8 ounces cornbread mix, i.e. Betty Crocker
1/4 cup liquid egg substitute (like Egg Beaters)
3 tablespoons unsweetened applesauce
12 ounces frozen soy crumbles (like Morningstar Farms Meal Starters Grillers Recipe Crumbles or Boca Meatless Ground Burger**)
1/2 cup sweet corn, canned, drained
1/2 cup black beans, canned
1/3 cup onion, chopped
2 tablespoons taco sauce
1 tablespoon taco seasoning
1/2 teaspoon ground cumin

Steps:

  • Preheat oven to 350 degrees.
  • Mix together cornbread mix, egg substitute and applesauce. Set aside.
  • In a large pan sprayed lightly with nonstick spray, begin to cook onions and soy crumbles over medium heat. Once crumbles have thawed, add in taco seasoning, cumin and 1/4 cup of water. Stirring occasionally, continue to cook until the water has absorbed. Then add the taco sauce, corn, and black beans, and mix well.
  • Pour mixture into a large round casserole dish sprayed lightly with nonstick spray, and then evenly cover with the cornbread topping mixture.
  • Bake in the oven for 20 minutes, or until top is golden brown and firm.

1 pound extra lean ground beef or ground turkey, I used Trader Joe's extra lean ground beef (96/4)
2 cups onions, chopped
1 tablespoon fresh garlic, minced
1 (15 oz) can black beans, rinsed and drained
1 cup fresh or frozen corn kernels
1 can (14 1/2-oz) diced & fire roasted tomatoes (with green chiles) or 1 can of diced tomatoes, in juice
1/3 cup reduced-fat cheddar cheese, shredded
2 tablespoons chili powder
1/2 teaspoon salt
Fresh ground black pepper
Ingredients for Corn Bread Topping
1 package (1 lb.) Marie Callender's Low Fat Southwestern Corn Bread Mix, see shopping tip

Steps:

  • 1. Preheat oven to 375 degrees. Coat a 9″ 2-quart casserole dish or oven proof 9″glass bowl with cook spray and set aside. 2. For the tamale filling: In a large nonstick pan over medium heat, add the ground beef, onions and garlic. Cook stirring often, breaking up beef until meat is browned. Pour into a colander to drain the fat. Add back to pan. 3. Stir in beans, corn, tomatoes, cheese, chili powder. salt and pepper. Cook for 5 minutes. Remove from heat. 4. To make corn bread topping: Add to a mixing bowl 1½ cups water and corn bread mix. Mix by hand until lumps disappear. 5.. Pour the tamale mixture into the casserole dish. Spread evenly. Top with corn bread batter and spread evenly. 6. Bake for 30-35 minutes until a toothpick inserted into the corn bread comes out clean. 7. Cool a bit and cut into 8 slices. This dish will keep for several days in the refrigerator and freezes great. Makes 8 servings Food Fact It's argued as to where tamale pie originated. It's a toss-up whether it came from Mexico, Texas or California. Early recipes called for pork or beef cubed or hashed but today it's usually made with ground beef. 2 cups diced poblano peppers
1 teaspoon salt
1 (16 ounce) jar salsa
½ teaspoon dried oregano
1 teaspoon ground dried chipotle pepper
2 (8.5 ounce) boxes dry corn muffin mix (such as Jiffy®)
2 eggs
⅔ cup milk, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided
8 ounces frozen corn, thawed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Cook and stir ground beef in a Dutch oven over medium-high heat until meat starts to brown and release juices, about 5 minutes.
  • Reduce heat to medium and stir in poblano peppers, salt, salsa, oregano, and chipotle powder; cook and stir until seasoned beef is crumbly and no longer pink, about 10 minutes.
  • Mix one package of corn muffin mix in a large bowl with 1 egg and 1/3 cup of milk. Whisk to combine. In a separate large bowl, mix the second package of corn muffin mix with 1 egg, 1/3 cup of milk and half the Cheddar and Monterey Jack cheeses.
  • Spread the prepared corn muffin mixture without cheese into the prepared baking dish. Sprinkle corn over the muffin mix, followed by remaining half of the cheeses, then the beef mixture.
  • Spoon the corn muffin mix with cheese on top of the beef and carefully spread over the top with a fork, leaving about half an inch from the edges of the pan.
  • Bake in the preheated oven for 50-60 minutes, until golden brown.

I love tamale pie but as a solo chef rarely make it. Found this recipe to be the perfect solution and it will easily double for larger families. The tamale topping on this is light and fluffy and complements the hearty beef filling underneath.

5 ounces extra lean ground beef
1/4 cup onion, small dice
2 tablespoons green peppers, small dice
1 small garlic clove, minced
1/2 cup diced tomato, canned with juice
1/2 cup frozen corn
1 teaspoon chili powder
3 tablespoons yellow cornmeal (divided)
1 pinch salt
1/2 cup nonfat milk or 1/2 cup low-fat milk
1 egg white
2 tablespoons soy cheddar cheese (optional) or 2 tablespoons cheddar cheese, shredded (optional)

Steps:

  • Pre-heat oven to 350 degrees.
  • In a non stick skillet, brown the ground beef and break it apart using a spoon. Add the onions and green peppers and garlic. Once the meat is cooked, drain off any excess fat. Alternately, transfer the contents of the pan to a plate lined with two paper towels, wipe skillet and return beef to pan.
  • After draining excess fat using either method, add the tomatoes, corn, chili powder and 1/2 tablespoon of cornmeal. Bring the mixture to a simmer. Transfer to a one quart casserole.
  • Place the milk, cornmeal and salt in a small saucepan and bring to a light boil. Reduce to a simmer and stir frequently until thickened. Alternately, you can cook the ingredients in a microwave and cook for 2 and 1/2 minutes, stirring every 30 seconds.
  • In a small bowl beat the egg whites by hand until foamy. Slowly add in the cornmeal, stirring to make sure it does not scramble the egg. Add the soy cheese/cheese if using.
  • Top the casserole filling with the cornmeal mush.
  • Bake for 25 to 30 minutes the top should be puffed and lightly browned.

1 onion, chopped
3 tablespoons tomato paste
2 ounces sliced black olives
2 tablespoons chili powder
1 cup reduced-fat sharp cheddar cheese, shredded
14 ounces diced tomatoes with jalapenos
11 ounces Mexican-style corn, drained
16 ounces prepared polenta

Steps:

  • In a large nonstick skillet over medium heat, brown the beef and onion; drain.
  • Add the tomatoes with juice, tomato paste, corn, olives, and chili powder.
  • Simmer for 5 minutes, then scrape into a 2 1/2-qt baking dish.

1 1/4 teaspoons vanilla extract
4 teaspoons granulated sugar

Steps:

  • Preheat oven to 325 degrees. In a medium pot, combine milk, half & half, and brown sugar. Bring to medium heat on the stove. Stir and cook until the sugar has dissolved and mixture is hot. Stir in the powdered creamer, blending well. Remove from heat.
  • In a large bowl, mix the egg substitute and vanilla extract together. Gradually whisk in the hot milk mixture. Set four 4-ounce baking ramekins or custard cups in a deep baking dish. Evenly distribute the custard mixture into the cups.
  • Carefully pour hot water into the baking dish, around the cups, being careful not to splash any water into the custard (or on yourself!).
