My dad use to make this dish when I was growing up and I just loved it. Of course his was a little different from mine but just as good. He would refer to it as Rainbow Stew also. Every time I make it I am reminded of him and remember all the times watching him cook growing up. It is called Hobo Stew because you can add anything you can get your hands on to it and it tastes great. It is very pantry friendly since you can pretty much use what you have vegetable wise (or what you like.) You can also add different meats. I have made it with ground longhorn, turkey, and deer. I have also used chunks of meat rather than ground. It is a great way to used up meat you have stashed in the freezer but can't think of what to cook with it (or just not enough of it the meat for it to stand-alone.) Tonight I actually used some cubed steaks I had in the freezer. I just chopped them up. If you use actual chunks of meat I would cut them into 1-inch chunks, brown in the oil before adding the vegetables. You can also play around with the herbs, adding combos you like or fresh herbs you have on hand. I just happened to have some fresh greek oregano my mother-in-law gave me . Just have fun and play around with it. The recipe is very versatile and makes a large pot of food. It is budget friendly too since you can use what is on sale.

1/4 cup olive oil
1 onion, diced
4 carrots, diced
2 stalks celery, diced
1 lb ground beef
2 tablespoons tomato paste
4 garlic cloves, minced
1/4 cup flour
2 (14 ounce) cans diced tomatoes, with their juices
2 (14 ounce) cans vegetable broth
4 cups beef broth
2 tablespoons Worcestershire sauce
2 bay leaves
4 large russet potatoes, peeled and cut into 1-inch chunks (roughly 2 pounds)
2 (14 ounce) cans green beans, drained
2 (14 ounce) cans black-eyed peas, drained
2 (14 ounce) cans hominy, drained
1/4 cup fresh oregano, minced (or 1 tablespoon dried)
salt and pepper

Steps:

  • Heat oil in a large pot over medium-high heat. Add in the onion, carrots, and celery. Cook until the onion is translucent.
  • Add the meat and cook until no longer pink. Toss in the tomato paste and cook for roughly two minutes. The color of the paste will deepen. Put in the garlic and cook 30 seconds, until garlic is fragrant.
  • Add the flour and stir to coat the meat and vegetables. Allow to cook for 2 or 3 minutes to cook out the raw flour taste.
  • Stir in the tomatoes with their juices. Add both kinds of broth, Worcestershire sauce, bay leaves, and then carefully place your potatoes inches Stir in the rest of the vegetables (green beans, hominy, and black-eyes peas.).
  • Bring to a boil, then cover, reduce heat and simmer hard (or low boil) until the potatoes are done (you will be able to easily slide a fork in.) It could take up to an hour depending on how small you cut the potatoes. Stir occasionally.
  • When potatoes are done remove the bay leaves, stir in the oregano, and salt and pepper to taste.

1 (15 ounce) can whole peeled tomatoes
3 cups uncooked elbow macaroni
1 cup water
salt and pepper to taste

Steps:

  • Heat a cast iron Dutch oven over a campfire, and brown the ground beef. Drain off the excess grease, then pour in the mixed vegetables, tomatoes, macaroni, and water. Season with salt and pepper to taste. Cover, and cook until the macaroni is tender, and the stew has reached desired thickness.

1 -2 lb roast, cut into bite size cubes
1 -2 lb hamburger
1 (8 ounce) can tomato sauce
1 (16 ounce) can pinto beans
1 (16 ounce) can green beans (drained)
2 (16 ounce) cans corn
1 (16 ounce) can chicken broth
1 medium onion, sliced
4 medium potatoes, cut in half length wise then sliced about 1/4 inch thick
4 carrots, sliced bite size
1 tablespoon Worcestershire sauce
1 teaspoon basil
1/2 teaspoon rosemary
1/2 teaspoon pepper
1/2 teaspoon bay leaf
1/4 teaspoon celery salt
1/2 teaspoon salt
1/4 cup instant minced onion

Steps:

  • Add all of your vegtables, beans, tomato sauce, broth and your worcestershire sauce.
  • Stir everything.
  • Add all of your seasoning stir.
  • Place your meat on top put your lid on and cook it on high for 5 hours, or low for 9 hours (these are guesses! Cook till done is what I do).

This is something my grandma used to make when i was little and i loved it!! It is sausage with tomato soup cabbage and vegs it is amazing! You can basically put what ever veg. you like in it i usually put potatoes, green beans, corn, cabbage, sausage, and tomato soup.

