HERBED COUSCOUS
this herbed couscous recipe is a quick and super tasty side dish that will take your mid-week dinners to a whole other level. It's made with pearl couscous, garlic, herbs and a little lemon. The best part? It's ready in about 20 minutes and the pairing possibilities are endless!

Steps:
- heat up one tbsp of the olive oil in a small sauce pan over medium to high heat
- sautée onion until transparent, about 2-3 mins
- add garlic and sautée until frangrant, about 1 minute
- add dry couscous and stir
- add salt, stir
- add water* thyme and bay leaf
- bring it to a boil then reduce to a slow simmer
- cover and let it simmer until all the water has been absorbed (about 10 mins)
- after all liquid has been absorbed, remove the thyme sprig and the bay leaf and discard
- add remaining tbsp of olive oil, the parsley and the lemon zest, stir to combine
HERBED COUSCOUS
Steps:
- Bring water, 1 tablespoon salt, and butter to a boil. Add couscous, remove from heat and stir quickly and thoroughly. Cover for 5 minutes. Moisture will be absorbed. Fluff with a fork. Add scallions, Spanish onion and rice wine vinegar.
COUSCOUS AND BULGUR PILAF

Steps:
- Heat 2 tablespoons oil in heavy medium saucepan over medium heat. Add onions and sauté until tender and pale golden, about 10 minutes. Add bulgur and stir to coat. Stir in 1 1/2 cups Vegetable-Herb Broth. Bring to simmer. Reduce heat to medium-low. Cover and simmer gently until liquid is absorbed and bulgur is tender, about 10 minutes. Remove from heat. Using fork, fluff bulgur. Cover and let stand 8 minutes.
- Meanwhile, bring remaining 1/2 cup Vegetable-Herb Broth to simmer in small saucepan. Combine broth, couscous and remaining 1/2 teaspoon oil in large bowl. Stir to blend. Cover tightly and let stand until liquid is absorbed and couscous is tender, about 15 minutes. Fluff with fork.
- Mix bulgur into couscous in large bowl. Add parsley, chives and rosemary; toss to combine. Season to taste with salt and pepper.
COUSCOUS WITH PINE NUTS
Steps:
- Melt the butter in a large saucepan. Add the shallots and cook them over medium-low heat for 3 minutes, until translucent. Add the chicken stock, salt, and pepper and bring to a boil. Turn off the heat. Stir in the couscous, cover the pan, and set aside for 10 minutes. Add the pine nuts, currants, and parsley and fluff with a fork to combine. Serve hot.
HERBED COUSCOUS
A really fast, simple side dish. Use any kind of broth that works with your menu, or even plain water. Use any soft green herb (parsley, basil, thyme, chives, dill).

Steps:
- In a medium saucepan, melt butter over medium heat. Add garlic, scallion, a pinch of salt and a few grinds of black pepper. Saute until scallion softens, 2-4 minutes.
- Add couscous and cook, stirring often, until grains begin to brown and it smells nutty.
- Add broth. Bring to a boil, reduce to a simmer, cover, and cook 1 minute, until couscous is tender but firm.
- Stir in parsley and serve.

HERBED COUSCOUS PILAF
I developed this one night when I was looking for something different to do with couscous. It's quick and easy and goes well with chicken, salmon, or pork.I use the Near East brand of quick couscous. If you use plain couscous, you may want to bump up the amount of herbs a little or use seasonings to your taste.

Steps:
- Saute' carrots and onion in olive oil in a saucepan until tender, about 10 minutes.
- Add chicken broth and herbs and bring to a boil.
- Stir in couscous, peas, and seasoning packet from couscous. Omit the packet if using plain couscous.
- Remove from heat and let stand 5 minutes.
- Fluff with a fork and serve.
