HOLIDAY CRANBERRY GELATIN SALAD
This light, delicious holiday salad is very popular in my family and has been requested every year since I first brought it to Christmas Eve dinner. The refreshing, not-too-sweet flavor is a perfect pairing with just about any meat. -Jennifer Mastnick, Hartville, Ohio

- In a small bowl, dissolve gelatin in 1 cup boiling water. In another bowl, combine cranberry sauce and remaining water; add gelatin mixture and lemon juice. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until firm, about 1 hour., In a large bowl, beat cream until stiff peaks form. In another bowl, beat cream cheese until smooth. Stir in 1/2 cup whipped cream; fold in remaining whipped cream. Spread over gelatin mixture; sprinkle with pecans. Refrigerate for at least 2 hours.

HOLIDAY GREEN GELATIN SALAD
This salad has been a family favorite for over four generations, requested every Thanksgiving and Christmas. It is smooth and creamy with the crunch of pecans, and light green in color. It has a very unique flavor, and goes very quickly at our home. Any left over crushed pineapple and cottage cheese make a great snack for kids.

- In a large measuring pitcher, mix reserved pineapple juice and enough water to yield 2 cups. Pour into a pot and bring to a boil. Add the lime and lemon gelatin mixes and stir until completely dissolved.
- Stir the mayonnaise and evaporated milk together in a mixing bowl. Stir in the gelatin mixture until completely blended. Mix in the crushed pineapple, cottage cheese, and pecans. Pour the gelatin mixture into a serving bowl. Refrigerate at least 4 hours or overnight.

- In a large bowl, dissolve the gelatins in boiling water. Drain pineapple, reserving juice in a 2-cup measuring cup; add enough cold water to measure 2 cups. Stir into gelatin mixture. , Place the pineapple, cranberry sauce and orange in a food processor; cover and pulse until blended. Stir into gelatin mixture. Transfer to an 8-cup ring mold coated with cooking spray. Refrigerate until firm. , In a small bowl, combine whipped topping and sour cream. Unmold gelatin; serve with topping.

HOLIDAY SIX-LAYER GELATIN SALAD
This is a great dessert. It's fresh and light and not heavy after a big meal. You can add your own twist, I use sugar free jello but feel free to use the regular if you'd like.

- 1. In a bowl, dissolve one package of lime gelatin in 3/4 cup boiling water; stir in 3/4 cup cold water. Refrigerate until slightly thickened. In a small mixing bowl, beat cream until slightly thickened. Add sugar; beat until soft peaks form. Fold in one third of the whipped cream into the lime gelatin. Spoon into a 4 qt bowl Refrigerate until firm. Refrigerate remaining whipped cream.
- 2. In a bowl, dissolve one package of orange gelatin in 3/4 cup boiling water; stir in 3/4 cup cold water. Refrigerate until slightly thickened. Fold in mandarin oranges. Spoon over creamy lime layer. Refrigerate until firm.
- 3. In a bowl, dissolve lemon gelatin in 3/4 cup boiling water; stir in 2/3 cup cold water. Refrigerate until slightly thickened. Fold in one third of the whipped cream. Spoon over orange layer. Refrigerate until firm.
- 4. In a bowl, dissolve remaining package of lime gelatin in 3/4 cup boiling water; stir in 3/4 cup cold water. Refrigerate until slightly thickened. Fold in pineapple. Spoon over creamy lemon layer. Refrigerate until firm.
- 5. In a bowl, dissolve remaining package of orange gelatin in 3/4 cup boiling water; stir in 3/4 cup cold water. Refrigerate until slightly thickened. Fold in remaining whipped cream. Spoon over lime layer. Refrigerate until firm.
- 6. In a bowl, dissolve strawberry gelatin in remaining boiling water; stir in remaining cold water. Refrigerate until slightly thickened. Fold in bananas. Spoon over creamy orange layer. You can garnish the top with sliced bananas and pipe fresh whipped cream for decoration.

This pretty Gelatin Salad is a favorite with my family and friends. When I miss a holiday meal and not have this, every one is very sad. Besides being delicious, its very pretty on the table.

Steps:
- 1. In a large bowl dissolve the gelatin with the hot water. Stir until dissolved. Add the can of crushed pineapple and can of whole berry cranberry sauce, stir thoroughly. Refrigerate for 30 minutes. Now add the red grapes and blueberries and stir to mix ingredients.
- 2. Pour into a serving bowl and refrigerate until set. Or pour into a large mold. I prefer a pretty glass bowl.
