This chuck roast chili is studded with big pieces of beef, chiles and black beans and comes together super quickly before being slow-cooked for hours. 1 tablespoon canola or olive oil
1 tablespoon ground cumin
1 tablespoon smoked paprika
2 tablespoons chili powder
3 tablespoons paprika
2 teaspoons onion powder
1-1 1/2 pounds boneless beef chuck (cut into 1 1/2" cubes)
2 tablespoons brown sugar
1 teaspoon oregano
1 medium onion (medium diced)
3 cloves garlic (minced)
14 ounces diced tomatoes (undrained)
4 ounces can diced green chilies
1 cup beef broth
1 tablespoon apple cider vinegar
28 ounces black beans (2 cans, rinsed and drained)
1 teaspoon kosher salt

Steps:

  • Heat oil over medium-high heat in a medium-sized skillet. When the oil shimmers, stir paprikas, cumin, chili powder and onion powder into the pan. Cook for 1 minute or until spices are very aromatic and remove from heat.
  • Add beef, sugar, oregano, onion, vinegar, garlic, tomatoes, green chilies, beef broth, beans and salt to the slow cooker. Transfer spices from the skillet into the slow-cooker and stir to combine.
  • Cover and cook for at least 4 hours on high or until the meat is tender-- 6 hours on low.

Smoky tomato flavors lead the way in this comforting classic. This is the perfect chili recipe in my opinion--it's not so fancy that it's intimidating at all, but it's definitely a step above chili packet recipes and chili beans. Serve topped with desired garnishes, such as jalapeno, green or white white onion, cheese, sour cream, cilantro, and hot sauce.

1 tablespoon olive oil, divided
2 pounds ground beef sirloin
1 large onion, diced
2 medium poblano peppers, diced
1 medium orange bell pepper, diced
1 medium jalapeno pepper, seeded and chopped
3 cloves garlic, minced
¼ cup chili powder
4 teaspoons ground cumin
1 teaspoon ground paprika
1 teaspoon white sugar
1 teaspoon kosher salt
1 teaspoon black pepper
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
½ teaspoon dried oregano
1 (12 fluid ounce) can or bottle beer
1 (28 ounce) can crushed tomatoes
1 (14.5 ounce) can fire-roasted diced tomatoes
½ (28 ounce) can tomato puree
2 cups beef stock
1 chipotle pepper in adobo sauce, minced
1 tablespoon adobo sauce from chipotle peppers
3 (15 ounce) cans kidney beans, drained and rinsed

Steps:

  • Heat 1 1/2 teaspoons oil in large Dutch oven over medium-high heat. Add ground beef and cook, crumbling with a spoon until evenly browned and cooked through, about 8 minutes. Drain and set aside.
  • Add remaining oil to the pot and return to medium-high heat. Add onion and saute, stirring often, until translucent, about 5 minutes. Add poblano, bell, and jalapeno peppers and garlic; cook, stirring frequently until softened, about 5 minutes.
  • Stir in chili powder, cumin, paprika, sugar, salt, pepper, garlic powder, cayenne, and oregano; cook for 1 minute. Add beer and stir, scraping any small brown bits from the bottom of the pot. Add crushed and fire-roasted tomatoes, tomato puree, beef stock, chipotle pepper, and adobo sauce; stir until well combined. Bring to a simmer, stirring often.
  • Stir in beef and kidney beans; return to a simmer. Cover, reduce heat to low, and simmer, stirring occasionally, for at least 3 hours.

1 can(s) (15.5 oz) kidney beans - drained and rinsed
1 can(s) (15 oz) black beans - drained and rinsed
1 can(s) (28 oz) pinto beans - drained and rinsed
1 lb ground pork
1 lb ground beef
1 pkg chorizo sausage (8 oz) - diced
1 can(s) original rotel tomatoes with chilis
1 can(s) (14.5 oz) diced fire roasted tomatoes
1 can(s) (28 oz) diced tomatoes
1 can(s) (8 oz) tomato sauce
1 large onion diced
3 celery stalks - diced
1 large bell pepper diced (i used red for this recipe)
1 medium habanero pepper - roasted
2 Tbsp olive oil
1 1/2 Tbsp cumin
1 1/2 Tbsp chili powder
1 Tbsp garlic powder
2 Tbsp cilantro chopped
1 tsp salt
1 Tbsp chipotle hot sauce *optional*
pinch black pepper
2 - 3 c water (depending on broth preference)

Steps:

  • 1. Start by roasting your habanero pepper making sure it's charred all over. You can do this in a hot oven, a griddle or open burner. Once roasted, place on a plate and cover with saran wrap for a few minutes. This will ensure easier peeling off of the skin but will retain the amazing roasted flavor!!
  • 2. In a stockpot, add your olive oil and saute your ground pork. Brown till no longer pink, remove to plate and set aside. Add your ground beef, and saute as well. When meat is no longer pink, add your onions. Saute till onions are starting to soften. Add the pork back to the pot. Finally add your chopped chorizo sausage.
  • 3. Add your beans that have been drained and rinsed.
  • 4. Add your tomatoes (not drained, juices and all) and all your spices. Finally add your diced pepper and roasted habanero pepper.
  • 5. Add your water and let simmer for 45-60 minutes on low till all flavors have married. *optional* - top with shredded cheese and sour cream if desired.

There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
  • Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

1 1/2 lb beef stew meat (cut into smaller pieces)
2 lb ground sirloin
2 can(s) bush's chili beans
1-2 clove garlic minced
2 can(s) 15 oz tomato sauce plus two cans water using tomato sauce cans
1 pkg williams original chili seasoning (or hot if you desire)
4 dash(es) cayenne pepper
2-4 tsp tabasco chipotle pepper sauce
1 tsp ground black pepper
1/8 tsp ground cumin
1 tsp kosher salt
1 small yellow onion into small pieces (or grate if you prefer)
1 pkg shredded cheddar cheese
saltines
sour cream

Steps:

  • 1. Brown and drain stew meat and hamburger meat separately and add to stock pot.
  • 2. Add minced garlic to meats while hot to infuse the garlic flavor.
  • 3. Next, add two cans of chili beans(not drained), tomato sauce plus 2 cans of water, onion, dry seasonings and stir into mixture. Cook on low heat for 2 hours or....transfer mixture to crock pot and slow cook for 6-8 hours. Make sure to keep checking liquid level and add water as necessary.
  • 4. Serve with options of cheese, crackers, and sour cream.
