Steps:
- Mix the breadcrumbs with the grated lemon zest, grated Parmesan, chopped parsley, salt and pepper.
- Season the 4 skinless fish fillets. Pan fry in a little oil for 2-3 minutes until just tender. Turn over and sprinkle with the crumb mixture. Brown in the pan under a hot preheated grill for 2-3 minutes. Add the butter to the pan with the juice of 1 lemon. Melt around the fish and serve.
PANKO-CRUSTED FISH STICKS WITH HERB DIPPING SAUCE

- Preheat oven to 475, with racks in top and bottom third. Line two baking sheets with aluminum foil; set aside.
- Place egg in a wide shallow bowl; season with salt and pepper. In another bowl, combine panko, Old Bay, and oil. Dip tilapia into egg, shaking off excess, then into panko mixture, pressing to adhere. Place on prepared baking sheets.
- Bake until lightly browned, 12 to 15 minutes, rotating sheets from top to bottom halfway through. Meanwhile, in a small bowl, stir together mayonnaise, parsley, mustard, lemon juice, and horseradish; season with salt and pepper. Serve fish sticks with sauce and lemon wedges on the side.

- Preheat oven to 400 degrees F.
- Place the bread crumbs in a shallow dish.
- On a cutting board place the herbs, garlic, lemon zest, and a little salt.
- Finely chop all together.
- Add the herb mixture to the bread crumbs.
- Brush the top of each fillet with olive oil and dip in to the bread crumb herb mixture.
- Brush baking pan with oil.
- Place the fillets, crumb side up.
- Bake in oven for 12-15 minutes or until fish is done and flaky.

- Rinse fillets and pat dry. Use 3 shallow dishes to prepare your breading ingredients. In the first dish, mix the flour with 1/2 teaspoon seasoned salt or Essence and 1/4 teaspoon pepper. Break the eggs into the second dish and beat well. In the third dish, mix the panko with the remaining seasoned salt or Essence, pepper, and dried herbs.
- Heat 1/4-inch of oil in a large heavy skillet over medium-high heat. Bread each fillet by dipping first in the flour mix, then the eggs, then the panko, coating thoroughly with each layer. Place carefully in the hot oil. (Don't crowd the skillet; work in batches if needed.) Cook 2 to 4 minutes on each side (time will depend on the thickness of the fillets.) Serve immediately with lemon wedges.
BAKED HERB AND MACADAMIA CRUSTED FISH
A simple crusted fish dish using macadamias and herbs. Baked in the oven. Serve with veges, chips or a salad on the side. You can vary the herbs used dependant upon taste or availability. This crust is also great on flattened chicken breast fillets

- Preheat oven to 180°C (360°F ) and spray a baking dish with cooking spray.
- Place fillets into dish and brush with the macadamia oil.
- In a small bowl combine the crust ingredients and mix to form a thick paste.
- Spread the macadamia crust over the top of the fish fillets. press on evenly using your hands or the back of a soon.
- Bake for approx 10 minutes , or until the fish flakes when tested with a fork. The cooking time will very depending on the thickness of the fish. Check for doneness after each few minutes.

HERB AND NUT CRUSTED BAKED FISH FILLETS
This is my favourite recipe for oven baked crusted fish fillets. I never really measured amounts, so the ratio herbs-parmesan-nuts as well as the total amount is an educated guess. I've so far used all kinds of nut mixes, you can even add in some ground sesame seeds. It's great with salad, but also with spinach, and I've also made it on the side of oven baked vegetables.

- Preheat oven to 220°C (425°F) and grease a baking dish which is large enough for the four fillets, then pour the lemon juice over the fillets and let them sit while preparing the crust
- In a bowl, combine chopped herbs, nuts, parmesan and olive oil, a dash of salt and pepper to taste. Mix well with a fork and add more oil if needed until you have kind of a paste.
- Pat the fillets dry, lightly salt them (skip that if you want less salt) and place them in the greased dish, they should not overlap each other!
- Distribute the paste over the fillets until they are completely covered
- Bake for about 10 minutes, the shortly remove to place some butter flakes on top of the crust. Put back into the oven and bake for additional 10-15 minutes
- Serve with a large bowl of salad and enjoy

- Heat the oven to 450 degrees, Places the fish in an oiled rimmed baking sheet. Combine the bread crumbs, herbs, garlic, and red pepper flakes, in a small bowl. Brush each fish with olive oil, then season with salt and pepper. Add the oil to the bread-crumb mixture and stir to combine. Spoon, the bread-crumb mixture on top of the fish fillets to coat. Bake until bread crumbs are browned and fish is opaque, 5 to 7 minutes. Serve immediately
