2 pounds smoked kielbasa or Polish sausage, sliced
4 cups coarsely chopped cabbage
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
6 medium carrots, thinly sliced
3 medium potatoes, cubed
2 celery ribs, thinly sliced
1 small onion, chopped
2 cups water
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (14-1/2 ounces) chicken broth
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon dried savory
1/4 teaspoon garlic powder
1/4 teaspoon pepper

Steps:

  • In a large skillet, brown kielbasa in batches. Transfer to a 6-qt. slow cooker. Stir in remaining ingredients. Cook, covered, on low 6-8 hours or until vegetables are tender. Skim fat.

18 links Italian sausages (mix hot, medium or mild, to taste)
3 10 1/2-ounce cans beef consomme
1 1/2 cups sliced carrots
1 onion, diced
1 1/2 15-ounce cans sliced beets, with juice
1 14 1/2-ounce can whole tomatoes, with juice
3 tablespoons tomato paste
1/2 head cabbage, shredded
2 cloves garlic, minced
1 tablespoon cider vinegar
1 15-ounce can red kidney beans
Sour cream, for garnish
Chopped parsley, for garnish

Steps:

  • Slice the sausages into half-inch rounds. (Sausage can be cut more easily if partially frozen.) In a large saute pan over medium-high heat, brown the sausage well. Remove with a slotted spoon, and drain by shaking the pieces in a large brown paper bag.
  • In a large soup kettle (six quarts or larger), combine sausage, consomme, carrots, onion, beets with juice, tomatoes with juice, tomato paste, cabbage, garlic and cider vinegar. Break up tomatoes with a knife or spoon. Add water to just cover. Bring to a boil, reduce heat to low and simmer for two hours.
  • Add the kidney beans to the soup pot, and simmer for an additional hour. Serve garnished with a spoonful of sour cream and a sprinkling of parsley.

2 tablespoons olive oil
1 (1 pound) package smoked sausage, chopped
2 onions, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
10 cups water
3 cups chopped cabbage
2 carrots, thinly sliced
1 (15.5 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
4 beef bouillon cubes
1 teaspoon seasoned salt
½ teaspoon dried thyme leaves
1 dash cayenne pepper
2 small zucchini, chopped
1 (15 ounce) can kidney beans, rinsed and drained
1 (8 ounce) package thin egg noodles
grated Parmesan cheese

Steps:

  • Heat the olive oil in a large stockpot over medium-high heat; cook the sausage, onions, bell pepper, and garlic in the hot oil until the onion is tender, 5 to 7 minutes. Add the water, cabbage, carrots, diced tomatoes, tomato paste, beef bouillon cubes, seasoned salt, thyme, and cayenne pepper to the stockpot and bring to a boil. Reduce heat to medium-low, place a cover on the stockpot, and cook the soup at a simmer for 45 minutes. Stir the zucchini and beans into the soup; cook another 10 minutes.
  • Bring a large pot with lightly salted water to a rolling boil. Cook the egg noodles in boiling water until cooked yet firm to the bite, about 5 minutes. Drain and stir into the soup. Ladle the soup into bowls, and top with Parmesan cheese to serve.
