Having grown up on a dairy farm in Holland, I love our country life here in Idaho's "potato country." My favorite recipe for potato soup originally called for heavy cream and bacon fat, but I've trimmed down the recipe. -Gladys DeBoer, Castleford, Idaho

6 medium potatoes, peeled and sliced
2 carrots, chopped
6 celery ribs, chopped
8 cups water
1 onion, chopped
6 tablespoons butter, cubed
6 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups 2% milk

Steps:

  • In a Dutch oven, cook the potatoes, carrots and celery in water until tender, 15-20 minutes. Drain, reserving liquid and setting vegetables aside. , In the same pan, saute onion in butter until tender. Stir in the flour, salt and pepper; gradually add milk. Bring to a boil, cook and stir for 2 minutes or until thickened. Gently stir in cooked vegetables. Add 1 cup or more of reserved cooking liquid until soup is desired consistency.

3 medium leeks (white portion only), chopped
1 medium green pepper, chopped

2 tablespoons olive oil
4 medium potatoes, peeled and cubed
2 cans (14-1/2 ounces each) vegetable broth
1 cup water
1/2 teaspoon pepper
1/4 teaspoon salt
3 tablespoons all-purpose flour
1/4 cup fat-free milk
1/2 cup reduced-fat sour cream
2 green onions, chopped

Steps:

  • In a nonstick Dutch oven, saute the celery, onions, leeks, green pepper, jalapenos and garlic in oil until tender. Add the potatoes, broth, water, pepper and salt. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender, stirring occasionally., Combine flour and milk until smooth; stir into soup. 3 medium red potatoes
2 cups water
1 small onion
3 tablespoons butter
3 tablespoons all-purpose flour
crushed red pepper flakes
ground black pepper
3 cups milk
1/2 teaspoon sugar
1 cup shredded cheddar cheese
1 cup cooked ham, cubed

Steps:

  • Peel potatoes and cut into 1-inch cubes.
  • Bring water to a boil in large saucepan. Add potatoes and cook until tender.
  • Drain, reserving liquid. Set aside potatoes.
  • Measure 1 cup cooking liquid, adding water, if necessary; set aside.
  • Peel and finely chop onion. Melt butter in saucepan over medium heat.
  • Add onion to saucepan; cook, stirring frequently, until onion is translucent and tender, but not brown.
  • Add flour to saucepan; season with pepper flakes and black pepper to taste. Cook 3 to 4 minutes.

4 slices bacon, diced
2 tablespoons margarine
3 onions, chopped
2 tablespoons all-purpose flour
4 ¼ cups water
1 cube vegetable bouillon
4 potatoes, cubed
2 egg yolks
1 ⅓ cups sour cream
1 tablespoon chopped fresh parsley

Steps:

  • In a large saucepan over medium high heat, saute the bacon for about 7 minutes, or until lightly browned. Reduce heat to medium, add the butter or margarine and onions and saute for about 5 minutes, or until onions are tender. Add the flour and stir well for one minute.
  • Remove saucepan from heat and gradually add the water, stirring well. Return to stovetop, raising heat to high. Add the bouillon and potatoes, bring to a boil and then reduce heat to low. Simmer uncovered for about 10 minutes, or until potatoes are tender.
  • In a small bowl, combine the egg yolks and the sour cream and mix together. Gradually add this mixture to the soup, stirring well. Heat through, but do not boil. Stir in the parsley just before serving.

2 small leeks, trimmed and chopped (slit lengthwise, and thoroughly washed)
1 large yellow onion, chopped

3 lbs baking potatoes, peeled and cut into 1/2 inch cubes
1 lb sharp cheddar cheese (or to your taste)

Steps:

  • In a large saucepan, melt the butter over medium-high heat. Add the chopped leeks, onion, carrot and garlic. Saute the vegetables; stirring occasionally, until they are glossy and have started to soften - about 5 minutes.
  • Stirring continuously, sprinkle in the flour. Still stirring, gradually pour in the chicken broth. Add the potatoes. Bring the liquid to a boil. Reduce heat to maintain a simmer and cook, partially covered, until the potatoes are tender enough to be pierced easily with a table fork, about 15 minutes.
  • Place the shredded cheese in a large heat proof mixing bowl. Ladle in about a quarter of the hot liquid from the soup and stir with a sturdy wooden spoon until the cheese has completely melted and is fully blended inches Carefully pour the cheese mixture back into the saucepan and stir until fully incorporated.

