AVOCADO ICE CREAM (NO ICE CREAM MAKER NEEDED)

Posting this for Zaar World Tour. From The African Cookbook by Bea Sandler. Haven't tried this yet, but it sounded interesting. Prep time is approximate...just however long it takes to get the ice cream soft enough to work with. Please note, this will need additional time to refreeze, so plan accordingly.

1 quart pistachio ice cream
1 -2 avocado, cut into 1/2 inch cubes (about 2 cups)

Steps:

  • Soften the pistachio ice cream just enough to be able to work with it (it shouldn't be melted).
  • Fold in avocado cubes.
  • Refreeze.

This recipe originally accompanied Warm Chocolate Soufflés with Pistachio Ice Cream .

Yield Makes about 3 1/2 cups

Number Of Ingredients 7

1 cup unsalted shelled pistachios
3/4 cup sugar
2 cups milk (do not use low-fat or nonfat)
1/2 teaspoon almond extract
4 large egg yolks
1 cup whipping cream
3/4 cup unsalted shelled pistachios, toasted, coarsely chopped

Steps:

  • Finely grind 1 cup pistachios and 1/4 cup sugar in processor. Bring milk and ground pistachio mixture to boil in heavy large saucepan. Remove from heat. Mix in almond extract.
  • Whisk egg yolks and remaining 1/2 cup sugar in medium bowl. Gradually whisk in hot milk mixture. Return custard to saucepan. Cook over low heat until custard thickens and leaves path on back of spoon when finger is drawn across, stirring constantly, about 10 minutes (do not boil). Strain into large bowl. Chill until cold, about 2 hours.
  • Stir 1 cup whipping cream and chopped pistachios into custard. Process mixture in ice cream maker according to manufacturer's instructions. Transfer to container and freeze. (Ice cream can be prepared 3 days ahead.)

This is for Heather. A very healthy and easy or should I say Cheating way to make ice cream. 4 large ripe avocados
1 cup pistachios, coarsely chopped, peeled and pan roasted
1 teaspoon almond extract
1/2 gallon vanilla ice cream, slightly softened

Steps:

  • Peel and seed avocados.
  • Cut avocados into small pieces to fit in the blender or food processor.
  • Place ice cream, extract and avocados in blender and puree until well-blended.
  • Stir in pistachio.
  • Pour into container and place back into freezer overnight.
  • Scoop, sit back and enjoy!
