Vegetable platters need not look all look the same. Here, fresh spring vegetables sit in an herb-laced hummus to resemble a spring garden in full bloom. My kids loved plucking the crisp vegetables from the garden, so much so that I think they forgot that they were filling themselves up with such a healthful snack.

2 (15 ounce) cans chickpeas (garbanzo beans), drained and rinsed
½ cup tahini
½ cup water
1 lemon, zested and juiced
¼ cup chopped fresh basil
¼ cup chopped fresh parsley
¼ cup chopped fresh chives
¼ cup chopped fresh mint
1 clove garlic, peeled
½ teaspoon salt
6 small carrots with greens still attached, or as desired
6 sugar snap peas, or as desired
6 fresh asparagus, or as desired
6 radishes with greens, halved, or as desired
6 small stalks celery hearts with leaves, or as desired

Steps:

  • Blend chickpeas, tahini, water, lemon zest, lemon juice, basil, parsley, chives, mint, garlic, and salt in a blender until smooth. Spread hummus in a 2-inch deep baking dish.
  • Arrange carrots, sugar snap peas, asparagus, radishes, and celery in neat rows in the hummus to resemble a garden.

15 oz garbanzo beans, 1 can
2 cloves garlic
3 tablespoons tahini
1 lemon, juiced
2 tablespoons olive oil, more to garnish
salt, to taste
pine nut, to garnish
1 ½ tablespoons fresh parsley
2 tablespoons water
pita chip, to serve

Steps:

  • Boil the garbanzo beans until the skins come off. Remove the skins, drain.
  • Combine all ingredients in a food processor.
  • Blend until smooth adding small amounts of oil and water until desired consistency is achieved.
  • Add more lemon or tahini if needed.
  • Garnish with pine nuts and more oil!
  • Eat with fresh vegetables or pita chips.
  • Enjoy!

2 tablespoons tahini
1/4 cup fresh parsley leaves
6 fresh basil leaves
1 medium scallion, chopped
1 tablespoon chopped fresh dill
1 teaspoon honey
1 tablespoon fresh lemon juice
1/8 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/3 cup extra-virgin olive oil
Options for dipping: carrot sticks, sliced cucumber and whole-wheat pita chips

3 cups cooked garbanzo beans
1 roasted shallot, see note
3 tablespoons tahini
zest and juice of one lemon
1 teaspoon sea salt
1 teaspoon fresh ground pepper
1 pinch red pepper flakes
1/3 cup extra virgin olive oil
3 tablespoons fresh parsley
3 tablespoons fresh dill
3 tablespoons basil leaves
1/2 an English cucumber, sliced thin
1 tablespoon fresh parsley, finely chopped
1 tablespoon champagne vinegar
1/3 cup crumbled feta cheese (optional)

Steps:

  • In a food processor, combine the beans, roasted shallot, tahini, lemon zest and juice, salt, pepper and red pepper flakes and pulse to combine. With the motor running, stream in the olive oil and stop at desired smoothness (I like mine a bit textured). Tear the herbs up a bit with your fingers and add to the hummus, pulse a few times until combined. Add more if you'd like. Taste for salt and pepper; and, if you'd like, thin it out with a few tablespoons of water or more lemon juice.
  • Note: For the roasted shallot, peel and cut it into quarters. Rub a bit of olive oil on the surface and roast at 400 F for about 20 minutes. This is quickest in a toaster oven, and can be done in advance. If you are short on time, 2 cloves of garlic make a fine alternative.
  • The following is an optional garnish for the hummus plate. It is not completely necessary, but adds a little something different. Slice the cucumber paper thin and toss it with the chopped parsley and vinegar. Put the hummus on a serving plate, top with the cucumber mix, feta cheese and fresh herbs for garnish.
