1 (18 1/4-ounce) box devil's food cake mix
1 (15-ounce) can 100-percent pure pumpkin
Fresh berries, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour cake mix into a large bowl and whisk to remove any lumps. Add pumpkin and stir until completely smooth and uniform.
  • Cook's Note: Do not add any other ingredients that may be mentioned on the cake mix box, like eggs, oil, or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do not do this!
  • Place batter into a 12-cup muffin pan lined with foil baking cups and/or sprayed with nonstick spray. Place pan in the oven and bake until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.
  • Allow to cool slightly and then serve. Garnish with fresh berries, if using. Enjoy!

I recently purchased the new Hungry Girl Cookbook and this is one of the recipes that sounds really good to me that I would definitely like to try. Here is what the book says: "It may seem odd to use nothing but pumpkin and cake mix for this recipe, but it works perfectly well. Hope you love it!"

  • Preheat the oven to 400 degrees.
  • Prepare a 12-cup muffin pan with nonstick spray.

1 cup cream-style corn, canned
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 cup fat free egg substitute (like Egg Beaters)
1/2 cup nonfat sour cream
1/2 cup reduced-fat cheddar cheese, shredded
1/4 cup scallion, chopped
2 tablespoons artificial sweetener (i. e. Splenda granulated)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon hot sauce

Steps:

  • Preheat oven to 375 degrees.
  • Combine flour, cornmeal, Splenda, baking powder and salt in a large bowl.
  • In a separate small bowl, mix together all other ingredients -- then add the contents of the small bowl to the large one, and stir until well mixed.
  • Spray a 12-cup muffin pan with nonstick spray or line it with baking cups. Evenly distribute muffin batter among the cups.
  • Bake in the oven for 15 - 20 minutes (until muffins are firm and a light golden brown). Allow to cool and then enjoy!

1 1/2 cups zucchini, shredded, about 1 large zucchini
1 cup whole wheat flour
1/2 cup all-purpose flour
2/3 cup Splenda granular
1/3 cup brown sugar, not packed
1/2 cup liquid egg substitute, like Egg Beaters Original
1/2 cup unsweetened applesauce
3 tablespoons whipped light butter or 3 tablespoons Brummel and Brown spread
3 tablespoons walnuts, crushed divided
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon nutmeg
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine both types of flour, Splenda, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  • In a separate medium bowl, mix together the zucchini, egg substitute, applesauce, butter, and vanilla extract. Slowly add this mixture to the first bowl, and stir until thoroughly blended. Mix half the crushed walnuts (1 1/2 tbsp.) into the batter.
  • Line 9 cups of a 12-cup muffin pan with baking liners and/or spray with nonstick spray. Evenly distribute batter among the 9 cups. Top each cup with a sprinkling of the remaining 1 1/2 tablespoons crushed walnuts.
  • Bake in the oven for 20 - 25 minutes, until a toothpick poked into the center of a muffin comes out clean. Let cool and then enjoy!

3/4 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semi-sweet chocolate chips
1 teaspoon vanilla
1/4 cup vegetable oil (canola is good)
2/3 cup sugar
1 large egg
1 egg white

Steps:

  • Preheat oven to 325°F.
  • Lightly spray a 9-inch square pan with oil.
  • In small bowl, combine flour, baking soda, and salt; set aside.
  • In large bowl, combine chocolate chips and vanilla.
  • In saucepan, combine oil, sugar, and 2 Tbsp of water. Bring the mixture to a boil. Pour hot mixture over the chips and stir well. Add egg and egg white, and stir. Mix in the flour mixture. Pour the batter into the pan and spread evenly.
  • Bake for 20- 25 minutes. Make sure not to overcook! These should be slightly underdone for nice, chewy brownies. Cut while still warm from the oven into 1-inch squares (or diamonds), and cool before removing from pan.

I recently purchased the new Hungry Girl Cookbook and this is one of the first recipes that I am going to try. Here is what the book says: "Not to sound like a cheesy commercial, but this soup is so thick, it "eats like a meal." It's almost too easy to prepare a super-sized batch, and it tastes even better the next day! (HG Tip: Freeze leftovers in individual servings for microwavable, super-filling, guilt-free snacks)." UPDATE NOTE 9/7/2008: I made this recipe today for dinner but I made just a couple changes: 1) I used 16 ounces Perdue Ground Chicken (hubby wanted more meat!) and 2) I cooked it all in my crockpot on Low for about 8 hours. Hubby and I had it for dinner and it was awesome! I posted a picture also. The change to the ground chicken changed the points value to 4 points per generous 1 cup serving. I hope you all enjoy as much as we did!

1 (16 ounce) package corn kernels, frozen, sweet corn
2 (15 ounce) cans pinto beans, rinsed & drained
1 (15 ounce) can black beans, rinsed & drained
3 (14 1/2 ounce) cans no-salt-added diced tomatoes
1 (14 1/2 ounce) can Italian-style diced tomatoes
1 (1 1/4 ounce) envelope taco seasoning mix
1 (1 1/4 ounce) envelope ranch dressing mix
1/4 cup onion, minced
salt, to taste
black pepper, to taste

Steps:

  • Pour the tomatoes and corn into a large pot. Add remaining ingredients and stir thoroughly. Bring to a boil.
  • Reduce heat to low and let simmer for 15 minutes.
  • Remove from heat and allow soup to sit for at least 5 minutes. Add salt and pepper to taste.
