BAKED BRIE WITH HERBED GRAPES

Steps:
- Pre-heat oven to 400 degrees F.
- Slice Brie wheel in half horizontally. Press grapes onto cut side of lower half of cheese. Sprinkle grapes with herbs. Press top of Brie onto grapes, sandwiching them in between the two halves of Brie. Set aside.
- On lightly floured surface, roll puff pastry into a 16"x10' rectangle. Cut a 6" round, and an 8" round from puff pastry. Brush smaller round of puff pastry with egg. Set Brie/grape "sandwich" onto puff pastry. Brush larger round of puff pastry with egg, and place egg side down over Brie. Press out any excess air and crimp edges to seal. Decorate top with puff pastry scraps if desired. Brush outside of Brie with beaten egg. Place on cookie sheet and bake for 20 minutes. Tent loosely with foil and return to oven for 10-15 more minutes. Brie should be golden brown and puffy looking. Remove from oven and let cool for one hour before serving.
HERBED BAKED BRIE

Steps:
- Place brie on a plate and freeze until very firm, about 30 minutes.
- Preheat oven to 350°. Cut off top rind of brie with a sharp knife (it's okay if you can't get the rind off in one piece; brie will smooth out as it bakes).
- Toss rosemary, thyme, and oil on a parchment-lined rimmed baking sheet until coated. Spread herbs evenly on parchment. Place brie in the center so that it covers about half of the herbs. Bake until cheese is melted, 15-20 minutes. Remove from oven and let rest to firm up slightly, about 5 minutes (if you skip this step, you risk spilling molten cheese all over your cutting board).
- Strip leaves from uncovered herbs and sprinkle over brie. Using parchment and a wide spatula, carefully slide brie and covered herbs onto a cutting board.
- Arrange mostarda, walnuts, pear slices, crackers, and baguette slices around cutting board; serve brie warm.

- Preheat an oven to 350 degrees F (175 degrees C).
- Mix together parsley, garlic, rosemary, thyme, marjoram, and salami. Slice the Brie in half crosswise, so you have two wheels. Spread the salami and herb mixture on one of the cut sides and top with the other half of the Brie wheel. Place the Brie in the center of the sheet of puff pastry. Fold the puff pastry up and over the Brie, pressing to secure the pastry together using a little bit of water if necessary. Brush the pastry with beaten egg.
- Bake the pastry in the preheated oven until golden brown, about 30 minutes. Remove from the oven and let stand for 15 minutes before serving.

- 1. Thinly slice top rind off Brie. Cut in half crosswise set aside.2. In a small bowl, stir butter, chives, dill weed, parsley, and thyme until well blended. Spread on cut surface of bottom half of Brie. Top with other half of Brie. Place on a serving plate and sprinkle almonds over the top. Cover with plastic wrap and allow to warm to room temperature (about 1 hour).NOTE: This appetizer can also be served warm by heating in the oven or serving in a chafing dish. The recipe is easily doubled.To heat in the oven, place prepared Brie in a small ovenproof dish. Top with almonds. Bake in a preheated 400° oven 2 to 4 minutes just until cheese begins to melt. (Baking time is determined by the cheese temperature before baking.)To serve in a chafing dish, place prepared Brie in chafing dish. Top with almonds. Set over simmering water. HERBED BRIE
So simple and so delicious. I serve it with whole wheat crackers, and there's always a fight for the last few slices. Make it the day before for ultimate flavor, refrigerate it, then serve at room temp.

Steps:
- Heat olive oil in a skillet.
- While oil is heating, spread the top side of the brie with a drop of water. Sprinkle half the herb and pepper mixture on the first side.
- Place in skillet, herbed side down, for 3-4 minutes.
- Repeat step 3 on the side up, flip over, and cook for 2 more minutes.
