EASY NO-COOK CHOCOLATE ICE CREAM
This rich and creamy chocolate ice cream recipe has just five ingredients, no eggs, and doesn't require cooking, so it quickly comes together.

- Gather the ingredients.
- Whisk together the milk, cocoa powder, and sugar. Whisk until the sugar and cocoa completely dissolve.
- In a large bowl, beat the heavy cream until it forms stiff peaks. Fold the whipped cream along with the vanilla extract into the cocoa powder mixture.
- Refrigerate the mixture for at least 30 minutes so it is completely cold. This will help it freeze faster, improve the texture, and allow the cocoa powder to become fully hydrated by the milk and cream.
- Give the ice cream base one more gentle stir and freeze according to the directions of your ice cream maker -about 1 1/2 to 2 hours.
- Store your ice cream in an airtight plastic container in the back of the freezer. This will help preserve the flavor and texture of the finished ice cream. You can serve the chocolate ice cream right from the ice cream maker, but it will have the texture of soft serve. Freezing for an hour before serving will create a firmer texture.

CHOCOLATE SAUCE (THROW AWAY YOUR HERSHEY'S!)
This syrup is concentrated stuff, use 1-2 tsp in 8 oz of milk. It's ultra-chocolatey, with a deep cocoa flavor, and not too sweet. This syrup is thick and smooth with a shine ...a chocolate syrup for adults. Use Dutch process cocoa powder if you want the finished product to have the beautifully deep color and flavor to which all good chocolate syrups should aspire.

- In heavy-bottomed 2 quart pot, combine sugar, cocoa powder, and salt. Whisk to combine. Gradually stir in the water. Stir until well combined.
- Set over medium heat; stirring constantly until mixture comes to a boil Boil three minutes, stirring frequently with whisk and reducing heat if syrup threatens to boil over. Remove from heat; pour into heatproof 4 cup measure or pitcher. Cool briefly.
- Cool on counter (uncovered) until room temperature, strain through fine strainer into container of 2-1/2 cup capacity. Stir in vanilla.
- Store, covered, in refrigerator.

- Combine sugar, flour and salt in medium saucepan, add 1 cup light cream.
- Cook over medium heat, stirring constantly, until mixture boils, boil and stir 1 minute.
- Remove from heat.
- Temper eggs by gradually stirring a small amount of cooked mixture into eggs, blend well.
- Return egg mixture to cooked mixture in saucepan, stir until well blended.
- Add chocolate bar pieces, stir until melted.
- (If necessary, place over low heat until melted.).
- Pour into large mixing bowl.
- Add vanilla, 3 cups light cream and the heavy or whipping cream, blend well.
- Chill.
- Freeze in ice cream freezer according to manufacturer's directions.
