HIMMEL UND ERDE (HEAVEN AND EARTH)
Posted for World Tour 2006, this is a traditional German accompaniment to sausages or pork dishes. The flavors meld quite a bit better than one unaccustomed to it would guess. Try it--I think you'll be pleasantly surprised.

Steps:
- Heat 1 inch water to boiling; add potatoes, apples and sugar; heat to boiling, reduce heat, cover and cook until tender, about 10 to 15 minutes; drain.
- Fry bacon until crisp; drain on paper towels; cook and stir onion in bacon fat until soft and lightly browned.
- Place potatoes and apples in serving bowl; dot with butter, salt and pepper to taste and sprinkle with nutmeg; top with bacon and onion and serve.
- Alternatively, you can boil the potatoes and apples, then fry them in a little bit of oil to get them browned and crispy then mix with all the other ingredients.

- Put the potatoes and garlic in a saucepan and cover with cold water by at least an inch. Tie the thyme, bay leaf, and lemon zest into a little bundle with kitchen string and drop it into thepan. Add a pinch of salt and bring to a boil. Reduce heat to medium, cover partway, and simmer for 10 minutes. Add the apples and continue cooking until the potatoes and apples are tender, another 15 minutes or so.
- Drain well, reserving some of the cooking water. Discard the herb bundle and return the potatoes and apples to the pan. Set over medium heat and dry the potatoes and apples for a minute or two, shaking and stirring so they don't stick.
- Turn the heat to very low and mash the potatoes and apples with a hand masher. Beat in the butter a few tablespoons at a time, with a wooden spoon. If the mash seems too dry, beat in some of the reserved cooking water until you get the consistency you like best. Often the apples are so juicy that you don't need to add any water. Season with salt and pepper and serve right away.

- Boil potatoes until tender. Set aside and keep warm.
- Cook apples in 1 ounce of butter with cloves and nutmeg until soft. Remove cloves and mash with remaining butter. Season with salt and pepper, set aside and keep warm.
- Meanwhile, season the liver with salt and pepper, and cook quickly in hot oil for 1 minute per side. Place liver on top of potatoes. Dust onions with flour and crisp in pan and place on top of the liver. Top with apple mixture.

Steps:
- Trim the Chops of excess Fat and season with salt and pepper.
- Brown them well in a little goose fat and remove from the pan.
- Peel and quarter the onion and slice the garlic.
- Add this to the Pan and brown a little.
- Then deglace with the cider and return the chops to the Pan.
- Cover and Braise for about an hour until the chops are cooked through.
- About half way through add the thyme leaves.
- For the Himmel und Erde: Peel and Quarter the Potatos and bring to the boil in cold salted Water.
- Once its boiling turn down the heat and after 10 minutes add the peeled, cored and quartered Apple.
- Simmer for about 20 minutes.
- Then mash the Potatos and Apple.
- Season and enrich with a knob of butter.
- Serve the Chops with some of the braising liquid as gravy.
- Goes well with Leeks and Carrots on the side.

- 1. In a medium saucepan, cook potatoes in boiling salted water or steam for 15 to 20 minutes or until tender. Drain and set aside. In another saucepan, place apples in small amount of water and cook about 10 minutes or untl apples are soft. Drain. If you are using two different types of apples make sure they are cooked to the same degree. I didn't check mine and so we had the red apples cooked perfectly and the yellow apples were still a little underdone.
- 2. In a 1-quart buttered baking dish, alternately layer potatoes and apples, distributing butter throughout, and sprinkling with cloves, salt and black pepper. ----I doubled this recipe in these pictures and place them in a 2 1/2 quart dish.
- 3. Cover and bake at 350 degrees for about 15 minutes or until heated through. Top with bacon. (The bacon slices can be laid on top or crumbled; either way is yummy.) Garnish with parsley and serve immediately.
- 4. We served this tonight with some scrambled eggs but this would be delish with pork loin, a roast or my husband said even corn beef too. The butter resides more down at the bottom so if you know that you want more butter spoon some of it out and pour over the top.
