3 cloves garlic, peeled and thinly sliced
1 teaspoon chopped fresh rosemary
3 long strips orange zest
1/8 teaspoon crushed red pepper
1 log (11 oz.) fresh goat cheese
1/4 cup dried cranberries

Steps:

  • 1. In small saucepan heat oil over medium-high heat. Reduce heat to medium. Add garlic, rosemary, orange zest and red pepper. Cook, uncovered, for 3 to 5 minutes or until garlic is golden, stirring frequently.

36 (1/2-inch-thick) slices baguette
3 tablespoons finely chopped fresh Italian parsley leaves
2 1/2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely chopped fresh rosemary leaves
1 teaspoon lemon zest
1 teaspoon coarsely cracked black pepper
1/4 teaspoon salt
1 11-ounce log soft fresh goat cheese
1 1/2 tablespoons extra-virgin olive oil or Meyer lemon olive oil
Fresh herb sprigs, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy baking sheets. Drizzle 3 tablespoons of olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 10 minutes.
  • Meanwhile, stir the herbs, lemon zest, pepper, and salt in a medium bowl to blend. Using about 2 teaspoons of cheese for each, form the goat cheese into 1-inch diameter balls. Roll the cheese balls in the herb mixture to coat completely. Arrange the cheese balls on a platter. Drizzle the extra-virgin olive oil over and around the cheese balls. Serve with the crostini. 1 lb whole wheat pizza dough
1/2 cup portabella mushroom, sliced 1/2-inch-thick
1/8 teaspoon kosher salt
1/4 cup bottled pesto sauce
1/4 teaspoon fresh ground black pepper
3/4 cup skinless boneless shredded rotisserie chicken
1/2 cup fresh sweet corn
2 ounces goat cheese, crumbled
2 tablespoons chopped fresh basil

Steps:

  • Preheat oven to 425°F.
  • Lightly coat a round perforated pan with vegetable cooking spray, or put a pizza stone in the oven while it preheats. Place pizza dough on a lightly floured surface, and roll it into a 12-ing circle. Place dough on prepared pizza pan or stone, and bake for 5 minutes.
  • While the crust is baking, coat a small nonstick skillet with vegetable cooking spray and heat over medium-high heat. Add the mushrooms and salt, and cook, stirring occasionally, 4-5 minutes or until softened and lightly browned; set aside.
  • Spread the pesto over warm crust, leaving 1/2-inch edge. Sprinkl pepper evenly over crust, and top with chicken, corn, mushrooms, and goat cheese. Bake 12-15 minutes or until crust is cooked through and cheese is golden brown. Remove from oven, and sprinkle with basil. Cut into 8 wedges; serve hot.

1 cup lukewarm water
1 (.25 ounce) envelope active dry yeast
3 cups all-purpose flour
1 teaspoon vegetable oil
1 teaspoon salt
8 dried figs
1 medium red onion, thinly sliced
1 tablespoon olive oil
1 pinch salt
1 teaspoon dried thyme
1 teaspoon fennel seeds
4 ounces goat cheese
1 tablespoon olive oil, or as needed

Steps:

  • Pour the water into a large bowl, and sprinkle yeast over the top. Let stand for a few minutes to dissolve. Mix in the oil, salt, and flour to make a dough. When the dough is too stiff to stir, turn out onto a floured surface, and knead for about 5 minutes. Place into an oiled bowl, and cover with a clean towel. Set aside to rise for about 45 minutes.
  • Place the figs into a small bowl, and pour boiling water over them. Let stand for about 10 minutes, then drain and chop. Set aside.
  • Meanwhile, heat 1 tablespoon of oil in a skillet over medium heat. Add the onions; cook and stir until they are wilted and soft. Reduce heat to low, and season with salt. Continue to cook and stir until the onions are a dark brown, 5 to 10 minutes. Stir in the thyme, fennel seed and figs, and remove from the heat.
  • Preheat the oven to 450 degrees F (220 degrees C). Punch down the pizza dough, and stretch into a circle about 1/4 inch thick. Place on a lightly greased pizza pan or baking sheet. Brush the surface lightly with remaining olive oil. Spread the onion and fig mixture over the crust. It will be sparse, but there is plenty of flavor. Dot with pieces of goat cheese.
  • Bake for 15 to 18 minutes in the preheated oven, or until the crust has turned golden brown at the edges.

1 tablespoon extra virgin olive oil
1 medium red onion, halved and thinly sliced
1 garlic clove, minced (optional)
2 large roma tomatoes, sliced
4 ounces goat cheese, crumbled
12 fresh sage leaves, cut into 1/4-inch slices
1 tablespoon fresh thyme leave
1 tablespoon snipped fresh rosemary
1 tablespoon fresh flat leaf parsley, chopped for garnish (optional)

Steps:

  • Preheat oven to 450°.
  • Place prepared pizza crust on a baking sheet.
  • In a large skillet, heat olive oil and sauté onion for 5-8 minutes or until tender. Add sliced garlic, if using, and cook 1 more minute. Spread onions and garlic evenly over pizza crust, then top with tomato slices, spreading evenly to the edges. Top with cheese.

1 tablespoon olive oil
1 garlic clove, minced
1/8 teaspoon fresh ground pepper
2 medium tomatoes, thinly sliced
1/2 medium sweet onion, thinly sliced and separated into rings
3 tablespoons ripe olives, pitted, sliced
4 ounces goat cheese, crumbled
1 tablespoon snipped fresh oregano, crushed or 1 teaspoon dried oregano
1 tablespoon fresh basil, torn or 1 teaspoon dried basil
2 tablespoons toasted pine nuts

Steps:

  • Place pizza crust on a lightly greased baking sheet.
  • In small mixing bowl combine olive oil, garlic, and pepper.
  • Brush generously over the crust.