1 1/4 lbs leeks
3 sticks celery
2 large garlic cloves
1 liter chicken stock
3 scallions
salt and pepper
4 tablespoons butter
1 cup heavy cream (optional)
salt & freshly ground black pepper

Steps:

  • Peel and chop the potatoes into half inch cubes.
  • Wash and chop the leeks, celery and scallions. They don't have to be chopped finely but not too chunky. Mince or finely chop the garlic.
  • In a large saucepan, melt the butter and add all of the vegetables. Over a medium heat, stir until the veg is coated in butter, then put the lid on and leave to sweat for ten minutes, stirring occasionally, until the butter is absorbed.
  • Add the stock, season, and simmer for 20 minutes or until the potatoes are good and soft.
  • Remove from the heat and blend thoroughly. Add the cream and stir well.
  • You can either then put back onto the heat until steaming hot (do not let it boil) and serve, or cool and reheat later, or freeze.

This is THE potato soup I have been making forever! Healthy, hearty and filling yet EASY and quick to make! Especially if made with leftover potatoes. Cutting the cabbage small really helps this cook fast. Feel free to use whatever meat your family prefers. I use turkey products but any type of meat or even soy would be equally nice. Steps:

  • Add butter and oil in a dutch oven and heat over medium heat. Add cabbage and onions and cook until they start to soften, stirring occasionally.
  • Chop meat to desired size and add to pan. Continue to saute about 5 minutes.
  • Add carrot and cook until vegetables are as soft as you want them.
  • Slice potatoes into various sized pieces, some small so they dissolve and make the soup thicker and some larger so you will have nice sized chunks. Add to pan stir to combine and allow the potatoes to absorb some of the flavors.,.
  • Add milk and season with salt and pepper.
  • Cook just until heated through. Do not let it bubble or boil.
  • Garnish as desired and serve.
  • NOTE: If not using cooked, leftover potatoes peel and cut potatoes in large bite sized pieces. Cook in water or broth that has been salted a little more than normal. Drain well and cool. I like to make ahead and refrigerate as they seem to hold up better in the soup but you can cook them while you are preparing the above.
  • Also: You can adjust milk and broth, using more or less to reach the consistency you desire.

1 can beef or 1 can chicken broth
1 ham bone
1 large onion, chopped (1 1/2 cups)
1/2 cup chopped celery

1 teaspoon crushed rosemary (optional)
1 teaspoon salt
1/4 teaspoon ground black pepper
1 bay leaf

Steps:

  • Rinse and soak green peas in cold water to cover for approx 2 hrs.
  • Drain peas.
  • Place peas, 8 cups water, and broth in large soup pot.
  • Stir in all remaining ingredients except salt and pepper.
  • Bring to boil over high heat, reduce to low heat, cover and simmer 2 1/2 hrs.
  • Remove and set aside ham bone.
  • Remove and discard bay leaf.
  • Strain peas and vegetables from soup and place in food processor or blender and puree.

2 celery ribs,cut into slices
1 medium onion, chopped
2 1/2 c water
2 c peeled and diced potatoes
1 can(s) 14.75 oz creamed corn
1 can(s) 11 oz whole kernal corn, undrained
1 can(s) 4 oz diced green chile's
3 chicken bouillon cubes
1 tsp paprika
1 bay leaf
1 12 oz evaporated milk
3 Tbsp all purpose flour

Steps:

  • 1. In medium pan saute the sliced celery and chopped onion in the butter until onion is translucent
  • 2. In large soup pot, add celery and onion, add the rest of the ingredients EXCEPT the evaporated milk and flour.
  • 3. bring to a boil then lower heat to simmer, cover and cook 15 minutes or until potatoes are tender
  • 4. In a medium bowl add the flour and a small amt of the evaporated milk, just enough to make a paste, slowly stir in the remaining milk and stir until no lumps remain
  • 5. when potatoes are tender turn the heat up to med/high and slowly stir in flour/milk mixture, bring to boil and stir until soup is thick. Remove bay leaf and serve,

1 cup Heavy Cream or Sour Cream
1 stick Butter
3 tablespoons Flour

Steps:

  • In a soup pot, melt butter over medium heat
  • Add leeks, garlic and celery
  • Sautee until tender
  • Cover and let vegetables sweat for 10 minutes
  • Add vegetable broth, potatoes, salt and pepper
  • Bring to a boil, then simmer for 20 minutes or until potatoes are tender
  • Slowly sprinkle flour into soup and stir so it doesn't clump
  • Cook for 2 minutes until soup thickens
  • Reduce heat to low and add green onions and cream.
  • Stir in and heat through, but do not bring to a boil.

