1/4 cup all-purpose flour
1/4 cup 2% milk
1 egg, lightly beaten
1-1/2 teaspoons plus 2 tablespoons sugar, divided
1/8 teaspoon salt
1-1/2 teaspoons plus 2 tablespoons butter, divided
3 cups chopped peeled apples
1/8 teaspoon ground cinnamon

Steps:

  • In a small bowl, whisk the flour, milk, egg, 1-1/2 teaspoons sugar and salt until smooth. Place 1-1/2 teaspoons butter in a 7-in. pie plate; place in a 400° oven for 2-3 minutes or until melted. Pour batter into pan. Bake for 18-20 minutes or until the edges are lightly browned. , Meanwhile, in a saucepan, melt the remaining butter over medium heat. Saute the apples, cinnamon and remaining sugar until apples are tender. Spoon into pancake. Serve immediately.

1 medium apple
1 teaspoon lemon juice
2 tablespoons sugar
1 teaspoon cinnamon
1/2 cup plus 2 tablespoons all-purpose flour
1/2 cup plus 2 tablespoons milk
3 eggs or one carton egg substitute
5 tablespoons butter
powdered sugar

Steps:

  • Preheat oven to 425°. Peel and slice apple into 1/4-inch slices and place in a small mixing bowl. Toss with lemon juice, sugar, and cinnamon. In large mixing bowl, combine flour and milk, and mix until just incorporated. Add eggs and mix. Batter should be slightly lumpy. In skillet, heat butter until foamy. Remove from heat and quickly add batter. Arrange apples in pinwheel design and place in oven. Bake 25 minutes, or until pancake is puffed up and golden brown. Sprinkle with powdered sugar and serve with warm apple sauce, syrup, or jam.
