1 pork tenderloin, trimmed
8 -10 pieces prosciutto, thinly sliced
black pepper, fresh cracked
fresh thyme sprig
2 tablespoons vegetable oil
1 1/4 cups chicken broth
2 tablespoons flour
2 garlic cloves, minced
2 teaspoons fresh thyme, minced
1/4 cup lemon juice, scant
3 tablespoons chives, minced
salt & pepper

Steps:

  • Adjust your oven rack to the middle position and preheat your oven to 450. Line a baking sheet with foil and set a wire rack on top of it.
  • Rinse and pat dry the pork tenderloin. Season with fresh cracked black pepper and overlay with thyme. Then wrap tenderloin in prosciutto.
  • Heat 2 tblsp oil over medium heat in a skillet or braiser. Brown each side of your tenderloin, approximately 5-7 minutes per side. Transfer meat to wire rack set in foil lined baking sheet. Bake until meat registers 145 degrees, approximately 15-18 minutes.
  • Meanwhile, deglaze pan used to brown tenderloin by pouring in the chicken stock. Bring to a simmer. Then whisk in the flour until sauce begins to thicken. Whisk in garlic, thyme, and lemon juice. Cook until sauce is desired thickness, whisking often (approx. 5-10 minutes). Off heat, stir in the chives and a dash of salt & pepper.
  • Allow tenderloin to stand for a few minutes before slicing. Serve topped with pan sauce.

2 tablespoons olive oil
1 to 1 1/2-pound pre-marinated apple bourbon pork tenderloin (recommended: Hormel)
1 French baguette, sliced into 1/2-inch thick slices
1 (5.2-ounce) package soft cheese with garlic and herbs (recommended: Boursin)
12 cherry tomatoes, cut in half

Steps:

  • Preheat oven to 400 degrees F.
  • Heat olive oil in a large skillet with a metal handle over medium-high heat. Add tenderloin and sear each side. After all sides have been seared, place skillet in oven and roast for 15 to 20 minutes per pound (per tenderloin) or until an instant-read thermometer registers 155 to 160 degrees F. Remove from oven and let rest for 10 minutes.
  • Place baguette slices on a baking sheet and toast in preheated oven until just golden around the edges, about 7 to 10 minutes. Remove and set aside to cool.
  • Spread toasted baguette slices with 1 heaping teaspoon of the herb cheese spread. Slice pork tenderloin into 1/4-inch thick slices and place on top of bread slices. Top each slice of pork with a small dollop of the herb cheese spread and top with a cherry tomato half.

6 cups fresh breadcrumbs made from French bread
2/3 cup chopped fresh parsley
2 tablespoons chopped fresh rosemary
1 3/4 teaspoons crumbled bay leaves
3 pounds pork tenderloins, trimmed
2 large eggs, beaten to blend
4 tablespoons (1/2 stick) butter
2 tablespoons olive oil

Steps:

  • Preheat oven to 375°F. Mix first 4 ingredients in large bowl to blend. Season to taste with salt and pepper.
  • Sprinkle pork with salt and pepper. Dip into eggs, then into breadcrumb mixture, coating completely.
  • Melt 2 tablespoons butter and 1 tablespoon oil in heavy large skillet over medium-high heat. Add half of pork; cook until golden on all sides, about 5 minutes. Place on rack set in large roasting pan. Wipe out skillet. Repeat with remaining 2 tablespoons butter, 1 tablespoon oil and pork.
  • Roast pork until crust is golden and thermometer inserted into center registers 155°F, about 20 minutes. Transfer pork to cutting board. Let stand 5 minutes. Slice pork and serve.

