Whenever I serve this make-ahead, easy pinwheel recipe, they disappear fast. When a friend at the office shared them with me, I knew in one bite I'd be taking her Mexican pinwheels home for the holidays. -Diane Martin, Brown Deer, Wisconsin

1 package (8 ounces) cream cheese, softened
1/2 cup sour cream
1/4 cup picante sauce
2 tablespoons taco seasoning
Dash garlic powder
1 can (4-1/2 ounces) chopped ripe olives, drained
1 can (4 ounces) chopped green chiles
1 cup finely shredded cheddar cheese
1/2 cup thinly sliced green onions
8 flour tortillas (10 inches)
Salsa

Steps:

  • In a small bowl, beat cream cheese, sour cream, picante sauce, taco seasoning and garlic powder until smooth. Stir in olives, chiles, cheese and onions. Spread about 1/2 cup on each tortilla. , Roll up jelly-roll style; wrap. Refrigerate for 2 hours or overnight. Slice into 1-in. pieces. Serve with salsa.

MEXICAN FIESTA DIP

1 medium to large can refried beans
3 avocados, chopped
2 teaspoons lemon juice
Salt, pepper, to taste
1 large container sour cream
1 chipotle in adobo, chopped
1 bunch green onions, chopped
2 large tomatoes, seeded and chopped
1 to 2 cans sliced black olives
6 ounces grated cheddar cheese for garnish
1 package tortilla chips

Steps:

  • Take a large platter and spread out a layer of refried beans on the bottom. Combine the avocados, lemon juice, salt and pepper and spread the mixture on top of the beans. Combine the sour cream and chipotle. Spread that mixture on top of the avocado mixture. Chop and combine the green onions, tomatoes and olives. Spread the mixture in a ring around the outside of the platter. Garnish the top with cheddar cheese and serve with tortilla chips.

Fashion a delightful Christmas star on top of cheese spread with two types of tasty pesto. It goes from start to finish in 25 minutes.

2 containers (6.5 ounces each) garlic-and-herb spreadable cheese
3/4 cup basil pesto
1/2 cup sun-dried tomato pesto or spread
2 tablespoons chopped fresh parsley
1/2 cup marinated piquanté peppers from deli
80 assorted holiday crackers

Steps:

  • Spread garlic-and-herb spreadable cheese on flat plate, 9 to 10 inches in diameter, to within 1/2 inch of edge.
  • Carefully spoon and slightly spread basil pesto into 3 separate star points; carefully spoon and slightly spread sun-dried tomato pesto into 2 separate star points, ending at edge of plate and leaving about a 3-inch circle uncovered in center. Sprinkle pesto star with parsley. Place peppers in center. Serve with crackers.

Number Of Ingredients 13

- 1 lb. ground beef
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 1 garlic clove, minced
- 1 tsp. salt
- 1 tbsp chili powder
- 1/2 tsp. ground cumin
- 2 tbsp. ketchup
- 1 can refried beans, 16 oz
- liquid hot pepper seasoning to taste
- 2 oz. sharp natural cheddar cheese, grated, about 1/2 cup
- sliced stuffed olives, optional
- ritz crackers

Steps:

  • Brown beef with next three ingredients; drain fat. Add next four ingredients. Mash in beans. Heat, stirring frequently. Add liquid hot pepper seasoning to taste. Garnish with cheese and if desired, sliced olives. Serve warm with Ritz crackers. Makes about 3 1/2 cups

EASY FIESTA CHRISTMAS TREE

Yellow or green bell pepper
1 piece (2 inches) green onion
1/4 cup Old El Paso™ Thick 'n Chunky salsa
1/4 cup apricot preserves or orange marmalade
1 teaspoon chopped fresh cilantro
Assorted tortilla chips, crackers or sliced vegetables, if desired

Steps:

  • Cut block of cream cheese diagonally in half; arrange on serving plate with shallow rim to form triangle.
  • Cut star out of bell pepper with star-shaped cookie cutter; place at top of tree. Place green onion piece at base of tree.
  • Mix salsa and preserves; spoon over cream cheese. Sprinkle with cilantro. Serve with tortilla chips.
