination of flavors is awesome ~

Steps:
- Heat 1 1/2 cups water, Splenda, almond extract and cranberries in saucepan over medium heat with cover on pan until most of the cranberries burst open. Stir frequently. It will thicken as you go.
- While this is simmering, chop celery, apples and pecans (you can buy the pecans already chopped but it costs more).
- After the berries are ready, remove from heat and stir in the two packages of Black Cherry Jello. Return to heat and add in 3/4 cup water and package of Raspberry Jello. Let reach a boil then remove from heat.
- Pour into glass pan or I prefer one of those fancy glass bowls on a pedestal for better presentation and refrigerate until set. Can start in freezer if you are in a hurry, but regular setting time in the fridge is overnight. Serve and enjoy!

Steps:
- First things first. Put your pineapple and oranges in the frig for at least 12 hours. Also, make your Dream Whip ahead of time and let it get cold. Open your Mandarin Oranges and cut each segment in half. Drain the juice from the oranges and pineapple thoroughly. If you do it right, you should get the 2 cups you need for the jello. Drain the liquid from your cottage cheese using a strainer. Heat up 2 cups water and pour it in a very large bowl. Stir in jello mix and then cold liquid from the fruit. Let it set in the frig about 2-3 hours. Remove from frig and mix in the other ingredients in this order. First the fruit. Then you add the mini marshmallows and Dream Whip. Let it set a little more. Then you add the cottage cheese. Mix well between each addition. Let it set overnight. Enjoy.