Like Brenda, your friends will love it when you prepare this tasty soup. It's creamy with chunks of potato in every bite. We love the depth of flavor the onions and garlic powder adds to this simple soup recipe. We used cream of chicken soup in ours but can't wait to try it with cream of mushroom next time.

7 medium potatoes, peeled and diced
3/4 stick butter
2 can(s) cream of chicken or mushroom soup, 10.5 oz each
1 medium onion, chopped
8 oz cream cheese, room temperature
1/2 c milk
1 tsp garlic powder
1/2 tsp salt and pepper or to taste

Steps:

  • 1. In a large saucepan, boil potatoes, butter, garlic powder, salt, pepper and onions in just enough water to cover, till tender. Do NOT drain.
  • 2. Cut cream cheese in cubes and stir in till melted.
  • 3. Stir soups into the mixture until blended. Add milk and let simmer for 30-45 minutes on the lowest setting. Stir to keep from sticking occasionally.
  • 4. Serve with crumbled bacon, grated cheese, chopped green onions, and seasoned crackers.

2 celery ribs
1 medium onion, coarsley chopped
2 1/2 cups water
2 cups diced potatoes
1 (14 3/4 ounce) can cream-style corn
1 (11 ounce) can whole kernel corn, undrained
1 (4 ounce) can diced green chilies
2 chicken bouillon cubes
1 teaspoon paprika
1 bay leaf
1 (12 ounce) can evaporated milk
2 tablespoons all-purpose flour

Steps:

  • Melt butter in large saucepan over medium-high heat. Add celery and onion. Cook for 1 to 2 minutes or until onion is tender.
  • Add water, potatoes, corn, chiles, bouillion, paprika and bay leaf. Bring to a boil, reduce heat to low, and cover.
  • Cook, stirring occasionally, for 15 minutes or until potatoes are tender.
  • Stir a small amount of evaporated milk into flour in a small bowl to make a smooth paste. Gradually stir in remaining milk.
  • Stir milk mixture into soup.
  • Cook, stirring constantly, until soup comes just to a boil and thickens slightly.
  • Season with salt and pepper.

8 medium potatoes, peeled and cut into 1/2 inch cubes
1 large carrot, peeled and chopped
2 cloves garlic, peeled
1/2 lb bulk Italian sausage
1 small onion, chopped
1/4 cup butter or 1/4 cup margarine
1/4 cup all-purpose flour
8 cups milk
2 teaspoons minced fresh parsley
1 1/2 teaspoons salt
1 teaspoon chicken bouillon granule
1/2 teaspoon seasoning salt
1/4 teaspoon pepper

Steps:

  • Place potatoes, carrot and garlic in a Dutch oven and cover with water.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 15-20 minutes or until tender; drain.
  • Place 3 cups potato mixture in a bowl and mash.
  • Set aside mashed potatoes and remaining potato mixture.
  • In a skillet, cook sausage and onion over medium heat until meat is no longer pink; drain and set aside.
  • In a soup kettle, melt butter.
  • Stir in flour until smooth; gradually add the milk while stirring.
  • Bring to a boil; cook and stir for 2 minutes or until soup is thickened.
  • Add the parsley, salt, bouillon, seasoned salt and pepper; mix well.
  • Add the mashed potato mixture; cook and stir until heated through.
  • Add the reserved potato and sausage mixtures.
  • Heat through.

3 large russet potatoes, cleaned, skins pierced 3-4 times with a fork
1/4 cup butter or margarine
1 small yellow onion, chopped
2 cloves garlic, minced
1/4 cup flour
2 cups chicken broth (or one 14-ounce can)
12 ounces evaporated milk (I use the fat-free kind)
2 tsp seasoned salt
Optional toppings: shredded cheese, diced ham or crumbled bacon, chives or scallions, Tabasco sauce, croutons

Steps:

  • Microwave the potatoes 8-9 minutes until baked through. Set aside to cool slightly. Melt the butter in a soup pot over medium-high heat and add onion. Cook 6-7 minutes until softened. Add minced garlic and cook 30 seconds, until fragrant. Add flour and stir several minutes to make a thickened roux. Gradually stir in evaporated milk and broth. Scoop the pulp from one potato, mash it slightly and add to soup. Cook soup on medium to bring to a boil. Add seasoning salt (to taste). Dice the remaining two potatoes and empty skin of the third potato. Add to soup and heat through. Serve alone or topped with anything that sounds good to you.
