Number Of Ingredients 8

1 cod filet, or other white fish, cut into +/- 6oz portions
1 c Panko**
1 tsp chopped fresh chives
1 tsp chopped fresh parsley
1 tsp chopped fresh basil
1 tsp fennel fronds (optional)
1/2 tsp each salt and pepper
1 T olive oil

Steps:

  • Preheat oven to 400. In a shallow pan mix the herbs, salt, pepper and panko. Rub each piece of fish with olive oil, then pat the crumb mixture onto the fish. Once all the fish is coated, lightly sprinkle with a pinch more salt and pepper. Heat a nonstick skillet to medium-high. Add a little butter and a little olive oil to the pan, then add the fish. Cook on one side for 2-3 minutes, until coating is deep golden brown. Turn fish and immediately tranfer pan into the oven. Cook fish for 5 minutes, or until the fish feels slightly resistant to your touch. Remove from oven and serve. **Panko is a Japanese bread crumb that creates a less heavy coating than traditional breadcrumbs

Number Of Ingredients 15

6 Six ounce portions Ling Cod
Breading:
2 cups parmesan
4 cups japanese panko
2 table spoons fresh chives
2 table spoons fresh flat leaf parsley
s+p to taste
1 lbs butter
Red Pepper Coulee:
3 tablespoons olive oil
8 fresh garlic cloves
1 large yellow onion
3 cups Roasted red peppers
6 cups water (or more if you like a more soupier sauce)
s+p to taste

Steps:

  • For breading: start by putting the pound of butter in a sauce pot on a low fire to melt. put all other ingredients in an electric mixer and grind till consistency is the same. dip your ling cod portions in the melted putter and transfer into the breading and cover the fish with it. place on sheet pan or cookie sheet after all are breaded put in the oven preheated to 450 degrees. bake approximatly 12 minutes. baking times may vary. heat oil in sauce pan and add garlic. lightly tan the garlic and add the onions and peepers. stir to coat well with oil and add water. simmer till onions are translucent take pot off stove and use a burr mixer (electric puree machine) until a smooth consistency is present. lay a bed of sauce on plate and finish with the ling cod. hope you enjoy this dish. what i also like to do with the dish is make rissoto cakes(cooled rissoto breaded in panko and pan fried or deep fried) you can find good rissoto recipes on many cooking websites.
