HERBED ROAST LEG OF LAMB WITH ROASTED ONIONS AND POTATOES
Steps:
- In a small bowl whisk together the mustard, the garlic paste, the chopped rosemary, the chopped thyme, the soy sauce, the wine, and salt and pepper to taste, add 2 tablespoons of the oil in a stream, whisking, and whisk the mixture until it is combined well. Brush the lamb generously on all sides with some of the mustard mixture, reserving the remaining mustard mixture, and let it marinate in a lightly oiled roasting pan, covered and chilled, for at least 6 hours or overnight.
- Let the lamb come to room temperature and brush it with the reserved mustard mixture. In a bowl toss the onions with 1 tablespoon of the remaining oil, add the onions and the carrots to the pan, and roast them with the lamb in the middle of a preheated 450°F. oven for 15 minutes. In the bowl toss the potatoes with the remaining 1 tablespoon oil and add them to the pan. Reduce the heat to 350°F. and roast the lamb and vegetables, stirring the vegetables occasionally, for 1 hour and 15 minutes, or until a meat thermometer registers 140°F. for medium-rare meat. Transfer the lamb to a large platter and let it stand for 20 minutes. Transfer the onions and the potatoes with a slotted spoon to a serving dish, leaving the carrots in the pan, and keep them warm, covered.
- Remove the string from the lamb, spoon some of the potatoes and onions around the lamb, and garnish the lamb with the thyme and rosemary sprigs. Serve the lamb, carved, with the gravy.
- Make the gravy:
- Pour off the fat from the pan, add the wine, and deglaze the pan over moderately high heat, scraping up the brown bits. Boil the mixture until it is reduced by half and strain it through a sieve into a saucepan, pressing hard on the carrots. Add the broth and bring the mixture to a boil. In a small bowl knead together the butter and the flour until the mixture is combined well and add the mixture to the gravy a little at a time, whisking. Add any juices that have accumulated on the platter and salt and pepper to taste and simmer the gravy, whisking occasionally, for 3 minutes, or until it is thickened.

- Process the parsley, garlic, rosemary,thyme and sage until minced.
- Reserve 2 tbsp.
- Put 1 cup of chicken stock in a sauce pan add the herb mixture (reserve the 2 tbsp) and bring to a simmer.
- Stir in the potatoes, heat to boil,covered, cook until they are tender but still firm about 15 min.
- let them rest to cool, drain if there is any stock left, and reserve it.
- Spoon half the potatoes into the chicken sew the cavity shut.
- Rub the reserved herb mixture all over the chicken.
- Arrange remaining potatoes around the chicken in the baking dish.
- Spoon some of the remaining broth over the chicken.
- Roast in a 375F oven for 1 hour or until the juices run clear-internal temp 180f degrees.
- Baste the chicken every 15 minutes with the stock.

- heat oven to 350 degrees. combine garlic, salt, pepper and rosemary; press into surface of beef roast. place roast on rack in shallow roasting pan. insert meat thermometer until bulb is centered in thickest part. do not add water or cover. roast 2 1/4 to 2 1/2 hours for medium rare to medium. remove roast when meat thermometer registers 140 degrees for medium rare, 155 degrees for medium. let roast stand 20 minutes. temperature will continue to rise about 5 degrees; 145 degrees for medium rare, 160 degrees for medium.
- add potatoes after first 1 1/2 of cooking.
- for sauce: in small saucepan, combine sauce ingredients. cook over medium heat 5 minutes or until bubbly, stirring occasionally.
- carve roast into slices; serve with potatoes and sauce. makes 8-10 servings.

- Scrub small red potatoes, cut into 4 or more pieces and place in dish in microwave for 5 mins on high. Then sprinkle wih oil and herbs of choice and bake in over at 400 for 20 mins until crispy.

- Rosemary Roast Lamb - Using a small sharp knife, make incisions all over the lamb and insert slivers of garlic.
- Combine half the pure olive oil and mustard together to make a paste and use to coat lamb.
- Break rosemary into small sprigs and insert int he incisions so they poke out and place in a roasting pan, sprinkle with pepper and pour 1 cup wine into the base of the pan and roast at 200C for 1 1/4 hours, basting occasionally and adding more wine if needed.
- Remove lamb and rest on a board covered with foil for 15 minutes before carving.
- Meanwhile, deglaze pan with remaining wine and stir in remaining oil and any juices from carved lamb, season and serve over lamb slices.
- Herbed Potatoes - Cut potatoes into large chunks and bring to the boil in a saucepan of salted water and cook for 10 minutes or until just starting to become tender and drain an allow to dry.
- Scrape the potatoes with a fork to rough up the surface.
- Heat the olive oil in a roasting pan at 200C then toss in the potatoes ensuring they are well coated and season with salt and roast for 40 minutes, shaking the pan occasionally, until crisp and golden and sprinkle with herbs just prior to serving.
