ABSOLUTELY ULTIMATE POTATO SOUP



Absolutely Ultimate Potato Soup image

I have made this for many whom have given it the title. This takes a bit of effort but is well worth it. Please note: for those who do not wish to use bacon, substitute 1/4 cup melted butter for the bacon grease and continue with the recipe. (I generally serve this soup as a special treat as it is not recommended for people counting calories.)

Number Of Ingredients 12

1 pound bacon, chopped
2 stalks celery, diced
1 onion, chopped
3 cloves garlic, minced
8 potatoes, peeled and cubed
4 cups chicken stock, or enough to cover potatoes
3 tablespoons butter
ΒΌ cup all-purpose flour
1 cup heavy cream
1 teaspoon dried tarragon
3 teaspoons chopped fresh cilantro
salt and pepper to taste

Steps:

  • In a Dutch oven, cook the bacon over medium heat until done. Remove bacon from pan, and set aside. Drain off all but 1/4 cup of the bacon grease.
  • Cook celery and onion in reserved bacon drippings until onion is translucent, about 5 minutes. Stir in garlic, and continue cooking for 1 to 2 minutes. Add cubed potatoes, and toss to coat. Saute for 3 to 4 minutes. Return bacon to the pan, and add enough chicken stock to just cover the potatoes. Cover, and simmer until potatoes are tender.
  • In a separate pan, melt butter over medium heat. Whisk in flour. Cook, stirring constantly, for 1 to 2 minutes. Whisk in the heavy cream, tarragon, and cilantro. Bring the cream mixture to a boil, and cook, stirring constantly, until thickened. Stir the cream mixture into the potato mixture. Puree about 1/2 the soup, and return to the pan. Adjust seasonings to taste.

2 cans (15 ounces each) whole potatoes, drained and halved lengthwise
1 tablespoon butter
1 tablespoon olive oil
1-1/2 teaspoons dried parsley flakes

1/2 teaspoon dried thyme
1/2 teaspoon rubbed sage
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon garlic powder
1/4 teaspoon paprika

Steps:

2 pound(s) yukon gold potatoes -- peeled & chopped
2 1/2 cup(s) chicken broth
1 cup(s) milk
1 (10 oz) can(s) cream of mushroom
1 (10 oz) can(s) cream of celery
1 cup(s) vidalia onions -- diced
1/2 cup(s) celery -- diced
1/2 cup(s) carrots -- diced
1 tablespoon(s) roasted garlic -- minced
2 teaspoon(s) parsley & chives -- dried
1 teaspoon(s) thyme & rosemary

Steps:

  • Place veggies in pot and cover with broth. Cook until tender.
  • May need to remove some of the broth before you add the rest of the ingredients. Depending on consistency.
  • Then add herbs, milk, and canned creams. Cook until soup is creamy and done.

I found this recipe either on this site (and it's disappeared) or another that I don't remember. I had this recipe memorized last winter! Although, over summer, I forgot, so I came looking for it on here recently. Since I found my written copy and since I don't see it here anymore, I am going to share it with you! What's great about this recipe is what you can do with it. I love to add chicken or cauliflower or broccoli or cheese to it at the end. (Requires an extra step!)

2 medium potatoes, peeled and diced
2 cups water
1 large onion, chopped
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed (optional)
1/4 teaspoon ground pepper
1 1/2 cups milk
1 chicken breast, cut and cooked
1/2 head cauliflower or 1/4 head cauliflower, cut into florets
1/2 head broccoli or 1/4 head broccoli, cut into florets
1/2 cup cheese (more or less)

Steps:

  • Bring water to a boil in a large saucepan.
  • Add potatoes, cook over medium heat until tender. (Note: sometimes I add the cauliflower or chicken to the potatoes while they cook. You don't have to, but it's convenient.) Set aside. DO NOT DRAIN!
  • Meanwhile, in another saucepan, saute onion in the butter until tender. Onions will have a sweet smell and will look glazed over.
  • Stir in the flour, salt, thyme, rosemary (optional), and pepper.
  • Gradually add milk. Bring to a boil. If you like, add the cheese.
  • Cook and stir for 2 minutes.
  • Add potatoes (and extra, optional ingredients) with cooking liquid. Heat through.

1 1/2 cups onions, chopped
1 1/2 cups celery, chopped
1 teaspoon salt
2 tablespoons butter
3 cups red potatoes, peeled and cubed
3 cups water
1 teaspoon dried dill
1/2 teaspoon dried marjoram
1 cup milk
2 -4 tablespoons neufchatel cheese (optional) or 2 -4 tablespoons cream cheese (optional)

Steps:

  • In a soup pot, saute the onions, celery and salt in the butter for 5 minutes on a medium high heat.
  • Add the potatoes, water, dill and marjoram, cover and bring them to boil.
  • Reduce the heat and simmer until the potatoes are soft, about 10 minutes In a blender in batches, puree the vegetable mixture with the milk and if using the Neufchatel or cream cheese.
  • Return the soup to the pot and gently reheat.
