CINNAMON SPICED PECANS
Here is a treat enjoyed by people of all ages. Spiced cinnamon pecans are nice to have on hand during the Christmas season to serve as an appetizer or add to your cookie plate, or to give as gifts packaged in decorated jars or containers! I love making foods that will delight my family or guests.

- In a small bowl, combine the sugar, cinnamon and salt; set aside. In a large bowl, lightly beat egg white. Add pecans; stir until coated. Sprinkle with sugar mixture; mix well. , Spread in a single layer on a baking sheet. Bake at 300° for 20 minutes. Remove nuts from baking sheet to cool on waxed paper.

My grandma makes these every year for the holidays. It's always handy to make extra for later snacking! They are relatively quick and easy to make and taste wonderful. I love the smell of these when they're in the oven.

- Preheat oven to 325 degrees F (165 degrees C).
- Beat egg white in a large bowl with an electric mixer until frothy. Add pecans to egg white and stir until evenly coated.
- Mix sugar, cinnamon, and salt together in a separate bowl; add to pecans and stir until coated. Spread coated pecans onto a baking sheet.
- Bake in the preheated oven until fragrant and crisp, about 25 minutes.

- Preheat oven to 350°. In a large bowl, combine cake mix and brown sugar. Add eggs and melted butter; mix well. Stir in pecans and baking chips. Spread into a greased 13x9-in. baking pan., Bake until golden brown, 25-30 minutes. Cool in pan on a wire rack. Cut into bars.

PECAN PIE OR TURNOVERS RECIPE - (3/5)

- For Crust: Preheat oven 350*F Whisk flour, sugar and salt. Using fingers, work in butter until it resembles cornmeal mixed with bean-size bits of butter. Add egg and stir dough together. If dough is dry, sprinkle up to a tablespoon more of cold water over mixture. Form dough into disk, wrap in plastic and refrigerate at least one hour. On lightly floured surface roll dough into 12 inch circle about 1/4 inch thick. Put into 9-inch pie plate and trim edges. Tuck overhanging dough underneath to for thick edge that is ven with rim-flute edge if desired. Put piece of parchment or aluminum foil in piecrust, fill with dry beans for weight. Bake in lower 1/3rd of oven about 20 min. Remove from oven and discard beans and aluminum. To make turnovers, simply roll dough into 6" circles, place dollop of filling in center, dampen edges with cold water, and fold together. Poke small holes in pocket to vent. FOR FILLINING; In sauce pan combine butter, brown sugar, corn syrup and salt. Bring to boil over high heat stirring constantly. Continue to boil for 1 min. Remove from heat stir in nuts, vanilla and bourbon. Set mixture in fridge to cool, at least 5 min. Whisk beaten egg into filling until smooth. Put into pie plate that is on sheet pan. Bake for 35 to 40 min. until edges are set and senter is slightly loose. Use same baking time for turnovers.
CINNAMON-PECAN APPLE DUMPLINGS

- Unroll crescent dough and separate into eight triangles. Wrap one triangle around each apple half. Place on a greased 15x10x1-in. baking pan, flat side down., Combine sugar and cinnamon; sprinkle over dumplings. Bake at 350° for 23-28 minutes or until golden brown and apples are tender. , For sauce, in a small saucepan, combine orange juice and sugar; bring to a boil, stirring occasionally. Cook for 10-12 minutes or until liquid is reduced to about 1/2 cup, stirring frequently. Remove from the heat; gradually stir in butter just until blended. Serve warm with warm dumplings; sprinkle with pecans.
