CRUSTLESS VEGGIE PIE image

Yield 1 pie 6 people

Number Of Ingredients 8

1 zucchini (scraped and cut into 2 inch slices)
1 onion (sliced)
2 large tomatoes (cut into chunks)
1/2 stick butter
1/2 cup grated parmesan cheese
1 egg
salt to taste
hot sauce to taste (optional)12 ounces mozzarella

Steps:

  • Put butter into a 10 inch skillet. Add veggies, cover, lower heat and simmer about 15 minutes (till tender). Remove from heat and add parmesan cheese, egg, salt & pepper. Transfer into a glass pie dish, top with mozzarella and bake at 350 degreet for 30 minutes. Remove, let set for 10 minutes and serve.