  • 1. In a large resealable plastic bag, place tenderloins. 2. In a small bowl, combine soy sauce, molasses, garlic, sage, and rosemary. Pour mixture over tenderloin; seal. 1 lb pork tenderloin, trimmed of fat
1 teaspoon olive oil
1/8 teaspoon ground red pepper
1/8 teaspoon garlic powder
1/2 teaspoon coarse sea salt
1/8 teaspoon fresh coarse ground black pepper
1/4 cup fresh parsley, chopped
2 tablespoons fresh rosemary, chopped

Steps:

  • Preheat oven to 450°F.
  • Rub pork with oil and sprinkle evenly with red pepper, garlic powder, salt, and black pepper. (I just use my coffee grinder to grind up red pepper flakes).
  • Press parsley and rosemary evenly over roast so they stick.
  • Transfer pork to small nonstick baking pan. Tuck tapered end of tenderloin under itself for even cooking.
  • Roast 18 to 22 minutes or until barely pink inside.

1 pkg two medium whole pork tenderloins
HERB RUB (HERBS DE PROVINCE)
2 Tbsp dried savory
2 Tbsp dried fennel seed (i omit)
2 Tbsp dried sage
2 Tbsp dried rosemary
2 Tbsp dried oregano
2 Tbsp dried basil
2 Tbsp dried marjoram
2 Tbsp dried thyme
salt and pepper to taste
APRICOT SAUCE
1 c apricot preserves
1 Tbsp vinegar
1 c water
you can use a variety of different preserves for the sauce- peach, cherry, pineapple, etc

Steps:

  • 1. Preheat oven to 425
  • 2. Season tenderloins liberally with salt and pepper and then herb rub. I spread the herb mixture on a plate and firmly roll the tenderloins in it, covering the tenderloins completely. (you may have leftover herbs-save in plastic bag)
  • 3. Places tenderloins in a large baking dish into preheated oven for 15-18 minutes. Do not overcook. Take out of oven and let rest for 10 minutes. Start the Apricot Sauce.
  • 4. Apricot Sauce: Combine preserves,water and vinegar in a small pan and bring to a simmer.
  • 5. Slice pork into thick slices and drizzle Apricot Sauce over. This is great with wild and brown rice with some of the sauce poured on the rice also.

Preheat oven-400 deg. roast
Spray cooking rack with non-stick spray
Set rack in a baking sheet
Small bowl, combine:
Bread crumbs
Garlic
Parsley
Rosemary
Thyme
Olive oil
Salt
Pepper
Mix thoroughly
Pat tenderloin dry with paper towels
On a piece of plastic wrap, spread out crumb mixture in a strip as long and wide as the tenderloin.
Coat one side of tenderloin with 1 tablespoon of the mustard, turn over and place on the crumbs so they stick to the mustard.
Coat the remaining surface of the tenderloin with 1 tablespoon of the mustard.
Press the second side into the the remaining crumb mixture.
Trasfer tenderloin to the rack
Roast 35-45 minutes, until crust is golden, tenderloin is barely pink in the center (internal temperature 155 deg)
Let stand 5 minutes.

2 Murphy Farms pork tenderloins (approximately 1 lb each)
salt and pepper, to taste
flour
4 tablespoons TFM Extra Virgin Olive Oil
1/4 cup brandy
10 - 12 ounces mixed mushrooms, sliced
2 tablespoons butter
2 tablespoons TFM Extra Virgin Olive Oil
2 cloves of garlic, sliced
2 tablespoons fresh parsley, chopped
1 tablespoon TFM fresh rosemary, chopped
2 tablespoons heavy cream (or half & half)

Steps:

  • Preparation: Lightly season pork tenderloins with salt and pepper, and then dredge in flour. Heat a 12-inch skillet over high heat. Add 4 tablespoons of Extra Virgin Olive Oil. Sear the pork evenly on all sides. Reduce the heat to medium-low. Add brandy, then cover the pan and cook until the internal temperature is 130°, or medium rare. Remove the meat to a platter and cover with foil and a towel. Let rest for about 5-7 minutes. Using the same skillet, turn heat to medium-high and melt the butter and olive oil. Add mushrooms and garlic, sauté for about 4 minutes. Add rosemary, parsley and cream. Season to taste. Slice pork into medallions and pour the herbed mushrooms over the meat.
