- In a shallow dish, whisk together the first 7 ingredients. Preheat a greased griddle over medium heat., Dip bread in egg mixture, letting it soak 5 seconds on each side. Cook on griddle until golden brown on both sides. Serve with toppings as desired.

You can use white sandwich bread, but French toast also works well with other loaves, including brioche, challah, cinnamon-raisin, whole-wheat, French, even sourdough.

- Whisk together eggs, milk, sugar, and salt (as well as the optional vanilla extract and cinnamon, if using) in a medium shallow bowl until the mixture is fluffy and light in color.
- Melt 1 tablespoon butter in a large skillet over medium-high heat. Working with one bread slice at a time, soak the bread in the egg mixture for 3 to 4 seconds per side. Don't let the slices sit too long; they will turn soggy and fall apart.
- Once butter is melted and bubbling, add 3 soaked bread slices to hot pan and cook until golden brown, or about 1 1/2 to 2 minutes. (There may be some spots that do not brown; that's normal.)
- Flip each slice, and cook until gold brown, or about 1 1/2 to 2 minutes. Repeat with remaining butter and egg-soaked bread. Serve hot with toppings of choice.
HEARTY HOMESTYLE FRENCH TOAST
Traditionally, French Toast was a way to turn bread that was going stale and an insufficient supply of eggs into a hearty, hot breakfast. My Dad's farm-derived recipe isn't sweet in itself. Sweetness comes from the syrup or jam on top. OR you might serve it with sausage gravy or milk gravy made from fried ham for a savory flavor instead. This recipe makes enough for a crowd or it can easily be cut down for a smaller group.

- Beat the eggs in a bowl large enough to hold everything -- preferably one with a pouring spout.
- Beat in the milk, vanilla, cinnamon, and sugar.
- Heat a griddle and butter lightly.
- Pour some of the mix into a wide, shallow dish that will hold a slice of bread.
- Dip both sides of a slice of bread into the mix and lay it on the griddle. Fill the griddle.
- Cook slices until nicely browned, flip and brown the other side.
- Repeat with the rest of the bread. Be sure to beat the mix a few strokes before each refilling of the shallow dish. Add extra cinnamon if too much gets stuck to the early slices.
- Serve with a choice of your favorite toppings.
