A great way to use leftover ham. Baked cheesy potatoes with ham and corn.

Number Of Ingredients 10

2 cups potatoes, cubed
2 cups cooked ham, cubed
1 (15.25 ounce) can whole kernel corn, drained
¼ cup finely minced fresh parsley
¼ cup butter
1 tablespoon chopped onions
⅓ cup all-purpose flour
1 ¾ cups milk
⅛ teaspoon ground black pepper
4 ounces processed cheese food, shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
  • Combine potatoes, ham, corn and parsley; set aside. In a saucepan saute onion in butter for 2 minutes, stir in flour until blended well. Gradually add milk and pepper. Bring to a boil. Cook and stir for 2 minutes. Remove from heat and pour over the ham mixture. Stir to mix well.
  • Pour into greased 11x7 baking dish. Cover and bake for 25 minutes. Uncover, sprinkle with cheese and bake 5 to 10 minutes longer until cheese melts.

Number Of Ingredients 10

2 cups cubed fully cooked ham
2 cups diced cooked potatoes
1 can (15-1/4 ounces) whole kernel corn, drained
1/4 cup minced fresh parsley
1 tablespoon chopped onion
1/4 cup butter, cubed
1/3 cup all-purpose flour
1-3/4 cups whole milk
1/8 teaspoon pepper
1 cup shredded cheddar cheese or process American cheese

Steps:

  • In a large bowl, combine the first four ingredients; set aside. In a saucepan, saute onion in butter for 2 minutes; stir in flour until blended. Gradually add milk and pepper. Bring to a boil; cook and stir for 2 minutes. Remove from the heat; pour over the ham mixture and stir until combined. Transfer to a greased 11x7-in. baking dish. Cover and bake at 350° for 25 minutes. Uncover and sprinkle with cheese. Bake 5-10 minutes longer or until cheese is melted.

I first made this filling casserole for a camping trip with friends, adding potatoes and soup to stretch the recipe. It was a big hit. It's a great all-in-one meal that's sure to please your hungry eaters all year-round.

Number Of Ingredients 11

4 medium potatoes
3 cups frozen chopped broccoli
1/4 cup finely chopped onion
3 tablespoons butter, divided
1 tablespoon all-purpose flour
1/8 teaspoon pepper
1 cup milk
1/2 cup shredded cheddar cheese
2 cups cubed fully cooked ham
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/4 cup dry bread crumbs

Steps:

  • Cook potatoes in boiling salted water until tender; drain. Peel and cube; set aside. Cook the broccoli according to package directions, omitting salt; drain and set aside. , Preheat oven to 350°. In a large skillet, saute onion in 2 tablespoons butter until tender. Add flour and pepper; stir until smooth. Gradually add milk; cook and stir until mixture boils and thickens. Remove from heat; stir in cheese until melted. Stir in ham, soup, potatoes and broccoli. , Transfer to a greased 2-1/2-qt. baking dish. Melt remaining butter; toss with the bread crumbs. Sprinkle over top of casserole. Bake, uncovered, 20-30 minutes or until heated through.
