1 storebought prepared pizza dough
1/4 lb sliced deli ham, cut into 1-inch pieces
1/4 lb sliced deli salami, cut into 1-inch pieces
1 cup chopped plum tomato (2 to 3 tomatoes)
1/4 cup Italian dressing
6 ounces provolone cheese
1 teaspoon italian seasoning

Steps:

  • Preheat the oven to 450°.
  • Bake pizza dough for 7 to 9 minutes, just until golden. Remove from the oven and set aside.
  • In a medium-sized bowl, combine the ham, salami, tomatoes, and dressing; mix well. Spoon the mixture evenly over the prepared crust and top with the cheese.
  • Sprinkle with the Italian Seasoning and bake 8 to 10 minutes, or until the crust is crisp and brown.

1 pound ground beef
1/2 cup chopped onion
1 can (15 ounces) pizza sauce
1/4 cup chopped ripe olives
2 teaspoons dried basil
1 teaspoon dried oregano
8 hoagie or submarine sandwich buns or French rolls
2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in pizza sauce, olives, basil and oregano. Cook for 10 minutes or until heated through. , Cut 1/4 in. off the top of each roll; set aside. Carefully hollow out bottom of roll, leaving a 1/4-in. shell (discard removed bread or save for another use). Sprinkle 2 tablespoons cheese inside each shell. Fill each with about 1/2 cup meat mixture. Sprinkle with remaining cheese, gently pressing down to flatten. Replace bread tops. , Individually wrap four sandwiches tightly in foil; freeze for up to 3 months. Place remaining sandwiches on a baking sheet. Bake at 375° for 15 minutes or until heated through. , To use frozen hoagies: Place foil wrapped hoagies on baking sheets. Bake at 375° for 60-70 minutes or until heated through.

2 (1-pound) bags store-bought pizza dough, cut into halves
Olive oil, for drizzling
Sea salt
Olive Tapenade, recipe follows
Sun-dried Tomato Chutney, recipe follows
Mortadella, for topping
Soppressata, for topping
Salami, for topping
Prosciutto, for topping
1/2 cup chopped dried black mission figs
1/2 cup chicken stock
1 tablespoon extra-virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon fresh rosemary leaves
1 tablespoon fresh thyme leaves
1/4 teaspoon cayenne pepper
1/2 cup pitted kalamata olives
1 tablespoon chopped garlic
1 teaspoon cracked black pepper
1/2 tablespoon sea salt
1/2 cup sun-dried tomatoes in oil, minced
1 tablespoon chopped garlic
1 teaspoon sugar
1 tablespoon white balsamic vinegar
1 tablespoon crushed red pepper flakes
1/2 tablespoon sea salt
1 teaspoon black pepper

Steps:

  • Punch down and stretch pizza dough. Drizzle olive oil onto both sides and sprinkle lightly with sea salt. Rub in well, but do not saturate with oil. Grill pizza dough for about 1 1/2 to 2 minutes on each side.
  • Spread tapenade or chutney thinly onto crust. Lay a few slices of cured meat on top (in any order or amount) and serve at room temperature.
  • In a medium saucepan, heat figs in chicken stock until warm and hydrated. Drain when ready.
  • In a food processor, pulse together all of the remaining ingredients, including the figs. Place in a bowl and set aside until ready to assemble the pizza.

6 hoagie rolls
1 lb bulk italian sausage
1 pkg pepperoni
1 jar(s) mushrooms
2 jar(s) pizza sauce ( i use ragu pizza sauce)
1 pkg shredded mozzarella or provolone cheese
1 pinch italian seasoning

Steps:

  • 1. crumble and brown italian sausage. drain and set aside.
  • 2. slice hoagie rolls in half. spread the pizza sauce on both halves, then on bottom layer add pepperoni. now add a some sausage and mushrooms. add another layer of pepperoni and top with cheese. sprinkle cheese with a little italian seasoning add top half of bun and bake in a 350 degree preheated oven for about 15 mins. Until the cheese melts and bun is a little toasted.

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA

This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

3 cups all-purpose flour or 3 cups bread flour, more for dusting
1/4 teaspoon instant yeast
1 1/2 teaspoons salt
1 1/4 cups water
1 vine-ripened tomatoes (about 5 oz.) or 1 heirloom tomato (about 5 oz.)
1 pinch salt
1/4 teaspoon extra virgin olive oil
5 tablespoons tomato sauce
2 ounces buffalo mozzarella (about 1/4 ball)
basil leaves
1 tablespoon extra virgin olive oil
salt

Steps:

  • To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
  • Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
  • Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
  • To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
  • To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

Delicious open faced hoagie that I created for my gluten and wheat intolerant husband. I added my Creamy Asparagus Soup (homemade and gluten free, of course) for a great, healthy lunch anyone would enjoy. Using the right gluten free bread product is the key to making this delicious dish.

1 loaf baguette, UDI Gluten Free Baguette
12 ounces tomato paste, gluten free
1/4 cup italian seasoning
1/4 cup extra virgin olive oil
1 tablespoon salt
1/2 cup asiago cheese, grated
1 cup pimento stuffed olive, finely chopped
1/2 cup kalamata olive, pitted & finely chopped
1/2 cup roasted red pepper, drained & sliced
1 cup four cheese blend

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Cut baguette into half lengthwise. Combine tomato paste, Italian Seasoning, olive oil and salt, mix well. Spread mixture liberally on cut side of bread. Sprinkle Asiago cheese on top of paste mixture, then top with olives and red peppers. Cover with cheese blend.
  • Place on baking sheet; bake for 12 minutes, or until cheese is completely melted. Cut into thirds; serve warm.
