Herb Roasted Alaskan Halibut with Fennel Confit, Nicoise Olives, Sweet Peppers and Yukon Gold Potatoes image

2 pounds Alaskan halibut fillet
Salt and freshly ground black pepper
2 tablespoons olive oil
2 tablespoons butter
5 sprigs fresh thyme
2 garlic cloves
1 tablespoon butter
1 cup fish fume
1 cup cooked diced Yukon gold potato
1 bulb fennel, small dice, cooked soft
1 heirloom tomato, small dice (recommended: Brandywine)
1-ounce nicoise olives
1 sprig basil, leaves chopped
Salt and freshly ground black pepper
Dash sherry vinegar
5 red peppers, roasted, peeled and diced
1 tablespoon parsley oil
3 scallions, julienne

Steps:

  • Halibut: Season the halibut with salt and pepper. In a medium saute pan over high heat add the oil. Once heated, add the fish and sear until golden brown. Add butter, thyme, and garlic and baste. Set aside.
  • Ragout: In a small saucepot combine the butter, fish fume, diced potatoes and simmer over medium heat. Add fennel, tomatoes, olives and basil. Season with salt and pepper, to taste, and add a dash of sherry vinegar. Add the roasted peppers and gently warm. Adjust seasoning, if necessary.
  • To Plate: In a large bowl place the olive ragout and garnish with the roasted peppers and parsley oil. Place the halibut on top and finish with the scallion.

2 turkey tenderloins (about 1 pound each)
Salt and freshly ground black pepper
2 teaspoons ground cumin
Olive oil
2 large sweet potatoes, peeled and cubed (2-inch pieces)
2 ripe mangoes, peeled and flesh sliced from seed
1/2 cup fresh mint leaves
1/4 cup fresh lime juice
1 teaspoon Dijon mustard
1 teaspoon minced fresh ginger
1/4 cup plain yogurt

Steps:

  • Preheat oven to 400 degrees F.
  • Season turkey tenderloins all over with salt, black pepper and cumin.
  • In a large skillet over medium high heat, add about 2 to 3 tablespoons olive oil. Once heated, add the turkey tenderloins and saute on 1 side. Add the potatoes to the pan, flip the turkey, when ready and place the pan into the preheated oven. Roast turkey and potatoes for about 15 minutes or until a meat thermometer registers 170 to 180 degrees F. Let turkey stand 10 minutes before slicing crosswise into 1/2-inch thick slices.
  • Meanwhile, in a blender combine mangoes, mint, lime juice, mustard, and ginger. Puree until blended. Add yogurt and puree until smooth. Serve 1/2 of the turkey with all of the sauce spooned over top and all of the sweet potatoes.
  • Reserve remaining turkey for Thai Turkey and Rice.

4 medium sweet potatoes, peeled and cut into 1 1/2-inch rounds
3 tablespoons olive oil
1 tablespoon fresh thyme leaves, plus a few sprigs for garnish
2 small cloves garlic, minced
1/4 teaspoon crushed red-pepper flakes
1 teaspoon coarse salt

Steps:

  • Preheat oven to 400 degrees. In a medium bowl, toss the sweet-potato rounds with olive oil, thyme, garlic, red pepper, and salt.
  • Transfer to a rimmed baking sheet, garnish with thyme sprigs, and place in oven. Roast until tender and starting to brown, 40 to 45 minutes. Transfer to a platter, and serve.

Holidays are coming and here is yet another sweet potato recipe. The thyme, garlic and red pepper gives great flavor to the sweet potatoes. Instead of olive oil try using Pam or No Oil. Just spray the slices on both sides then shake them in the zip lock bag with the herbs. Use Yams if you prefer.

3 tablespoons olive oil
1 tablespoon fresh thyme, chopped
3 -5 sprigs thyme (to garnish)

Steps:

  • Heat oven to 400 degrees F.
  • In a zip lock bag toss the sweet potatoes in the oil, thyme, garlic and pepper flakes.
  • Transfer to a rimmed cookie sheet.

1 stick (8 tablespoons) butter
1/2 teaspoon dried parsley
1/2 teaspoon dried thyme
1/4 teaspoon dried sage
1/4 teaspoon chopped dried rosemary
Chili Lime Butter
6 tablespoons butter, salted
2 tablespoons freshly squeezed lime juice
2 teaspoons chili powder
Salt
Ground pepper
Fresh sweet potatoes
Extra Virgin Olive Oil

Steps:

  • Wash and dry the potatoes; rub them with a little butter or oil (or leave dry for a crisper skin). Pierce them with a fork in a few places. Place on a cookie sheet or baking pan lined with foil. Bake at 425 degrees for 45 minutes to one hour, depending on size, until the flesh is quite tender. Mixed Herb Butter Soften the butter and then cream it in a small bowl with a fork or spatula. Add the herbs and mix thoroughly. Can chill before using. Also freezes well. Chili Lime Butter In a small bowl, blend together the butter, lime juice and chili powder until thoroughly combined. Season with salt and pepper to taste.

3 -4 medium sized sweet potatoes
4 tablespoons extra virgin olive oil
1 -2 teaspoon herbs (of your choosing, Rosemary or Thyme are recommended)
2 teaspoons smoked paprika
2 teaspoons sugar
2 -3 teaspoons salt
couple grinds pepper

Steps:

  • Preheat oven to 400°.
  • Place rimmed cookie sheet in oven. Cube the sweet potatoes into ¼" cubes. Roughly chop the Rosemary. Mix the EVOO, Rosemary, Smoked Paprika, Sugar, Salt, and Pepper in separate bowl. Add sweet potatoes and toss till evenly coated (be sure to vigorously shake them so the Kosher salt's sharp edges can score the sweet potatoes). Then place the sweet potatoes on pre-heated cookie sheet and roast for 30-40 minutes making sure to toss every once and while to ensure even browning. Remove from oven and serve immediately.

1/2 tsp sea salt
1/4 tsp garlic powder
1/4 tsp dried parsley

1/8 tsp fresh-ground pepper
1/8 tsp cayenne pepper

Steps:

  • 1. Preheat oven to 425 degrees. Wash and dry sweet potatoes. 2. Leave skins intact, and cut potatoes into bite-sized cubes. 3. In a large bowl, or gallon-size ziplock baggie, combine all ingredients, except the cubed sweet potatoes. If using a baggie, rub the bag between your hands to combine the ingredients and evenly distribute them throughout the bag. 4. Place sweet potatoes in the bowl (or bag) and toss well to coat. Place on a large-rimmed baking sheet and bake for 20-25 minutes until lightly browned and cooked through.