2 -3 cups water

Steps:

  • chop up the cabbage put it in a big pot filled with water and let it boil until its done.
  • cut up the potatoes and put it in with the cabbage.
  • fry up the sausage.
  • once the cabbage and potatoes are done strain but keep about 2-3 cups water.
  • then add the strained sausage and the rest of the ingrediants.
  • The longer you let it simmer the better it tastes! For a personal prefrence in my own bowl i usually add a little hot sauce.

  • Pat ground beef into hamburger patties.
  • Slice potatoes about 1/4" thick.
  • Chop up carrot, onion, and bell pepper.
  • Line pan with aluminum foil.
  • Add hamburger patties.
  • Scatter potatoes, carrots, bell pepper, and onions.
  • Cover pan with another piece of aluminum foil and slit the top.
  • Let cook until patties and potatoes are done.

As a child I had to earn my cooking badge for girlscouts. My mother helped me prepare this stew she called hobo stew. It is such an easy dish to make and I have added some ingredients to it. It is also best cooked over a camp fire for added flavor.

MEAT BALLS
1 lb ground beef
1 tsp garlic powder
1 egg
1 c panko bread crumbs
salt and pepper to taste
STEW
1 pt butter beans
1 pt whole kerrnel corn
5 medium potatoes
1 medium sweet onion
1 medium bell pepper
1 tsp garlic powder
1 Tbsp extra virgin olive oil
1 family size can of campbells tomato soup
1 12 oz. can of swanson beef broth
1 c water
salt and pepper to taste

Steps:

  • 1. Meat balls: In a large mixing bowl place the ground beef. Add in 1 cup Panko bread crumbs, salt and pepper to taste with 1 teaspoon of garlic powder. Beat the egg and add in too. Mix all well and make beef balls. I got about 22 from mine.
  • 2. In a large skillet pour in the olive oil and place the meat balls in and cook slowly till done and just leave in the pan for now.
  • 3. In a cast iron dutch oven pour in olive oil about 1 teaspoon and cut up the sweet onion and bell pepper, place in the hot oil and sautee' slowly until tender. Sprinkle the 1 teaspoon of garlic, salt and pepper to taste stir good
  • 4. Wash and cut up the potatoes in small bite size bites. Add to the pot and let simmer with the onions and bell peppers about 5 minutes until a little brown.
  • 5. Pour into the pot a can of Swanson Beef Broth, soup and can of water. Add the butter beans and corn Cover and let cook about 20 minutes over medium heat unitl the vegies are tender.
  • 6. Add the cooked meat balls into the mixture the last 25 minutes. Cover and continue to cook over medium heat. Stir often to prevent sticking to the bottom of pot and bunrning.
  • 7. SPECIAL NOTE: I USED FRESH VEGETABLES IN MY STEW . YOU MAY USE FROZEN OR CAN VEGETABLES IF YOU LIKE. IF USING CAN VEGIES YOU MAY NEED TO CUT DOWN ON THE COOKING TIME.

CREAM OF POTATO SOUP IS THE KEY HERE BUT YOU CAN YOU ANY CREAM SOUP,
1 can(s) large can of cream of potato soup
1 pkg polish kielbasa slice 1/4 inch thick
2 small yellow summer squash slice and diced
2 small zucchini sliced and diced
1 small onion sliced and diced
1 small green pepper sliced and diced
3 large baking potatoes peeled and diced
2 small celery stalks sliced and diced
1 large tomatoes sliced and diced
black pepper,salt, italian seasoning,basil,thyme,
2 clove garlic diced
1 Tbsp worcestershire sauce

Steps:

