HIGH FIBER BREAD
This dense, chewy bread has a good dose of fiber and is great toasted in the morning with my oatmeal.

Steps:
- Place water, molasses, yeast, wheat flour, ground flax seed, bread flour, oat bran, rolled oats, amaranth seeds, and salt in the pan of a bread machine in the order recommended by manufacturer. Select dough cycle; press start and allow machine to run complete dough cycle.
- Turn dough onto a lightly floured surface. Form dough into 2 loaves and place on baking stone. Cover loaves with a damp cloth and let rise until doubled in volume, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven until top is golden brown, 20 to 25 minutes. Slide loaf onto a work surface and gently tap bottom of loaf. If it sounds hollow, bread is done.

LOW-FAT, HIGH-FIBER YUMMY BANANA BREAD
I make this each and every time we have bananas that are over-ripe. I toast slices to have along with my coffee for breakfast. I also use toasted slices to make peanut butter sandwiches for the kids' lunches. Who says if it's good for you it can't taste good too? The original recipe, which I have adapted quite a bit, came from Nick Malgieri's book "How to Bake."

Steps:
- Preheat oven to 375 degrees F, set rack at middle. Grease and flour one 8 1/2 x 4 1/2 x 2 3/4 - inch loaf pan.
- In a mixing bowl, combine both flours and oat bran, baking powder and soda, allspice and cinnamon and stir well to mix.
- In a separate bowl, whisk together the sugar, egg whites, applesauce, oil, vanilla and bananas.
- Fold the flour mix into the wet mixture, be careful not to overmix.
- Scrape the batter into the prepared pan. Bake for 45-55 minutes, until well risen and a skewer into the thickest part of the bread comes out clean.
- Cool on a rack 5 minutes, then unmold and finish cooling.
- Freezes well.
HIGH FIBER BRAN BREAD
This recipe come from a leader at weight watchers who also uses a bread machine. One slice is 2 points. Makes a 2 pound loaf.

BANANA BREAD - LOW FAT, HIGH FIBER
I started with the Flax Banana Bread recipe on the Red Mill site, then tweaked it a bit to remove fat and add some more whole grains. This is a hearty-tasting, moist and delicious banana bread that even my young kids enjoy!

- Preheat oven to 350 degrees.
- Grease a 8-1/2 x 4-1/2-inch bread pan; set aside.
- Mix together dry ingredients (flour through salt) in a bowl.
- In a separate bowl, beat together eggs and yogurt.
- Add dry ingredients and mashed bananas alternately to wet ingredients, stirring until dry ingredients are completely incorporated and moist.
- Pour into prepared pan.
- Bake 55-60 minutes, or until golden and tester inserted in center comes out clean.
- Cool for 15 minutes in pan; remove from pan and cool completely.

HIGH FIBER BREAD MACHINE BREAD

Steps:
- 1) Place first 4 ingredients in bottom of bread machine mixing container 2) Place remaining ingredients on top. Place yeast in last. 3) Set bread machine on "dough" cycle. 4) Once dough is completed, remove from container, punch down, and form into loaves or rolls, or some of both. It is your choice. This recipe can make one medium loaf and a dozen and a half rolls. 5) Set in a warm place and allow to rise until double in bulk. 6) Bake in 370 degree oven for 10 minutes, then turn oven down to 350 and bake until done. Approxiate 30-40 minutes. Bread when it is done should have a hollow sound when tapped and golden brown top. 7) Remove to cooling rack. Baste top of bread or rolls lightly with olive oil margarine to ensure soft crust.
HIGH FIBER & PROTEIN GF BREAD

- First- whisk together your dry ingredients and set aside. Pour the liquid ingredients into the bread machine pan. Gently add the dry ingredients on top. Put in bread machine. Cook! The bread will last up to 4 days on the counter, obviously longer if frozen.

- Soak bran in prune juice and buttermilk.
- Cream sugar and butter throughly then add the egg and beat well.
- Add bran mixture.
- Sift the flour with the salt and baking soda and add to the mixture.
- Now add the nuts, if you like.
- Stir only until flour disappears.
- Bake in a greased loaf pan (9 1/2" by 5 1/2") in a 325 degree oven for an hour and 20 minutes.
