This is a sundried tomato and fresh basil with pine nut salad dressing...also olive oil and balsamic. Use on a light romaine or a spinach salad...Dressing can be hot or cold, your choice...enjoy!

1 cup olive oil
½ cup balsamic vinegar
½ cup sun-dried tomatoes, chopped
½ cup fresh basil leaves, sliced
⅓ cup pine nuts, chopped
2 tablespoons water
⅛ teaspoon white sugar

Steps:

  • In a bowl, mix the olive oil, balsamic vinegar, sun-dried tomatoes, basil, pine nuts, water, and sugar. Cover, and refrigerate 8 hours, or overnight.

Yield Makes about 1 1/3 cups

Number Of Ingredients 7

1/4 cup pine nuts
2/3 cup olive oil
1/4 cup balsamic vinegar or 2 tablespoons red wine vinegar
1/4 cup fresh lemon juice
3 tablespoons minced shallots (about 2)
1/2 teaspoon grated orange peel
Salt and pepper

Steps:

  • Preheat oven to 350°F. Place pine nuts on small cookie sheet. Toast until golden brown, stirring occasionally, about 12 minutes. Cool completely.
  • Combine oil, vinegar, lemon juice, shallot and orange peel in bowl. Season with salt and pepper. Stir in pine nuts. Transfer to cruet and seal. (Can be prepared up to 4 days ahead; refrigerate.) Serve at room temperature.

This crunchy, colorful salad is full of fresh veggies, straight from our garden. It's drizzled with my tangy pine nut dressing.

2 cups torn romaine
1/4 cup seasoned salad croutons
1/4 cup shredded red cabbage
3 tablespoons shredded carrot
3 tablespoons shredded zucchini
Dash pepper
DRESSING:
3 tablespoons pine nuts
3 tablespoons water
4-1/2 teaspoons cider vinegar
1 tablespoon lemon juice
1/2 cup packed fresh parsley sprigs
3 garlic cloves, peeled and halved
1/2 teaspoon dried basil
1/8 teaspoon salt
1/4 cup olive oil

Steps:

  • In a small salad bowl, toss the first six ingredients. Place the pine nuts in a blender; cover and process until finely ground. Add the water, vinegar, lemon juice, parsley, garlic, basil and salt; cover and process until blended. While processing, gradually add oil in a steady stream. , Transfer dressing to a small pitcher or bowl. Serve with salad. Refrigerate remaining dressing for up to 3 days.
