Steps:
- Whisk together the soy sauce, hoisin sauce, chili sauce, lemon juice, ginger, garlic, and olive oil in a 9x13 inch baking dish. Place the salmon fillets into the marinade, and turn to evenly coat. Cover the dish with plastic wrap, and marinate in the refrigerator for 30 minutes.
- Preheat an oven to 350 degrees F (175 degrees C). Remove and discard the plastic wrap from the salmon, use a spoon to scoop up the marinade that has collected in the bottom of the baking dish, and drizzle it over the salmon fillets.
- Bake in the preheated oven until the salmon flakes easily with a fork, about 30 minutes.

GRILLED SALMON STEAK WITH HOISIN BBQ SAUCE
Steps:
- Heat the oil in a small saucepan over medium heat. Add the shallots and garlic and cook until soft. Stir in the hoisin, ketchup, honey, sambal oelek, sesame seeds, soy sauce and fish sauce and cook for 5 minutes. Remove from the heat, stir in the vinegar and season with salt and pepper, to taste.
- Heat the grill to high. Brush the salmon on both sides with oil and season with salt and pepper, to taste. Grill until golden brown and slightly charred on both sides. Cook to medium-well doneness, brushing with the sauce every minute or so. Remove the salmon from grill to a plate and brush with more sauce. Transfer the fish to a serving platter and let rest for 5 minutes. Garnish with cilantro and serve.

- 1. Mix together all the seasonings except for the balsamic glaze. Stir together and then brush it on both sides of the salmon.
- 2. Grill salmon, at 350 degrees, 5 to 7 minutes on each side. Depending upon thickness.
- 3. After you plate the salmon, drizzle the balsamic glaze over the top for an even more yummy taste or a squeeze of lime.

- Preheat the oven to 450 degrees F. Position a rack in the upper third of the oven. In a small bowl, combine the hoisin, soy sauce, wine, honey and garlic.
- Line a baking sheet with foil and spray it lightly with cooking spray; set aside.
- Place the salmon fillets on the baking sheet, and spoon the sauce over the fillets, trying to keep as much on each fillet as possible.
- Bake for 15 to 18 minutes, depending on the thickness of your fillets, until just cooked through.
- *Note: If you want extra sauce for after the fish is done baking (because the sauce in the oven sort of caramelizes), then I recommend doubling the sauce and reserving half of it for pouring over the fish after it is done baking. - Cedar Plank: Take an untreated cedar plank, about 16x8 inches, weighted down and soaked in water for at least an hour, preferably longer.
- Mix first 5 ingredients in a small bowl for glaze. Place salmon, skin side down, on large cutting board and remove any pin bones.
- Cut salmon in half lengthwise but not through to the skin. Then cross crosswise to make 6 - 8 servings, but again, do not cut through to the skin.
- Brush glaze evenly over salmon flesh and in between individual servings. Season evenly with salt and pepper.
- Preheat grill. Place soaked plank over direct medium heat and close lid. After a few minutes when the plank begins to crackle and smoke begins to escape from grill, place salmon, skin side down, in centre of plank.
- Close lid and let salmon cook until lightly browned, about 15 - 25. (Hint: move plank over indirect heating will prevent flareups, but cooking may be longer).
- Remove plank from grill using tongs.
- Serve.

- Thin hoisin with a little soy sauce and flavor with a few drops of sesame oil.
- Stir in chili paste, if desired.

- In medium bowl, stir together plums, ginger, and vinegar. Refrigerate until ready to serve.
- Prepare grill for cooking: If using charcoal grill, open vents on bottom, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 4 to 5 seconds. If using gas grill, preheat burners on high with hood closed 10 minutes, then turn down to moderately high.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat 1/2 of the oil in a skillet over medium heat. Cook and stir 1/2 of the garlic and ginger until softened, 3 to 5 minutes. Remove from heat and cool for 10 minutes.
- Grease a baking pan with the remaining oil. Season salmon with salt and pepper and place in the baking pan. Rub cooled garlic and ginger over the salmon.

- Rub the marinade all over salmon and marinate for 2 hours.
- Preheat grill to medium high.
- Place marinated salmon skin side down on grill and cook for 5 to 6 minutes until skin is crisp and easy to lift from grill.
- Turn fillets over and baste liberally with honey hoisin BBQ glaze.
- Continue to cook for another 4 to 5 minutes for medium doneness.
- Turn fillets over and baste meat side liberally with the glaze before removing from grill.

FRESH SALMON BURGERS WITH HOISIN AND GINGER (LOW FAT)
Although you can make these in a frypan, they are definitely better grilled, I make these on both my indoor grill as well as outdoor grill, make certain to oil the grill well before cooking them. Serve these on toasted buns with mayo and lettuce and sprinkle extra hoisin sauce over them. You should get about 6-8 patties with 2 pounds of fresh salmon. You can double the amounts. Plan ahead the salmon burgers have to chill for a minimum of 3-4 hours before cooking.

SPICE-CRUSTED SALMON STEAKS WITH HOISIN-ORANGE GLAZE

- Combine dry spices for the rub, lghtly coat both side of each salmon steak with the sesame oil, and then dust with the spice rub and press with fingers to evenly distribute. Chill while preparing marinade. Combine marinade/glaze ingredients in small saucepan and bring to a boil, reducing slightly to thicken. Remove from heat and bring to room temperature. When cooled, brush both sides of fish and reserve the rest for brushing during cooking and serving as a sauce. Broil the fish for 8-10 minutes total, depending on thickness, turning once, and brushing it with the marinade at a couple of intervals. Heat the remaining marinade to use as a sauce for serving. A garnish of slivered scallions makes a nice finishing touch.
