This recipe is an all-time family favorite that is filling and delicious.

5 pounds red potatoes, quartered
1 (16 ounce) container sour cream
½ cup butter
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
¼ cup chopped green onion
2 cups cooked, chopped ham
salt and pepper to taste
1 ½ cups Parmesan cheese flavored bread crumbs
¼ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Place potatoes in a large pot of water, and bring to a boil. Boil until slightly tender, about 12 minutes. Drain, and transfer to a large bowl.
  • Mix sour cream, butter, cream of chicken soup, Cheddar cheese, green onions, ham, salt and pepper with the potatoes. Spread mixture in the prepared baking dish. Sprinkle with bread crumbs, and drizzle with butter.
  • Bake 30 minutes in the preheated oven.

The taste of this recipe is so amazing! Everytime I fix this my family is always commenting on how wonderful it smells and can't wait to eat it! It has the wonderful aroma and taste similar to Pumpkin Pie that you always feel you are getting a special treat, yet this recipe has fruits and nuts which make it a healthier alternative. You can add Mini Marshmallows to the top after uncovering if desired.

1 can (8 ounces) unsweetened pineapple chunks
1/2 cup packed brown sugar
1/4 cup apple cider or unsweetened apple juice
1/4 cup maple syrup
1/4 cup butter, cubed
3/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
3 large sweet potatoes, peeled and cut into 1/4-inch slices
3 medium apples, peeled and cut into 1/4-inch slices
3/4 teaspoon salt
1/3 cup chopped pecans

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small saucepan, combine brown sugar, apple cider, maple syrup, butter and reserved pineapple juice. Bring to a boil; cook until liquid is reduced to 3/4 cup and syrupy, about 20 minutes. Stir in cinnamon and cloves; set aside and keep warm., Preheat oven to 400°. Layer half of the potatoes, apples and pineapple in a 13x9-in. baking dish coated with cooking spray. Repeat layers. Sprinkle with salt. Pour reduced liquid over top. Cover and bake 40 minutes or just until tender., Sprinkle with pecans. Bake, uncovered, 13-18 minutes longer or until potatoes and apples are tender.

6 medium potatoes, peeled, cubed, boiled
1 small onion, minced
4 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup shredded cheddar cheese
2 teaspoons salt
1/4 teaspoon garlic salt
3 tablespoons butter or 1/4 teaspoon margarine, cut in small pieces
1/4 teaspoon parsley flakes
1/4 teaspoon paprika

Steps:

  • Beat together all ingredients, except butter, parsley and paprika and spoon into a greased 9x9x2" casserole dish, dot top with butter; sprinkle parsley and paprika over top.

1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
3/4 cup Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
2 cups miniature marshmallows

Steps:

  • 1.Heat the oven to 350°F. 2.Spray a 1½-quart casserole with vegetable cooking spray. 3.Put the potatoes, cinnamon and ginger in an electric mixer bowl. Beat at medium speed until almost smooth. Add the broth and beat until potatoes are fluffy. Spoon the potato mixture in the prepared dish. These came from a friend of my Mom's when they did progressive dinners. Always a favorite at every holiday dinner at our house!

1 pkg potatoes, frozen or fresh shredded
1 qt half and half or cream
butter, softened
salt and pepper

Steps:

  • 1. If frozen shredded potatoes are used, thaw first. Spray non-stick spray in cooking dish. Place potatoes in dish, nearly to top. Press down slightly and add more if there is room. Don't mash them down hard though!
  • 2. Fill half and half to 2/3 of the side of the cooking dish.
  • 3. Cut a stick of butter into 1/2 teaspoon slices, and place all over top of potatoes. Salt and pepper generously over top of dish.
  • 4. These can be cooked with other foods that are being prepared and are done when there is a tan edge and some of the potatoes sticking out of the cream are toasted a little.
  • 5. For a 13" x 9" pan at 375, these take roughly 45-60 minutes if solo in the oven. This amount serves roughly 8-10 people depending on the other foods being served, and the amount of potato lovers! These are so easy and taste so good!

I love potatoes and who doesn't love them scalloped. These remind me of when I was a kid, just love them!

2 Tbsp vegan margarine
1 Tbsp white spelt flour
1 1/2 c plain coffee creamer
salt and pepper to taste
4-6 large yukon gold potatoes
1 large sweet onion
bread crumbs, buttered
melted vegan margarine

Steps:

  • 1. Preheat the oven to 350'F.
  • 2. Melt the Vegan margarine in a sauce pan over medium heat.
  • 3. Stir in the flour. Let it cook for a minute to get rid of the flour taste.
  • 4. Add the soy creamer slowly and stir until thickened. Add the salt and pepper to taste.
  • 5. Spray or grease a baking dish.
  • 6. Using a mandolin, slice the potatoes and onions very thin.
  • 7. Alternate layers of potato and onions.
  • 8. Pour the white sauce over everything.
  • 9. Sprinkle the top with bread crumbs. You can use plain or seasoned ones for something different.
  • 10. Sprinkle some melted vegan margarine over the crumbs.
  • 11. Bake covered for 1 hour.
  • 12. Uncover and bake for 15 minutes more to brown the crumbs. Serve hot.
  • 13. Enjoy!

15 medium potatoes
1 c melted butter
1/2 pint whipping cream
1 pt half-n-half
1 medium onion grated
milk as needed (1c)
salt and white pepper
paprika

Steps:

  • Par boil potatoes for 20 minutes. Let cool overnight. Peel and grate carefully. Layer in buttered 9 x 12 dish. Mix grated onion with butter and creams. Pour over potatoes slowly. Gently probe potatoes with fork to ensure liquid surrounds them. Add milk only if needed to moisten. Cover and chill overnight. Let stand at room temp 2 hours before baking. Sprinkle with paprika and bake at 325 for 1 hour.

1/4 cup butter, softened
1/2 cup milk
3/4 cup whipping cream
3 ounces Gruyere cheese, grated
3 Tablespoons freshly grated Parmesan cheese
Garnish: chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees. Place potatoes directed on oven rack and bake 45-60 min. or easily pierced with fork. Remove from oven, cool slightly, and halve lengthwise. Grease 13x9x2 inch or 3 quart baking pan. Scrape out potato flesh. Mash potato flesh with electric mixer until smooth. Add butter and milk and stir until blended. Spread in prepared pan. Increase oven temperature to 500 degrees. With electric mixer, whip cream to soft peaks and fold in Gruyere cheese by hand. Spread evenly over potatoes and sprinkle with Parmesan. Bake until heated thoroughly and topping is golden brown, about 10 minutes. Garnish with parsley and serve warm.