  • 1. DICE EVERYTHING UP EXCEPT THE KIELBASA. THIS YOU WILL NEED TO SLICE INTO 1/4 INCH THICK PIECES. YOU CAN USE ANY MEAT. MY OTHER GO TO MEAT SOURCE IS CHICKEN BREAST. OR ITALIAN SAUSAGE SLICE JUST LIKE THE KIELBASA. JUST PARTIALLY COOK,COOL AND SLICE. (DO NOT OVER COOK THE SAUSAGE AS IT WILL FINISH COOKING WITH THE VEGGIES)
  • 2. IN A LARGE MIXING BOWL COMBINE ALL THE VEGGIES AND MEAT. (WANT IT VEGETARIAN? SKIP THE MEAT AND SLICE THE SQUASH INTO 1/4 INCH THICK SLICES.)
  • 3. NOW MIX HALF THE SOUP OVER EVERYTHING IN THE BOWL. (SAVE THE OTHER HAVE OF THE SOUP) DO NOT ADD WATER TO THE SOUP. THE VEGGIES WILL ADD ENOUGH LIQUID WHEN COOKING.
  • 4. NOW DEPENDING IF YOU ARE FEEDING FOUR PERSONS OR SIX YOU WILL CUT TWO SQUARES OF FOIL FOR EACH PERSON. YOU WANT THEM LARGE ENOUGH TO FOLD OVER AND MAKE A PILLOW. ABOUT 8 INCHES LONG WORKS WELL.
  • 5. TAKE ONE SQUARE AND SPRAY IT WITH NONE STICK SPRAY. IN CENTER OF FOIL PLACE A LARGE LADLE FULL OF THE VEGGIE MEAT MIXTURE. NOW SPOON TWO TABLESPOONS OF THE REMAINING SOUP OVER THIS.
  • 6. TAKE THE OPPOSITE CORNERS UP TOGETHER IN THE MIDDLE ABOVE THE VEGGIES. FOLD DOWN BUT NOT TO TIGHT. YOU WILL NEED TO LEAVE A LITTLE SPACE FOR HEAT EXPANSION. FOLLOW WITH THE OPPOSITE CORNERS TILL YOU HAVE A SMALL PILLOW. WITH SECOND SQUARE OF FOIL. TAKE THE PILLOW AND PLACE IN CENTER FOLD SIDE DOWN ON SECOND SHEET. THIS TIME TAKE THE EDGES AND BRING TOGETHER FOLD DOWN AGAIN NOT TO TIGHT BUT YOU WANT IT TO SEAL. REPEAT WITH OTHER SIDE THEN PLACE FOLD SIDE DOWN ON COOKIE SHEET.
  • 7. REPEAT THE PROCESS TILL YOU HAVE THE NEEDED PORTIONS TO FEED YOUR FAMILY. PLACE COOKIE SHEET. BAKE IN OVEN AT 350 FOR 30 MINUTES. It has a bit of a spicy kick so you could use plain diced tomatoes instead of tomatoes with chiles if you prefer a milder taste. I'm posting it here for safe keeping.

1 steak (about 1 1/2 lbs.) cut into bite sizes
1 onion (medium size)
1 pkg. carrots
1 green pepper
4 potatoes (large sized, peel)
2 pkgs. onion soup mix
2 cloves garlic (chopped)
1 head broccoli and/or cauliflower
2-3 Tbsp flour or corn starch
1 tsp pepper
water

Steps:

  • You will need 1 large kettle with a tight cover (dutch oven size) and very thick bottom. Cut up steak, onion, carrots, green pepper, potatoes, and broccoli and/or cauliflower. Heat kettle over fire pit with about 1/4 cup canola oil in the bottom. Add steak, garlic, and onion, to kettle and brown well. Add the rest of the ingredients, EXCEPT flour, and stir well to mix. Add water to cover all ingredients. Put cover on tight and boil until you can smell the veggies, (usually about 15 minutes). Carefully open cover and test carrots for tenderness. In a cup, mix the flour/cornstarch with enough water to form a very thick mixture. Add this to the kettle and stir to form the gravy. Serve with toast. (Be careful, stew will be HOT for a very long time).

This was my mom's recipe and the whole family loved it!

2 lbs - hamburger (raw)
1 lb - sliced potatoes (raw)
1 small sliced onion (raw)
2 large can(s) cream of chicken soup
A little cup(s) milk
1-2 bag(s) frozen mixed vegetables
1 bag(s) frozen meatballs instead of hamburger

Steps:

  • Crumble a layer of hamburger in the bottom of a13*9 cake pan. Put a layer of potatoes and onions over the hamburger.
  • In a large mixing bowl combine the cream of chicken soup and milk. Stir until combined. Add the frozen vegetables. Stir.
  • Pour half of the soup mixture over the potatoes and onions. Keep layering all of the ingredients until gone
  • Cover with foil. Bake at 350° until potatoes and hamburger are done. Stir halfway through baking.
